Fun Run + Sun

We have a gorgeous day here! I am soaking it up because the forecast is rain, rain, rain.

I walked to the coffee shop near my house to meet Victoria for Metabolism studying. We crammed in 2 hours and I enjoyed a delicious cafe au lait made with hazelnut coffee and steamed skim milk. My, I love foam so much.

photo (1)

After studying I decided to take advantage of the weather and go running. I wanted to run tomorrow, but with "heavy rain" as the description, I don’t think there’s a chance of going out in-between drizzles. SO I ran.

6 and a half glorious miles. I ran for pleasure today, not speed, and took my time. I still run about 8:30-8:45 when I’m out for fun, but only on the flat parts. Give me a hill and I’m much, much slower when I don’t care about pace. And there were a lot of hills!

Once home I had planned on a Yoga Download, but Josh Groban’s "You Raise Me Up" was on my iPod and it was the perfect cool down song, so I listened to it on repeat 3 times while I did the usual vinyasa flows and sun salutations, warriors, eagles, ending with pigeons and a little solo savasana. I always feel kind of funny doing free-flow yoga, but I’m not bad at it! I’ve done enough classes and Yoga Downloads to know the general …flow…of things

 this !

After yoga I showered and came down for lunch at 2:00! I can’t believe I wasn’t hungrier but whenever I have coffee mid-morning I’m less hungry for lunch.

I made a Sweet Potato, Goat Cheese + Turkey Salad

IMG_5323 (640x427)

I cut up a sweet potato and microwaved it for 6 minutes until fork tender. This method does dry it out a bit, but it certainly does the trick quickly and efficiently. I wonder if putting a wet paper towel over them would help with the dryness? I saved about 1/3 of the potato for another lunch –

Served on a bed of green leaf lettuce dressed in olive oil, agave and salt plus goat cheese, green pepper, and a torn slice of Applegate Farm’s Roasted Turkey.

Plus a leftover Great Harvest honey wheat roll with raspberry jam

Delicious looking salad! I love goat cheese on anything. Do you mix the olive oil, agave & salt together as a dressing? Could you use honey instead?

I’m loving the Nerd Kerf gmail videos. I just started using gmail recently and am finding these very helpful. I’m also excited about Kerf Budgeting – that is definitely something I need to get better at. Another suggestion – Kerf Meal Planning. I’m just starting Meal Planning and trying to find the way that works best for me….would love to see how you do it!

I can’t wait until I have time to go back and look at those Gmail tutorials because I could use some organization in my life! And I am really looking forward to the budget stuff because honestly, I just don’t get how to do it and I am SO sick of always worrying if I’m going to run out of money before my next paycheck because I don’t know how to plan things…like my monthly bills, ok, but what about things that come up every 6 weeks, or once every 3 months, etc? How do I budget for that?

It’s amazing how much coffee can fill you up, especially a latte. I think it’s a mix of caffeine and milk. Sometimes when I have a latte in the morning, I have to make myself to eat something mid-afternoon even if I’m not hungry.

I must say I am very jealous of your sunshine! We haven’t seen any here in Missouri for several days, and all that’s in the forecast is rain & clouds. Ick.

I always enjoy the slower don’t-care-about pace runs. I think that’s why I enjoyed the long runs when I trained for my half-marathons.

Look forward to the KERF Budgeting video – I really need some help there, and I second the vote for a Meal Planning tutorial!

I often microwave my sweet potato to save time. I actually just stick a few slits in it and microwave it whole. I cut it up afterwards. I think that might help make it less dry.

I just drizzle them right onto the lettuce.

    Therese,

    Beth,
I’m really not that good with meal planning! There’s nothing to it other than finding recipes. I don’t really have an organized way of doing it. You’ll see in the Calendar video how I put my meals in, but that’s all there is to it.

    rachel,
But then everyone would use it and I’d lose pageviews!! I try to keep it a secret 😉
