Early Celebrating

My hormones are off or something because I’ve been in the laziest mood! I can tell something in my blood is causing a mood swing. Grrr! I haven’t wanted to do anything this afternoon but lay around. I even had no interest what-so-ever in food this afternoon, which is abnormal for me!

I waited until the husband got home at 7:30 to heat up my “eat what you want” leftovers bowl. I planned this guy earlier today in my head.

Layers of broccoli, kale, coconut maple tofu, butternut + greens sauce and feta. It was quite good 🙂

Then came the fun part – a Savannah Bar! The husband has been talking about these for weeks but hasn’t brought one home because they always sell out. But tonight they had some left (guess everyone is off eating chocolate 😎 ) This guy is like cobbler meets cookie. A cookie crust with a cobbler taste. DEE-vine!!!

I’m kinda tired having been up since 5. Hopefully I’ll wake up refreshed + recharged.

    That dinner looks great. Since you seem to be a kale expert, I was wondering, can you eat kale plain/uncooked? Or is it just one of those things that’s much better cooked?

    Oh wow that bar looks great! I love seeing the his and hers portions. You should have seen the his portions at dinner tonight- me with my black bean burger and the boys with pan fries and wings! Oh to be a man, eh?

    Maybe you just needed a rest day… or… maybe you’re pregnant. 😉 That’s always my first thought when someone says they’re abnormally tired, or have any appetite change. HEY, you never know!

    I have sensitive teeth! I also find that I drink more when I use a straw, so it helps me stay better hydrated.

    You can eat it raw (or put it into smoothies raw) but it’s pretty tough and would probably be more tender steamed or sauteed.
