    kath- i love ur videos. I have to tell u I was making oats so, so wrong. I am now addicted to oats. haha THANK YOU!!! but, i have to tell u a little story..
    im trying to lose about 20-30 pounds, the HEALTHY way. Ive had a hard couple of years and im just now getting everything in balance. I stopped weighing myself, and im really concentrating on getting exercise regularly and eating good foods. But today I was feeling like all these efforts were not showing progress!! I felt so sad and down on myself, and then i remembered you. It took you a good year or so to take the weight off, and you live a beautifully healthy life now. After i remembered you i realized its crazy for me to think in a month or so i could lose enough weight to fit into something smaller, etc. I need to give myself credit and appreciate my efforts!! I just wanted to thank you for being such a realistic role model for me and so many others. So… THANK YOU

    Hi Kath-

    Thank you for the video! I made this soup a whiel ago just from your written recipe and it was delicious. This video is so helpful, and I saw some things that I left out (like the apple, some spices). So I’m going to make the soup again next week. I know kale is chock full of nutrients, and my favorite way of cooking it is using it in soups. Eating this soup just makes me feel warm and healthy. 🙂

    One random question: What color and what brand of paint are your walls in your dining room? The green color is beautiful!

    The soup looks so good……..I am thinking about trying it for tomorrow night’s dinner.

    In the video you said the bowl was about 350 calories. How do you calculate calories when you cook something like a soup?

    Sorry, but just to add, the pot had so much butternut and kale, could you really taste the small amount of apple you put in it?

    Robin,
    I think the apple does make a difference even if you just get 2 pieces in your whole bowl, but you could certainly leave it out and the soup would be just as good.

    When we make soups we weigh the whole soup a the end and get the weight, so then we can just add some to a bowl and know the portion. It’s quite easy and very convenience. And much, much easier than trying to eyeball 4-6 equal portions in different size bowls.

    I have the same exact scale as you. So you put that whole large pot on the tiny glass circle and it didn’t break!? It seems too large of a pot?

    Speaking of pots……what type of dutch oven is that? Unfortunately, I am not anywhere neat getting married, so I will have to make the investment myself- haha!

    Yup – the scale can handle over 10 lbs. We have Circulon pots and pans and really like them.
