Matt Bites

A great food blog

And my lunch today!

100% Matt prepared. I had no idea what he packed until I looked at the photos – gives me some anticipation for lunchtime!

Sardine salad in the works, likely prepared with mustard, mayo, spices, celery and carrot. Looks like he had the rest for dinner last night! And looks like there was a BEER involved – notice the cap and opener! Sneaky!

IMG_0236 (480x640)

On a Great Harvest Flax Oat Bran Bun!

IMG_0239 (640x480)

FRUIT SALAD!!!! Banana, ‘loupe and watermelon!

IMG_0240 (640x480)

And some sugar snaps with TJ’s Cilantro Jalapeno Hummus

IMG_0242 (640x480)

(Even Matt knows every lunchbox needs a veg!)

IMG_0241 (640x480)

And for dessert – a tiny jar of almonds! Cute!

IMG_0243 (480x640)

He must have been tired because that’s all the photos I got 🙂 Did I also mention the laundry was done and the house clean? <3 <3 <3

See y’all for dinner

I wish your husband could come give mine some lessons. The # of times my hubby has cooked for me in the last 9 years? ZERO. And somehow I don’t think that is going to change anytime soon.

    Kath…

Glad you’re back home settled. Your lunch looks tasty… except for the mayo. I don’t know why… but I have never liked it… the taste or the texture. Any idea for a good substitute in dishes like this?

And… thanks for the blog link… love finding new sites!

I loathe mayo with a fiery passion too. I usually use Greek yogurt and/or mustard as a stand in for the mayo. I think it works just as well and tastes infinitely better!

I really think that a delish hummus makes up for yucky mayo! I love tuna salad minus mayo, plus hummus in it’s place. try it!

Cottage cheese works too, and I’ve also made tuna salad with EVOO – it still sticks together pretty well, especially if you use some mustard (preferably dijon!).

I actually just posted a recipe for potato salad that uses a combo of greek yogurt and hummus in place of mayo. I think using the two gives a better texture and weight than one or the other.

I had a fish salad for lunch today too. Mine was a wild salmon salad with a mashed avocado and mustard base. Curry and cayan were added for an extra dose of flavah.

Gotta love getting in those Omega-3s!
