Everything But The Crust

Pumpkin Pie Oatmeal

The proportions of pumpkin : oats :  cottage cheese really made this taste just like pumpkin pie filling! I would have killed for some graham crackers to crumble on top, but we don’t have any in stock 🙁

The mix:

  • 1/3 cup oats, soy, water
  • Pinch salt + vanilla bean paste
  • Mini box raisins
  • *Skipped banana today
  • Wheatberries (2 tbsp?)
  • 1/2 cup cottage cheese
  • 1/2 cup pumpkin
  • Pumpkin pie spice
  • Brown sugar
  • Pecans
  • 6 choco chips

Since I was home late last  night and the husband is at the bakery we decided we’d work out together at 4:30pm when I get home. I also decided to pack my lunch so I can get more work done, save a few bucks, and avoid a trek to EarthFare in the rain. Hopefully the rain will be minimal today 🙁

    Ahh, who needs the crust when all the goodness is in that bowl?? Love it. Although the graham cracker addition WOULD be quite fabulous 😉

    I need advice! I don’t run, but I do for LONG walks (sometimes 4 hours at a time). There are things I like to have with me…chapstick, keys, etc. but I have no idea where to put them! I’ve been using a wristlet, but it’s a pain to carry and have swinging around. What do you all use to carry things around when you go running/walking? Help!

    I had pumpkin for breakfast this morning too! In my favorite smoothie: pumpkin, banana, 1 packet no-sugar-added chocolate carnation instant breakfast, and skim milk. Mmmm!

    That second picture makes me so hungry I’m literally drooling all over my keyboard and I can practically taste/smell it :] I’m so jealous. The graham crackers would have been super tasty but at least you already have a lot of chewy and crunchy stuff in your bowl already. Did you toast the pecans?

    The pumpkin pie spice oatmeal looks great. I might see if I can alter my Kashi instant(kitchen floor is being installed so no stove 🙁 ).

    If this is any help, when I go on long hikes, I have a set of spare keys that are only the ones I need(house, car). I bring my driver’s lsc and carry water ,thats about it. For bike rides(I take long ones)d I have an id bracket I bought that has all the essential infromation in case of an accident (who to call, and blood type and alergies). Hope this helps

    This is the last post I will be able to read for awhile, I am off to San Diego on bike. It’s been a real pleasure reading your blog.

    hi kath!
    i’ve been reading the blog since you first started way back when (i found you on eatlikeme.) i just have to tell you that i think it is so impressive, the journey you have gone on over the past year + and where you’ve ended up. the other day i was looking through old posts for a recipe and ended up back in some of the super old ones (when the blog had a different name!) and your life was so different in terms of counting calories in food, calories in excercise, calculating net every day, etc. etc. and i just think it is so great that you have evolved in a way that you have been able to let go of that rigidity and maintain a healthy lifestyle and a happy weight. i think you are a great example of balance and that is something that i strive for as well. i think you also go to show that while calorie counting and that sort of “dieting” is not feasible for a LIFESTYLE, per se, that you can use it to get a handle on healthy eating and then gradually move away from it as you have. i thought of this also the other day when you weighed the bread the husband brought home. whereas before (and this is my opinion) you would weigh it so that you could calculate it into a very strict allotment of calories for the day, i feel as if now you do it just as more of a reference, as a way of being conscious of it, but not obsessive. i think that is the healthiest way to live. no one should eat without any concern for, or idea even, of what the makeup of their food is, but i really admire the way you take food, GOOD food albeit, for what it is and you indulge in what you want, skip what you don’t want, but are just overall conscious of what you eat.

    Questions: did you cook the pumpkin with the oatmeal or add it in later? If you have a post on how you cook your oatmeal, could you direct me to it? Are you using steel cut or rolled? Thanks.

    Oh, that looks good. I need to stock up on nuts! I am all out of macadamia, and the only thing I have left in my “oatmeal extras” bin is sunflower seeds 🙁

    Kath or Matt,
    I was recently at GH in TN. We LOVE their bread. I wish we had one in my town! Very cool you are working there, Matt!

    Do you know why they put on their bags, let’s say the honey whole wheat… like 120 calories per serving, but we actually counted the slices, and there is like only 16 slices. So, that means each slice is more calories (hence the food scale!) ha. Just curious why they don’t list the servings to be the actual number of slices?

    Also, why do they use corn syrup in some breads, but thankfully not in the honey wheat?

    Hi, I have a quick hummus question. I am also obsessed with Sabra hummus but I’m trying to cut calories and am afraid having it every day might be too much. Kath, it seems like you eat it a lot and I know it’s a good fat, but isn’t it pretty caloric as well? Do you normally keep to 2 tbs at a time? Just looking for a good gauge.

    Oh my gosh, that looks so delicious I can’t TAKE it! I had some pumpkin raisin crunch cereal for breakfast (Nature’s Path) but this looks like such an upgrade, I might have to try it tomorrow morning.

    Re. Pumpkin + Cottage Cheese,
    I stir them in the pot after the oatmeal is done to warm them up and incorporate them. If I’m cooking a double batch and the husband doesn’t want oats, I put the mix-ins in my bowl and microwave them so they are hot and stir once I pour the oats on top.

    Welcome back!! I’m guessing they don’t put the slices on because the loafs are not rectangular. They end pieces are much smaller than the middle ones. So I guess to be accurate you’d want to weigh them. I will probably just assume 2 oz per slice and it will balance out when I eat from both the end and the middle.

    Yes, I stick to 2 tbsp or less on a sandwich or as a dip. Hummus is really easy to eat 3-4x the serving.

    I have to admit I am addicted to pumpkin right now. Pumpkin oatmeal in the morning. I use a little pumpkin pie spice then a dollop of fage ff yogurt, pumpkin vegan muffins with whole grain oat flour. I thicken my veggie chili with pureed pumpkin……..soooo good. I love that I have found a blog that cooks and eats like me.
