Good Afternoon!

I say that ^^ because I’m ready to rock and roll. I’m already showered, the dishes are done, the house is put together and I’m ready to start working before 9am. A miracle! I didn’t sleep well, and I’ve been up since 6:30 -I’m having that racing mind syndrome where my brain just keeps going over all the things I have to do – but in a good way. I’m ready to tackle the day and excited to cross things off the list. We are getting so close to our deadline on Friday, and so long as the oven works by the end of today and we pass all of our inspections, I think we’re going to make it! [Knock on wood..]

Thanks for all of your compliments on the bakery – I’m loving how it has turned out!

This morning I dug into a Dough Boy Smoothie – simple banana-oat style.

Banana Oat Dough Boy Smoothie

  • 1/3 cup oats
  • 2/3 cup milk
  • 1/3 cup yogurt
  • Pinch salt
  • Half banana
  • 1 tbsp chia seeds
  • Sprinkle cinnamon
  • Splash vanilla

–> Put in Vita-mix and sit in fridge overnight. In AM, blend away!

Topped with the last of Lynda’s Granola, coconut, coconut butter and the last of my Honey Crunch PB.

I should have had peppermint tea today, but I had to give coffee #1 one more taste. Tomorrow I’m backing off for a day or so. Caffeine might only have a 12 hour half life, but I swear it lingers in my body. That’s probably why I had racing mind last night!

    Apparently in addition to being excited on the surface to come into your bakery when y’all are open, I am also subconsciously excited because I had a dream about you guys and your bakery last night!! Haha! Best wishes for smooth sailing 🙂

    God – the fire thing scared me…Lynda’s Granola – where does that come from and how did you get hooked on it? I’ll have to check it. I’m in love with granola and usually buy Nature’s Path Hemp or something, but go through it too quickly!

    I have yet to try the DBS, but I’m thinking I will this weekend (I usually make my oats at work, blending might be crossing the line…)

    Also, I randomly discovered an awesome way to store coconut butter so it’s always a melty consistency: On top of the fridge! The warmth radiated by the fridge keeps it always as a perfect temperature, but not too runny.

    However, I don’t think my landlord has replaced the fridge since 1985, so this might not work with newer high efficiency appliances haha.

    Looks like one stresser is taken care of!

    When I get nervous, I also have trouble sleeping and need to accomplish things before I can “relax.”

    I have the same problem with coffee even though I love it so much!

    Just wanted to say I a fascinated by how much I am thinking of you and Matt and pulling for you guys as you meet your deadlines to open. I don’t know you, I live in San Francisco, but I feel like my friend is opening a bakery in Charlottesville! The process has been so interesting to watch and I am really on the edge of my seat to see how it turns out. Sending good luck thoughts your way!

    Hi Kath-

    I am a regular reader, but don’t usually comment on blogs. I was originally really excited about the Nut Butter sale, but one thing that Justins nut butters and Danielle’s veggies have in common is Palm Oil. I would recommend looking into the environmental impacts of Palm Oil plantations and Palm Oil harvesting and making your own decision regarding your use of Palm Oil…especially when nut butters really don’t need any additional oil to be delicious!!

      I’m not thrilled about the use of palm oil in my nut butter either. I don’t mind some seperation; nothing that a quick stir won’t resolve.

    Hi, I was just wondering what you thought between intuitive eating versus eating to keep metabolism up. For example, I’m never really that hungry for breakfast but I always hear that one should not skip breakfast. However, if I was eating intuitively I would just wait till I actually got hungry and listen to my body, but then slow down my metabolism I guess. I just was wondering what you thought about eating breakfast even if you’re not hungry because I could wait till I get hungry but then it would be close to lunch by then.

      Hmm. That’s a tough one. I think saying you could skip breakfast if you’re not hungry would seem like I’m saying it’s ok not to eat – which is not ok! But if you’re not hungry till say, 9am and get up at 7am, then I don’t think you’re going to kill your metabolism by waiting an hour or so. Some people’s hunger hormones act differently. I also don’t think forcing yourself to eat has much benefit, but neither does fasting. If you’re not hungry in the AM, you might want to try eating dinner earlier. Or if you have to eat at 10pm every night and thus aren’t hungry at 7, I think that’s not going to have much of an effect. Does that make sense? I’m rambling!

    I love your dough boy smoothie idea. I’m pretty new to your blog, so I haven’t seen it before. I love that you do all the work the night before and just blend in the morning. Great for rushed mornings.
