Foundations

Hello from a bench along the Greenway! As our first very warm day (75*!), I had to eat my lunch outside. And I discovered this bench last week and knew I’d be back!

Wish I had the proper shoes for walking to get in a few steps!

Sadly, I’m wearing the WORST shoes today!! I’m not sure if it was that funky elliptical last night or my run this AM or both, but my feet want to be in comfy tennis shoes and I just happen to be wearing these boots that are killing me! I gave them a rest after a morning on my feet in the cafeteria working on a video shoot on portion size with a Yoga Tune Up ball. I got these balls as a sample to test out and love them!! You know how I use a tennis ball in my car as a back massager? These are even better because they are grippy and firm. I used it to roll my foot this AM and felt SO much better afterwards. Coming to Open Sky soon, I hope!

On to that lunchbox surprise!

Fruits + Vegetables – the foundation for every good lunch!!

A container of leftover cabbage (leftover dinner veggies are the easiest way to add them to your lunch). MY GOSH cabbage is SO GOOD!! Sweet and chewy. I found a new [cheap] favorite veggie! Loved it plain with just black pepper and some salt (and a bit of oil from cooking)

Carrot + Celery, sparked with a dollop of Cinnamon Cherry Naturally Nutty (the second easiest veggie to add to lunchboxes! Third would be a salad made with pre-washed lettuce)

Followed by the Main Event: Siggi’s with Galaxy Granola! Love this flavor. All the flavored Siggi’s are great – not too sweet but with a wonderful hint of flavor.

I’ve got a date tonight and it’s not with my husband!!

    that lunch looks like perfection to me! i adore cabbage…it’s such a great addition to soups and stews as well since it’s super filling and flavorful, and it holds up well! enjoy your sunny gorgeous day!

    What a lovely day to have lunch outside – and what a lovely lunch to have on such a nice day! I love cabbage too – though I don’t recommend eating 10oz raw like I did once… bit uncomfortable 😛

    Hi Kath. Do you find that you get hungry because you don’t have some form of protein (vegetarian or not) in your lunch? I always find that I need some form of protein to keep me satisfied for a few hours.

      I hope you’re not referring to this lunch ’cause that yogurt had 15 grams of protein! And the PB added another 4 or so (probably) and the granola probably had some. I’d say I had about 20 grams!

        Didn’t realize that the yogurt had so much protein. What are your views on so called complete protein ie- from animal sources vs. protein from vegetarian sources?

          Why do you mean by my views? I think so long as you get all the essential amino acids over the course of one day, you’re fine. I wouldn’t worry too much about combining at every single meal.

    I still need to get my tush over to C&B to get me a mini spoon. I got one from a bloggy package (in a set with a mug) but I think my roommates are hiding it from me!! I can’t find it!

    It’s so nice outside but I have a stinky exam tomorrow. School for once has to come before vitamin D. Good thing I got a sunny run in this marnin’ 🙂

    That lunch looks delicious and filling. I love cabbage and always got weird comments for it. Guess it is an acquired taste for some 🙂 I can’t wait for the 70 degree days to reach MN. Still in the 30’s and 40’s here and we think that is WARM!

    Hooray for warm weather and bench lunches! The lunch you packed looks so nutritionally dense, energizing, and yummy. You have all of your recommended fruits and veggies servings in this meal, too! Love the flavor combo of strawberry and kiwi, nothing beats it!

    Me JEALOUS! We have 40s and RAIN today. :-/ I just keep telling myself, “It makes the grass green! It’s good reading weather!” But it’s only making a dent in my psyche. I just want sun and warmth and flipflops! LOL!

    Two dates in one night! How fun! (a different kind of “double date”! 😉 )

    strawberries and kiwi, yum. I just got a case of really good looking strawberries today from Tj’s. Now I’m going to have to get some kiwi. I love that summer is coming with a wonderful variety of fruits and veggies.

    Perhaps I’m picky, but I always peel off the kiwi skin. It’s probably healthier to leave it on, but it just looks all fuzzy and nasty to me, and I just can’t stomach it.

    I love adding cabbage to stirfries. It’s so cheap, loaded with nutrients, and full of fiber. I even eat it raw (sliced into chunks) sometimes, and dip it in hummus. It’s really good!

    Hi! I stumbled upon your blog recently and love it.

    That spoon is precious! I’ll be on the lookout for one just like it. That naturally nutty spread sounds delicious. I’ve heard about it but have no clue where to find it. Anyway, nice to “meet” you!

    Bad shoes and aching feet are possibly one of the worst things!! I used to suffer through pain for fashion for years and now my feet just cant take it!! Good thing you had that yoga ball thingy!

    My work also has a tennis school so often we will grab a tennis ball to workout the knots in our backs, shoulders, feet, and hip joints. I would be interested in trying your new little toy!! Sounds great!

    Have you tried the Siggi’s Orange/Ginger flavor? After seeing Siggi’s on your blog I saw them in my local Whole Foods and grabbed several of the grapefruit flavors as I freaking love anything grapefruit. I was a little bummed about the flavor after trying it, but totally stoked about the consistency. Needless to say, I grabbed every flavor the next time I went to the store. I can now say that Orange/Ginger Siggi’s is my FAVORITE yogurt flavor. PERIOD.

    Also, have you tried Milk & Honey brand granola? I like me some Galaxy Granola, but I recently tried Milk & Honey for the first time ( pumpkin & CHOCOLATE!! flavors) and I am in love!!

    You know, I’ve seen Siggi’s at my local grocery store, and I’ve been wondering if they’re worth the pricetag. But I’ve seen them so often on your blog, read your reviews, and I think you’ve convinced me to try some Siggi’s! 🙂
