Grilled + Gobbled

I’m currently enjoying this yummy lunch on a bench outside. I’m a little chilly but the fresh air and sunshine are worth it. Im eating my salad, bread and orange and saving the rest for snacktime 🙂

SO EXCITED about this salad!!

Last night while the grill was hot I added a sliced block of tofu. (No seasonings or anything – just threw it on with some cooking spray.)

Salad is a bed of baby spinach topped with grilled carrot, asparagus and tofu along with about 1/4 an avocado and a drizzle of olive oil. YUM!

I also packed yogurt and a Larabar mini. I’ve been saving some of my lunch for snacktime so I decided to just photograph it all at once. Depending on hunger I might have my yogurt (spiked with PB2!) at lunch or save it for early afternoon. Saving it today.

    We’re on the same Larabar schedule :> Yesterday I tried the pb&j and today I have the tropical fruit kind! But mine are the full size… I think it’s a great idea to “save some lunch” too. I always do that!

    I saw that grilled tofu in your breakfast post and was so curious about it! I have a big block in my fridge right now that’s been pressed and I’m firing up the grill later this week, so there might be a few slices destined for it! I love finding new ways to use tofu, so thanks! 😀

    Love it! Question about your tofu : Did you by chance use your outdoor grill, or an indoor grill for your tofu that you cooked ahead last night? Also, did you drain it before grilling it, or did you just throw it on?

    I’ve got some tofu in the fridge and would like to make it soon – and your grill-style looks delicious! 😀

    Oh tofu…how I miss thee! I love it with no seasoning…kinda like cheese (which I can’t have either). Your salad looks delicious! The weather is beautiful and I think needed by all right now! I am having a salad with homemade sprouts, carrots and fresh yellow peppers. Feels so spring like right now!

    The Tropical LARABAR is very tangy with pineapple and coconut; I think you’ll like it. I wonder when they’ll release more than just the Apple Pie, Cashew Cookie, and Cherry Pie for retail sale as minis? And I’m still waiting for Ms. Lara to go organic (good thing for Jocalat)!

    Your lunch looks so yummy, I just finished a great salad myself. Unfortunately, I had to eat mine sitting inside at my desk 🙁 I can’t wait for the warm spring weather.

    Also, I am sure you have answered this before, but I have only recently discovered you blog and didn’t see it in the Q + A. Where do you get the cute and colorful ceramic spoons?

    Hi! I’m a new reader and have been loving your site. Question for you…. I realize you no longer count calories, but when you did- how much did you gague a “drizzle” of olive oil was? I’m used to using a TBSP but realize a drizzle is all I really need. TIA! 🙂

      About a teaspoon = 40 calories or so. Maybe even a little less

    I found your blog about a couple weeks ago, as I was looking up the benefits of almond butter. 😀 Your blogs and pictures have inspired me to spruce up my oatmeal with bananas, PB w/ flax seeds, and almond butter. I will never eat plain oatmeal ever again! For the past 5 months or so, I’ve been counting calories, cutting back on portion sizes, and eating healthier in general (and, of course, exercising). As a result, I’ve lost 25 pounds – I am now down to my ideal weight. Reading your blog has been an inspiration to keep going, maintain healthy eating, and see what I can do to refine and improve this healthy lifestyle even further. So, thank you! I look forward to reading more posts. 🙂

    love the looks of that lunch! just a question…I still haven’t received my shipment of open sky sunflower butter?! Its going to be a month pretty soon! I received the confirmation email and everything…but…no nut butter has arrived…:S Any thoughts or help on this? thank you, Cath
