Confessions Of A Saladaholic

Boy does shopping leave me exhausted! My feet and legs are so tired, and we didn’t really do that much walking around the shopping center.

Food Lab was fun – we made the ice cream as scheduled. We made it 100% from scratch starting by beating + heating egg yolks, sugar, milk and salt…

Freezing that and then folding in freshly whipped heavy cream –

Then we put them in the freezers and stirred every 10 minutes for over an hour while they started to harden.

The only one we got to taste was the ice cream maker variation –

And the remains of our frozen fudge and fondant from last week. We’re letting the ice cream freeze for the week because it was still too soft today. I had a few fudge pieces..

After lab, Kelsey and I headed to the same shopping center I visited on Tuesday for lunch and shopping. We dined at Sugar Magnolia’s, a Southern-inspired establishment. Kelsey had a Blue Moon, I had a Pellegrino.

I had yet another fantastic salad

Neptune Salad, Grilled Mahi-Mahi served over Organic Field Greens and Seasonal Mixed Vegetables with Homemade Lemon-Dijon Vinaigrette. The surprise veggies included cucs, tomatoes, corn, black-eyed peas and croutons. All were delicious. And the Lemon Dijon dressing was awesome with a very horserasishy kick!

The mahi was the perfect portion and simple flavor –

I asked for a side of their Seven Grain Bread (most restaurants will bring you a complimentary side of bread if you ask). The bread she brought did not appear to be whole grain in the slightest, but it was still really good (and doughy!) and I ate most of the two pieces! (It wasn’t as much as it seems because it was hollow on the inside)

Kelsey got the Tuna Salad Sandwich, Homemade Ahi Tuna Salad served with Lettuce, Tomato, Bean Sprouts and Swiss Cheese. Plus fried okra! I had two okra and a bite of the sandwich (see below)

She did not detect onions in the tuna salad – but I did!!! EWW!! I had to give the rest of my bite back.

For dessert, we enjoyed some mints from my assorted mint + lifesaver collection in my purse 🙂

After lunch we shopped at Target, Banana Republic, Bath & BW, Victoria’s Secret and Homegoods, where I found this cute duck! She is just like a giant duck my sister had/has!!

Daffy

I came home with some candles and two bowls from our shopping adventure – you’ll see them soon! They were all on sale – there are great deals out there these days. I also got some Valentine’s plates and napkins for our party tomorrow night. And some construction paper to cut out some hearts.

I am continuing my personal day today. I don’t think I could stand to think about Biochem right now, and my other projects can wait until Tuesday + Thursday of next week. But I might force myself to do some studying tomorrow during the day. I need to get back in the study mindset!

Tonight is low-key. The husband is working until 7, and we’re doing “eat what you want” night to use up some of our fridge leftovers. We will be watching The Office as well!

    I love “eat what you want” nights (b/c I don’t have to cook). We call it “choose your own adventure” or “every man for himself.” Do share what you each end up choosing (I have a feeling they will be vastly different)!

    I am a saladaholic too. How do you detox from salad?

    Leftover nights are so key sometimes! I seriously get stressed out when I have an over-stocked fridge and freezer. It’s like: must…eat…bell peppers…and soup…for a week straight! haha

    That salad looks delicious, I’ve never tried Mahi Mahi is there anything you would compare it to?

    I just found out the other day that Kitchen Aid makes an icecream maker attachment for stand up Kitchen Aid mixers.

    I haven’t priced it yet, but that would be a cool thing to make once in a while!

    You’re meal times are beautiful! I too tend to make a ambiance with every meal with my husband. I truly beleive that enviroment is key and actually makes the food taste better.

    I love all of your labs- they are so neat! I would say I am def a saladaholic too! I love trying all the different varieties restaurants out there create (and trying my own mixes at home!). Hope you have a great weekend and Valentine’s day!

    I have just gotten into 30 Rock this season. I’m not a huge fan, but it’s growing on me (I hate Alec Baldwin’s character but I love Tina Fey). I don’t think it’s very funny, but I like the plot. I thought last night’s was good!

    Hmmmm…I’d say mahi is like cod meets halibut meets tuna? It’s firm like cod and had a kind of toughness like tuna when it’s cooked (not rare).
