    What a tasty looking lunch! I am a big fan of hummus and homemade is the BEST! I found out not long ago that I’m allergic to soy but before that my favorite was to make a big batch of edamame hummus. It’s so good! The recipe is on my blog if you wanna give it a try.

      I slice off the skin wtih a sharp knife and then cut off the cheeks and chop them.

    I love hardboiled eggs but always forget to make some. Perhaps I’ll make some with the half dozen or so I have left. Once they are made they are so easy to eat. Thanks for the reminder.

    Hi Kath! I don’t think I’ve ever commented before, but I read each and every one of your posts and adore them. Your voice comes always comes through!
    Knowing your love for pumpkin, I thought you might be interested in this product… pumpkin SEEDS! I was blown away by the nutritionals, and they taste great, too. I may have been snacking on them a bit too much… but they’re good in yogurt, on hummus on top of crackers, by the handful…

    Gosh, that mix of colors and food groups looks FABULOUS! Seriously, what a perfect simple lunch. And I MUST find those Dr. Krackers in stores. I received some to try out and absolutely loved them, but I can’t seem to find them anywhere! Where do you buy yours?

        I can answer that for ya! We had some trademark issues with the name, so we had to change unfortunately. All of our products are still the same though. 🙂

    I bought a box of Dr. Krackers after seeing them on your blog and they are awesome!! Totally unlike normal crackers and delicious (especially with a little goat cheese 🙂 ). Thanks for the tasty idea!

    I second Tina’s comment; I’m also obsessed with hard boiled eggs lately. I needed a cheap, easy way to get more protein and they are perfect!

    Ahh, I just saw Dr Kracker’s in my supermarket last night! (Not all the flavours, but a few). So excited! Maybe in a little while, Nuttzo will show up too. (Unlikely. Sigh.)
