LIAB

Smoothie in a bowl –> Lunch in a bowl!

Matt and I plopped around all morning (actually I got some hard work done but relaxed too 🙂 ). In fact, we are STILL in our PJs after lunch for the second day in a row!!!!!!!!! Something about knowing you’re not going to leave the house means you don’t have to waste anytime getting showered + dressed. But I think it also is because we’re going on a walk/run/gym visit soon 🙂

When debating what to have for lunch, I pulled out a leftover sweet potato, spinach and yogurt. I was going to make a spinach salad with yogurt on the side, but thinking about a possible run with a salad in my stomach was NOT appealing!

So I got the bright idea to blend my salad up in an easier-to-digest form.

SO VERY IMPRESSED with the Vita-mix capability! I put ALMONDS in this smoothie and there was not a lump to be found!

In my lunch-in-a-bowl:

  • 1/2 a tiny sweet potato (cooked)
  • Big handful of spinach
  • 2 kale leaves (Vita-mix had no trouble with the kale unlike my blender!)
  • 1 tiny banana
  • ~1 cup vanilla soy milk
  • Sprinkling of chia seeds
  • ~1/2 a cup greek yogurt
  • 1/2 packet Chocolate Amazing Meal 
  • ~6 almonds

I felt a little unbalanced eating this for lunch because it would have made such a typical breakfast, but when I considered the ingredients, it was all the workings of a good salad!!

Our gym is open and 2.2. miles away so we’re going to walk there. Or run if the streets are clear enough. Who knows, but as soon as this lunch digests we’re getting outta here!

    PB&J is the best. I was thinking of shirking my workout today – no more. If you can walk 2.2 miles just to get to the gym, I can surely make it downstairs to my dreadmill!

    That looks great! I haven’t tried a smoothie with granola yet but you always make it look appealing. :

    I’m happy my gym is a 5-minute walk away so it was easy to get up and back this morning.

    Good for you for enjoying the last couple days in your pj’s! 😀 I’m the same way, I never get gussied up when I know I won’t be leaving the house anyways!

    The smoothie looks delicious. You’re so right…salads and running do not mix together very well. 😉

    You get so much sun and Vitamin D from walking in the snow (if your face stays exposed!!), and I get energized by snow walks. We slept in and made pancakes, too. Nothing better!

      It’s chewy and doesn’t really have much flavor. I would say chard is its closest relative?

    Love love spending the day in PJs. I’ve spent this entire weekend in PJs.. BUT i have showered so it’s ok 🙂

    That sounds really good and such a cool idea! You are right, it’s all the great components of a salad plus protein, dairy, and fruit; a perfect meal! I’ve never thought of asweet potato in a smoothie but that’s a great idea!

      lol Allie “super jelly” 😀 My blender is so puny that whenever I make a SIAB I always end up chewing spinach leaves with my granola. Let me tell you, that really detracts from the yumminess of the smoothie 😛

    Okay, I will admit, SIABs(or even LIABs) scare me! Okay scare is a strong word, but I”m not quite brave enough to try it. I think it’s because I have an awful blender and it seems to take 30 minutes to make a smoothie, so it’s quicker to make something not blended! Gosh, I need a VitaMix.

    GOOD LUNCH!! I did that with my breakfast the other day – just blended it all up, and it was sooo tasty!
    Haha I’m exactly the same with my PJs – if I’m not going anywhere, they stay on! I look like a bum but no-one cares 😀

    My favourite foods are those I can eat out of a bowl, so I totally get the awesomeness of this LIAB! But oh, if only the Vitamix was available in Australia, or could at least fit in my suitcase…

    I just had a green monster fail..flavor was good but something left it chalky! I used a pack of the wheatgrass + a pack of the berry kids wheatgrass…I’m thinking the kids packet was the problem. Luuuurve your first photo…mmmmm – I am loving my vitamix as well!!

    Having a relaxed Sunday here too, with a little exercise thrown in! But I FINALLY made your Coconut Almond Granola. What can I say? The other recipe I have been using for a few years is getting canned. Coconut Almond granola is here to stay. Will try not to scarf all of it down tomorrow morning….

    Ewwwww…does anyone else out there NOT enjoy green smoothies and find they give them a tummy upset? I feel ill from them and wonder if anyone else has the same digestive problems from these concoctions?

    Your so lucky you live so close to your gym! Ours is about 15 minutes away and with the snow in Raleigh we couldn’t make it there all weekend 🙁 I wish I was brave enough to try that smoothie, you have such good ideas!
