Moon River

I was surprise more of you weren’t up at 2:40AM watching the moon!

[Except for Ms Lynn Chen!]

Matt set his alarm and I decided I’d get up or not depending on how much I woke up. Well I was wide awake when he got up and we bundled up and went outside and WOW – it was cool!! Very erie and scary.

While we were out there we found the party responsible for Paws On The Housetop. Two kitties wanted to play!

I went from bed –> shower this morning. Not something I do often since I’m usually exercising or making breakfast! The reason is a hair appt. this morning and then running errands until lunch.

Matt whipped up the oats!

Two special toppings:

A Great Harvest Warrenton  pumpkin scone – ohhhhhhhh so goooood!!!!

And Espresso Maple Salted Nuts sent by Lauren! They are perfectly salted and made a great topping! Thanks Lauren : )

The Mix

  • 1/3 cup oats
  • 1/3 cup milk
  • 1/3 cup water
  • Half banana
  • Pinch salt
  • 1/4 cup cottage cheese, stirred in at end
  • Crumbled pumpkin scone
  • Chopped pecans

I left out the nut butter due to the addition of pecans – I missed it but I didn’t miss it. I think I just missed the habit!

    I have a hair appt today too. I’m in need, especially before the baby arrives.

    I completely forgot about the lunar eclipse! I was probably up at that time tossing and turning anyways too.

    That looks insanely delicious. I love ferral kitties! My parents are caring for a whole family of cats right now. My mom is allergic so they leave them outside, but they made igloo houses for them so they can be warm, and my dad feeds them tuna constantly. They are happy kitties!

      Please tell your dad to stop feeding the kitties tuna! Human-grade tuna has way too much mercury for kitty tummies – they’ll get sick if they keep eating that. He’s better off buying some canned wet food (even the cheapie kinds that are $0.39 a can)…then they will be happy AND healthy kitties!

          Never being a cat owner, I don’t know much about cat health, but the mercury in the tuna comment intrigues me. How is it that tuna designated for kitties has less mercury?

    Glad you got to see the eclipse! And that scone looks delicious.

    I knew we wouldn’t get up to see it, and I need all the sleep I can get so that I have the energy after 8 hours of work to bake cookies and pound cake and pack and clean and khhgkfdhgkhfgkh. 🙂 It’s Christmas!

    My parents have gotten so many pecans this year for Christmas. I need to start putting them on my oats too! I was going to this morning, but my new Trader Joe’s Sunbutter was dying to be opened. I’ll go for pecans tomorrow!

    My boys and husband got up to see it and actually went out driving to see it. Sadly, they did not. It was too cloudy here. We love nuts like that here. We have a version that we call “crack nuts” cause you can’t stop eating them once you start. I am thinking of doing a peanut version today since my grandmother sent us 10 lbs of raw peanuts.

        No I don’t think so. It was all about oatmeal! Topping varieties (definitely mention of whipped banana oats and nut butter), nutrition, etc! I just tried to see if its online, but I guess Publix hasn’t posted their newest issue yet. It looked great and it was the FIRST article in the issue!

    I didn’t know about the eclipse until this morning 🙁 I hate when I don’t read the news for a day a few days and get completely lost.

    I never shower before a hair appointment. My stylist likes my hair dirty. It’s weird. She says it is easier to do my highlights that way I guess.

        Washing the hair strips away its natural oils. When adding color the natural oils in the hair give it better holding properties and make it easier to work with. =)

    I wanted to see the eclipse (first one on the Winter Solstice in 372 years!), but it was insanely cloudy in Charlotte last night. I couldn’t even find the moon earlier in the evening.
    Plus, I don’t get enough sleep as it is. 😉
    I have to work 10 hours today, and then go home and bake cookies, put homemade gifts together, wrap presents and clean my house!

    Any thoughts on why Great Harvest muffins and scones are so big? Will you be offering smaller portion sizes at your bakery?

      I don’t think the intention is to serve one in one sitting. I always eat them in multiple portions. Smaller sizes would likely require more work for less profit per item – so I bet this is a calculated size. Just eat half!

    I’m the same way with my oats — I just add nut butter, no questions asked. Sometimes I make an exception and it’s still good, but I just feel like I’m missing something!

    We woke up for the eclipse – went outside in the freezing Utah weather – but couldn’t see it because of the clouds and snow! Total Bummer!
