Gray Sun

The sun is out, but the sky on the other side of the yard is gray!

After some computer work and a break in the clouds (!!), Matt and I headed out to the gym. We biked there, chatting along the way, separated for 30 minutes of cardio (elliptical for me) and then reunited for some pull-ups and push-ups.

Once home and showered, we raided the freezer for veggies in the form of leftover soup.

I heated up some frozen butternut squash and lentil soup on top of some leftover kale, all sprinkled with goat cheese and crushed pumpkin seeds. Butternut squash is gooooood!

    Love goat cheese and your addition to the soup was a super choice.
    I just can’t help thinking of Meg Ryan in one of her movies where she is on the train in search of her ex-fiance (in France or Italy?) and she eats the goat cheese but is lactose intolerant. She is just too funny.

    butternut squash is my favorite thing about winter. it’s always fun to have some stored away in the freezer for summertime. 🙂

    Glad you two got in a great workout today. It rained during my run today, but not too too bad. Your lunch looks totally delicious- love the addition of the kale. Josh and I tried one of Matt’s beers last night- very delicious (yet again). I’m starting to agree with everyone else…maybe ya’ll should just open your OWN place down here! I’d be there at least every other day 🙂

    Okay, Kath –

    Just to clarify – you combined butternut squash with the lentil soup?? I love both of them alone, but together? Were the tastes really that complimentary?

    On another note, I just started reading your blog (addicted now, actually) and I love that you go by “Kath” instead of “Kat,” as my friends, family and husband have always called me “Cath”!

    You know what’s so cool… you obviously WANT to eat healthy. It’s a habit and you just go and look for frozen stuff to throw together into a healthy, yummy meal. Me, if there is nothing obvious in the fridge, I take it as an excuse to eat a frozen pizza!! I need to take a cue and scout out the frozen VEGGIES and get creative with my meals!

    btw, I know you are located in NC, and I am going to be going on vacation to SC this week. I will be staying in the Myrtle Beach area but we go out to eat pretty much anywhere within an hour radius! I was curious as to if you had any suggestions of restaurants in the area? Of course, this is a long shot considering that NC and SC are 2 diff. states, but just a question! Thanks!

    Believe it or not, I was wondering lately, after having read your blog for quite a while now, whether you ever just grabbed a candy bar. Or anything similarly “unhealthy” that most people have at least once in a while. I feel better now that you had that bite of Hershey’s chocolate. You don’t need to sneak it though; you exercise your brains out and I think there’s room for a treat in a healthy person’s diet periodically. I understand the tenacity, though. I ate very little of that sort of thing when I was on my single-minded loss of 123 lbs. A glimpse into your thought process would be appreciated as I have fallen off the wagon and gained some of those pounds back (thankfully not all of them) and I’m looking for some inspiration to get back in the diet mode… your will power is like mine was back when I was doing so well. Can’t seem to get that mojo back…

    ‘Snuck’ more referred to the fact that I didn’t bother to photograph or anything – not that I was feeling guilty for eating some chocolate. My thought process was just “I would love a bite of chocolate to cleanse my palate.” Checks the chocolate drawer and locates a Halloween mini Hersey bar. Takes bite. Asks Matt if he wants the rest. He accepts I wasn’t hungry but I wanted the taste so I didn’t really need the whole thing.

    If only candy or any other fun food (crackers, bread, any carb or sweet) could hang around my house in a drawer for months on end, all my problems would be solved! And it would really help if I only ate when I was hungry. That’s the place I need to get to…
