It’s Darkest Before Dawn

I managed to sleep until 5:45 this morning (yay!) but when Matt got up to run, I was wide awake. 7 hours of sleep is sometimes OK, but not ideal. When he returned, he found me lying awake in bed – but of course the lure of a Matt-whipped breakfast got me up!

And that’s when I realized it was still dark out!

IMG_7451Blog

The question became: eat hot oatmeal now or wait until sunrise for pretty photos.

I chose the former. Like I could resist!?

I had a heck of a time getting a good shot. This reminded me of my internship days when I had to leave the house at 6am. Months of dark breakfasts!

IMG_7460Blog

Matt made whipped banana oatmeal with chia, milk and water. I topped it with sunbutter and Nuts Over Granola. Note how small this portion is compared to yesterday’s cottage cheese + strawberry mixins! (And a slightly bigger bowl).

IMG_7456BlogIMG_7457Blog

Plus a side of Oolong tea!

IMG_7462Blog

when I was finished eating, the sun was up! I should have just waited 15 more minutes!

Happy Registered Dietitian Day!

it seems like i just started getting used to it being lighter earlier in the morning, and then it changed again. although if i had to choose, i would prefer to have more light in the evenings than in the mornings. or summer could just hurry up and come so we could have both! 😉

Ahhh the time change! I appreciate being able to stay up later/having some energy at night since it’s not pitch black when I leave campus, but as a morning person, getting up at 5am and going by 6 is much much harder, I have to admit!

Happy RD day to you! I hope I’ll be celebrating as an RD by 2015–if things go according to plan my second degree will be done and that gives me a year to do an internship by then! So exciting to think about.

Happy RD Day. I made a batch of chia seed banana oat muffins that turned out great – I’m posting the recipe tonight. Only 200 calories per muffin (and they have chocolate chips in them!)

It does stink that it’s still dark out in the morning -but I’m not complaining – it’s going to be almost 80 degrees in Chicago today! That’s nuts!

Hi Kath – I have a quick question. My go to breakfast is a smoothie with a banana mixed in. I recently found out I’m allergic to bananas (boo!) and now my smoothies are lacking in flavor. I’m having a total brain fart and cannot think of anything to replace the sweetness. Adding sugar isn’t an option I want to consider as this is normally how I get my fruits in. Do you have any suggestions?

Speaking of allergies, I also found out I’m allergic to lettuce (bizarre!!!) would you recommend kale as a substitute? Or is it also in the lettuce family?

      March 14, 2012 at 11:01 am

      Bummer!!

What about other fruits? Frozen berries? Mango? Are you allergic to those as well? Avocado and tofu can also impart that creaminess that bananas give.

I am not an allergy specialist, so I’d ask yours about the lettuce vs. kale, but my gut would think that spinach/kale/collards would be different in make up, but I’m really not sure.

Like Kath said, tofu gives the smoothie the creamy texture that the banana does. I sometimes use the little fruit flavoured dessert tofu packs, they are great in smoothies!
Frozen berries definately could replace the sweetness of the banana, but not the creaminess.

DATES add a ton of sweetness to smoothies. If you soak them for a bit (like 10 min, but you could just keep a jar of dates in water in the fridge) before adding them to the blender, you’ll get smoother results. The water can go in with the soaked dates if you want. Also, kale is not in the lettuce family. It’s more related to broccoli and cabbage. Arugula and dandelion greens might be other alternative, but I’m not sure. 🙂

The only other fruit I’m allergic to is pineapple. I assumed strawberries would be sweeter than any other frozen berries so I tried them first but it just didn’t work. Trial and error is the best way to figure it out, right? lol I’m allergic to avocado but will definitely have to try tofu for creaminess.

Can I just say allergies suck? Barley and brewer’s yeast is also on my no-no list which means no beer.

Avocados are wonderful in smoothies! They add creaminess but you can’t detect the avocado flavor. I especially like them combined with spinach (if you can handle that leafy green, that is.)

YES! We’re trying to figure this out. I don’t think I’m really in a condition to be digging in dirt or building beds (I think I could learn, but I’m just gonna go ahead and say that I don’t want this task right now). I can maintain a garden, but I can’t build it. And Matt is busy all the time. So we’re just trying to figure out if we’ll wait a year to build one or maybe hire someone or if Matt will just get excited about it when warm weather is here to stay.
