Fruit Feud

This lunch was so delicious – and watching The Office on NBC.com with my headphones made it all-the-more enjoyable 🙂 Kelsey and I were both watching and kept laughing out loud

I had a Hummus (Sabra) + Pepper + Spinach Sandwich on GH Honey Wheat Bread.

Plus a little container of leftover salad and veggies from yesterday’s lunch –

And a fruit salad: grapes, grapefruit, blackberries (which were $1.50 yesterday!) strawberries, kiwi!! But I saved most of it to have later. A classmate of mine always has a huuuuuge tupperware of fresh fruit that she eats during our afternoon class. I am always so jealous! So last week I decided I’d bring some of my own to enjoy 🙂

Mystery Recipe Unveiled

Remember when I made this Mushroom Mac?

Well here’s the recipe – on The Mushroom Channel! The Channel has asked me to develop and post a few mushroom recipes this year to celebrate my love for shrooms. This one was a BIG hit the night we made it, and I want to make it again looking at the photos!

    Just had to say that I LOVE this blog! It’s been so motivating. I also thoroughly adore your recipe for whipped banana oatmeal and I even made it for my husband this morning who declared that it was the best oatmeal he’d ever had. I was wondering what you are going to school for? It sounds right along the lines of what I want to study when I go back, which is Nutritional Science.. I’m just curious! Thanks!

    Just out of cusiousity- how long does it take you to eat lunch? I know you eat a lot of food b/c your choices are low-call & high-volume. It just seems like it would take a while to get through all that!

    Like the recipe for the mac & cheese. Would spinach be an acceptable substitute for the mustard greens? Can’t say I’ve ever seen them in stores here.

    I am inspired to get my booty out and go grocery shopping for fruit now! I wish I craved veggies like I do fruit, but 99% of the time I’ll take a fruit salad over a vegatable salad.

    Oh my goodness, Kath! Have you eaten or heard anything about Panciuto in Hillsborough? I just heard about it tonight and after looking at the menu am really wanting to go there – they have hazelnut cake with banana ice cream and pumkin ricotta cheesecake with a cookie crisp crust!!     No problems with sogginess. Sabra hummus as well as the homemade kinds I’ve made are rather thick.
