Hi Ho, Hi Ho

Since I spent all day yesterday on my blog job, today is all about my job as a student. The second I push publish I am getting straight to work. Going for a run at 11. Lunch. Then classes all afternoon and evening.

So I let myself have a leisurely breakfast before I get on it –

Chocolate Chip Pumpkin Muffin Pumpkin Banana Oatmeal!

  • 1/3 cup oats, soy milk, water
  • Pinch salt, splash vanilla, sprinkle cinnamon
  • 1/2 tbsp chia seeds 
  • 1/2 banana
  • ~1/3 cup pumpkin, stirred in at end
  • About 1/3 of a Great Harvest Chocolate Chip Pumpkin muffin top. Since it’s all mine, I just ate the top off!

    Oh man, I need to get on the pumpkin train STAT! I’ve only had pumpkin seeds so far, but have 2 sugar pumpkins waiting for me to do something with them. I think scones or muffins might be in order.

    Kath, that oatmeal looks absolutely fantastic!! I just wanted to let you know it’s been almost two years since I started reading your blog now, and i have to say I owe you big time for setting such a great example for good eating habits! I was reading your “molting” post, and I really related to that, because I turned 27 in February, and I was shocked to find I had gained about 7 pounds in the last year…my weakness is ice cream, so I have started making it a once a month scheduled treat as part of me and my husband’s date night, and the pounds are starting to roll off…I too believe in intuitive eating, and making ice cream a particular treat to look forward to is helping me with my day to day. Anyways, thanks for all the great blog posts, and hope you have a great day! 🙂
