The snow is

The street is still one big sheet of ice . Salisbury got 6-8" yesterday and the high today is 34*. I don’t think there’s anyway busses will be running tomorrow…

Breakfast today was STAR BRITE!

Easiest pancake mix ever. whole grain. AND made 2 perrrrrrrfect pancakes. I have never been able to make perfect pancakes!! The best news: I’m almost sure I’ll have this up in Open Sky soon!!

I had an extra little bit of batter that I made into a small pancake and cut out with a cookie cutter!

Toppings:

  • Half a mashed banana
  • Chia seeds sprinkles
  • Coconut butter flakes
  • TJ’s PB

Excited to do some cooking this morning and am HOPING to go for a run this afternoon. We’ll have to see what the ice does!

Currently sipping a second half cup of coffee to keep warm!

    We have pancake Sundays at our house… but today we may have to skip it since we are meeting friends for brunch… unless they have pancakes where we are meeting….

    Look’s delicious! geeze…doesn’t seem bad over there..they stop the busses for that? we can snow up to our waist and it’s -30 plus windchill…everything still stays open and running 😛

    That breakfast is SO pretty!!
    Ohmygosh I tried oats in a jar this morning after seeing it on here – OH MY GOSH x 10! It was AMAZING!!

    I was tempted to make pancakes this morning but I think I’m going to brunch with a friend! Instead I had a green monster to hold me over 🙂

    I’ve noticed that a lot of blogger use topping alternative to syrup! I’ll give it a try! Mashed banana and PB sounds like a great idea!

    Oh. Yum. If you put the Kodiak Mix in Open Sky, I just might have to finally break down and get some. I’m terrible at making pancakes but maybe there’s hope for me yet?
    Looks yummy!

    And the snow is so pretty! But ours is like one big sheet of ice :/ Pretty to look at but not made for playing in.

    Why not just go running on the treadmill in this weather and be safe? It’s not my preferred choice either but I’d rather be safe and SMART.

    we had pancakes, too. Ours were made with almond flour but still delicious!

    We are about to go shovel out, we have about eight inches and both of us have to work tomorrow.

    Purrrty pancake!! Cancelled classes would be spectacular but the snow is meeeeelting here. Duke is pretty stubborn when it comes to snow days too. We’ll have to see!

    6-8 inches of snow??? Where I live (Syracuse, NY) that’s a small enough amount that you’re still expected to be at work on time! 🙂

    How do you do it? I ran in 30 degree weather this morning and it was so cold that it hurt to sniff. Does anyone have any techniques to use when you run to keep your face warm?

    Your pancakes look so yummy! I had pancakes this morning too, what a great Sunday morning b-fast 🙂 My toppings were blackberry Liberte yogurt and local maple syrup.
    It’s so funny to hear someone from the South talk about snow! Up in NH we have to keep going with our day-to-day things despite many feet of snow! (And lately, temps around 0 degrees…) Happy wintertime!

    Cat: I wear a hat with earflaps as well as a fleece neckwarmer when I run in the winter. I can put the neckwarmer over my nose and mouth for a few minutes if it gets really cold!
