Favorite Foods On A Plate

Good afternoooooooooon! I have a love/hate going on with Wednesdays. I have to get up earlier than normal to get my breakfast photographed, consumed and blogged with time to digest and catch up on daily computer tasks before my early cycle class. It’s a bit rushed, but I’m so spoiled with my career that it’s really nothing compared to the rush of my internship/PR days.

But the plus side is that my workout is over with by 10:00, and I have the whole day wide open for other projects! Refreshing. Thus, Wednesdays are often some of my most productive days.

Lunch today was killer! Full of favorite foods.

Carrots (another vegetable! I am making an effort!) with apple and Smart Kitchen PB. The only way I can eat carrots these days is with a bit of peanut butter.

And a mini bowl of greek yogurt topped with nuts for a protein boost. These nuts are Doug’s Nuts and despite me telling Doug that I unfortunately no longer do formal product reviews on KERF, a package of nuts found its way to Great Harvest.

But now that I am eating them, I must share that they ARE the best seasoned nuts I’ve ever had. They are coated in a secret sticky-sweet-savory spice, and they have the perfect flavor for sweet dishes like yogurt/oatmeal or savory dishes like salads/rice.

    I agree, I don’t like having to actually wake up and get moving in time for an early workout, but it’s so nice to have it out of the way and have the rest of the day wide open! I still haven’t tried carrots with peanut butter (or any nut butter, for that matter) yet, but I keep meaning to do so – looks delicious. So do those nuts! Usually I stick with walnuts + honey, or dried cranberries + chocolate chips + oatmeal on Greek yogurt, but your bowl looks so good!

    Really! Peanut butter and raw carrots! I guess I just love carrots on their own to think of adding anything to them. I guess I’ll just have to trust you on this one and give it a try with my Peabutter!

    I commend your veggie-eating efforts. It’s terrible, but I cannot remember the last time I ate a veggie that wasn’t in the form of tomato sauce. They are my #1 food aversion right now! I have been doing bottled green smoothies, though, because I can’t stand the thought of actually making my own. (I seem to have the “I can’t prep food, but once it’s done, I might be able to eat it” thing going on too.)

      I just decided I didn’t feel they were “me” anymore. Formal ones at least. “The nice folks at XYZ sent me blah blah to try out.” It’s not to say I don’t ever review things that I was given – like today’s nuts or OpenSky products – but I was getting so many requests that it became hard to manage and just easier to decide to step away.

    Do you have a more direct link to the peanut butter or care to elaborate on it? I’d love to drizzle pb like that over veggies for my girls because they are huge double dippers and will eat all their pb with one carrot stick. Little buggers! 🙂

    I’m much more productive on days that I teach class in the early a.m.- and on Tuesdays, my workout is done by 6:15 am! Even though that is great, I find that my productivity level decreases in the late afternoon, and I’m completely useless by evening. 🙂
    Spiced and seasoned nuts are dangerous for me- I can’t stop eating them if they’re around!

    Carrots and pb are awesome, why wouldn’t you eat them that way all the time? It’s how we roll at our house. Ha! I use pb to get the kids to eat either fruits or veggies, it’s a great snack!

    That looks like such a seriously perfect lunch. And I definitely went through a phase where I couldn’t eat a carrot without a little bit of peanut butter…I wasn’t pregnant though, it was just a phase, I promise! Haha.

    I had such a hard time with leafy greens and most veggies when I was pregnant too. It caught me off guard as I naturally adore them and happily eat them daily! Im not kidding when I say two hours after giving birth I ate a salad with the same joy I had before pregnancy. But during….theyy made me gag. Terrible! Congrats!!! I enjoy following your blog, its wonderful!

    The colors of that lunch are so pretty. I can’t handle any vegetables without fats added to him, preferably of the animal type, though nut butters do in a pinch. Your lunch looks magnifique.

    Isn’t it funny to be a veggie-lover who all of the sudden has to sneak veggies into your own meals to fool yourself? The same thing happened to me when pregnant. I would make myself a cheese omelet with buttered toast then add a side of tomato slices with basil. I must admit that sometimes the tomatoes and basil remained…

    Luckily, this ends! Back to loving veggies. Actually back to loving everything, and lots of it — a breastfeeding appetite rules 🙂

    Well, most people have to get up earlier than they want EVERYday to get kids ready, eat breakfast, workout, shower etc. – and all before 9 a.m to be to their job for the whole day! So yes, consider yourself lucky 🙂

    Pizza and peanut butter are the best ways to sneak in veggies!

    I love Wednesdays! Beats Monday & Tuesday. I envy your schedule & flexibility. I sometimes can’t believe how much I get done before 7am on the weekdays! Of course I’m sure things will be different with your new arrival! 🙂

    That pizza looks wonderful – even the veggies on it look delicious! As far as the getting up early, I’ve recently discovered the “joys” of getting up early. Working out before work allows me to only shower once a day and gives me more time in the evenings, plus nothing gets in the way. Getting up at 5am is totally not fun, but so worth it! I feel like I have my life back now that my evenings consist of something other than eat, workout, shower.

      And then when you think that’s busy, wait until that baby is a toddler!! I try so hard to savor my days because I know when I’m the mom of a teen I will miss these hectic days…but it’s difficult. 🙂

    I just got caught up on your blog (I’ve been a reader for a couple years now) and it seems a huge congrats is in order. Its especially exciting for me because I’m almost 9 weeks now, just started telling people, and what you have written so far is almost to the T what I’ve been experiencing! Craving foods you had when you were a kid, check. Especially cheese, check! And the list goes on. I’m looking forward to reading your experiences as we go through this together.     I have been craving almond butter seeing it in your photos on oatmeal & now on apples. I stopped at the store last night & bought some almonds & went home and made a big batch with the recipe you had posted a while back – almonds, olive oil & spooned in some honey. OMG, had it on an English muffin & sooooo good. Had some in my oatmeal this morning & can’t wait to pour some over my apple for snack later today. YUM! Thanks for sharing your delicious recipes & food combos!
