Healthiest cat in America!

Matt made mom and I sardine salad melts for lunch. They were INCREDIBLE!! (Mom only had a few bites because she is still warming up to sardines but she liked them)

IMG_9703 (640x427)

The sardine salad contained:

  • 2 tins sardines in hot sauce
  • 2 carrots, chopped
  • 1 celery, chopped
  • Couple small pickles, chopped
  • Cucumber, chopped
  • 1 tbsp mustard
  • 1 tbsp mayo
  • Salt, pepper, Italian seasoning to taste

Serves ~3 people

On toasted Arnold bread with melted pepperjack cheese!! The cheese made it!!

IMG_9710 (640x427)

Served with stone fruits

IMG_9708 (640x427)

More pickles

IMG_9711 (640x427)

And root beer!

IMG_9712 (640x427)

IMG_9704 (640x427)

Matt and I shared mom’s leftovers 🙂

IMG_9713 (640x427)

The deadline to enter the Summit Stonyfield Smoothie Contest has been extended a few more days. I’m totally craving a smoothie – tomorrow’s breakfast perhaps!?

Adios!

I’ve been THIS close to buying sardines (and I’m vegetarian) on several occasions now after reading your posts, but I can’t find any from companies that talk about their fishing practices. Wild-caught Pacific sardines are on Seafood Watch’s “Super Green List” for seafood that is both healthy for us (low in contaminants) and doesn’t harm the oceans, but I guess I’m still skeptical. And there’s the fact that I’ve been vegetarian for 5+ years, which is hard to give up. If the only meat or seafood I eat is sardines, would I be a sardinatarian? 😉

Wow, now I’m craving sardines and cheese (and I really don’t like cheese to begin with!), haha.

A really good way to make a melt is to take large tops from buns (like dinner rolls or hamburger buns) and then dig out the soft underside part and use the rest of the top as a little “bowl” to put the fish in. Top it with cheese, stick it under the broiler and you have a delicious little melt-in-a-bun.

Listen, no part of ‘Biscoff Cheesecake Bars’ are KERF-ish. But, I felt you must know about this wonderment I saw on Bakerella’s site today: http://www.bakerella.com/

In a completely unrelated story, the chocolate peanut butter oats I had for breakfast this morning were amazing! Sometimes, you need a little extra indulgence to get you out the door on a Monday.

1/3c Organic Valley Lowfat Milk (I do lactose free, bugger), water, and oats
    Heavy sprinkle of cinnamon
    1 giant tablespoon chia seeds
(Microwave for 90 seconds because you’re late for work and are taking this in the car.)
    Add:
    1 tsp vanilla
Swirl 1 tablespoon of peanut butter (am currently eating my way through PB & Company Cinnamon Raisin Swirl)
Drizzle with a little Trader Joe’s ‘Midnight Moo’.

    Pure heaven!

Oh, cravings! A few weeks ago I was eating a can of sardines every day and loving it, but since then I haven’t been able to justify it because canned tuna and salmon have been the ones on sale at my local shop, and so budgetting wins out 🙁 I think I might have to splurge on some sardines soon, though. Teehee. Splurging on sardines…
