My Lunch Box

Hi friends!!

Guess how long my commute was this morning ……9 minutes!!!!!!!!!! It won’t be that short everyday because i’ll be at different locations, but I arrived 15 minutes early with a smile on my face today 🙂

I spent the morning (which went by FAST!) in orientations and training modules.

Now I’m eating my lunch in the break room here before I head over to the other health dept location for the afternoon.

In the lunch box:

Great Harvest bread with tempeh and pumpkin butter.

Yes I eat the tempeh raw. Yes it’s safe. And yes it does taste good (although probably an acquired taste because it is a little smelly like ……fermented bread?)

Easiest sandwich ever!

I also packed leftover sauteed cabbage and an organic gala apple 🙂

See y’all tonight!

I keep trying to like tempeh but I just can’t get past the smell and that weird looking black stuff that is on it. I do like it cooked in saucy creations like sloppy joes or BBQ, though.

    Enjoy your afternoon!

I prefer my tempeh raw, dipped in teryaki sauce or jelly. I spose I’ll be trying it with my TJ’s pumpkin butter soon!

That bread looks amazing – I actually made whole wheat bread for the first time – it came out great! Do you have the Healthy Bread in Five book?

You are so much more hardcore than I am with that raw tempeh. I have to boil it and douse it in sauce, and even then I’m not too thrilled with it.

I haven’t tried pumpkin butter with tempeh. Did you eat the tempeh straight out of the package? I always find it tastes a little funkay without something masking the flavor.

I haven’t really tried raw tempeh. I’ve had it cooked and have liked it but for some reason I have a mental block on it. I think the look it weirds me out, which is super strange because I’m NOT a picky eater at all!
