Snacks + Salads

Kelsey and I fetched coffees to help us get through the afternoon. I had 75% decaf/25% caf. Plus a splash of skim milk and a splash of half and half.

I also ate my leftover lunch fruit! It was SO FUN to eat during class 🙂  We had an early dinner so I didn’t need a snack, but while I was cooking I had a few bites of this leftover salad from last night to tide me over. All the good stuff is on the bottom!

Pile o’ Peas

I thought up this salad based on cravings and what we had in the fridge. It turned out awesome! Here’s the recipe: Lemon Caper Chickpea Salad.

“Midnight” Snack

Since we ate so early I felt an inkling of hungry around 8:00, so I had a little yogurty snack. I really love TJ’s Euro yogurt but it’s been sold out at my store for months. It’s very tangy but still much thicker than normal plain yogurts that aren’t Greek. Greek still holds a place in my heart, but this is fun for a change (and is half the price per oz).

+ half of this Quaker True Delights Dark Chocolate Raspberry Almond Bar. It was good, but the Coconut Banana was better! I wish the raspberry chunks had been bigger, but I loved the chunks of chocolate!

    I’m still on the fence about TJ’s European yogurt. I think I need to try it again. 🙂

    Funny to see Java City…I haven’t been tot hat place since I was at Winthrop 🙂 I used to frequent the one in Marg. Nance during long art classes!

    I eat the TJ Euro yogurt too. I’m with you greek is great, but Euro is really good and cheap! I normally have some sort of cereal for crunch with it – this week I’m on a Total Raisin cereal kick. I seem to never get tired of my afternoon yogurt treat at work.

    I know what you mean about the weather – its in the 30’s and now we have wind chill advisories for the middle of the week.

    Hi Kath!
    Sorry I haven’t written in a while…was on vacation (abroad) and then super busy at work. Anyway – don’t worry about the pants…mine felt unusually tight today too…weird:)
    Also – I made your veggie lasagna recipe last night and it was a HUGE hit with the roommate, my brother and the roommate’s sister! Thank you !
    I’m also keeping my eyes open for a KERF contest and the oatmeal bowl…I love bowls:)

    I love that yogurt, but TJ’s Greek is still my favorite.

    Tj’s european style yogurt is my favorite! I can’t go a few days without it… so glad they had that temporary recall of the greek because I definitely prefer this kind!
