Deck The Blog For Oprah

It’s going to be quite the festive holiday season – KERF holiday posts are going to be featured on Oprah.com!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! Having grown up in a household where Oprah was turned on every afternoon, I have great respect for Oprah’s interest in women’s issues, literacy, and humanitarian work, so I am super excited to be one of several featured bloggers.

[And I can’t go without saying that I would faint if I were ever asked to be on the show…]

The Deck The Blog For Oprah series starts tomorrow night when I am traveling to Hillsborough to be a quasi-celebrity judge in the Orange County Chamber’s 4th Annual Gingerbread House Competition! Stay tuned 🙂

Snacks during class:

Honeycrisp

And I shared two bars with my friends:

First this Kashi Dark Mocha Almond, which I did not really like 🙁 It was rather dry without much flavor. Did like the choco chips! I had one big bite of this one…

Second, an Honest Foods Apple Ginger – LOVE these. So much flavor and so dense with oats + almond butter <3 I ate most of this one…

Coming home was fun because dinner was in the crockpot and all ready to go!!!!!!

The star was this organic flank steak that Greensbury Market sent me. Since I’m not a huge meat eater I wasn’t sure what to do with it. But whilst reading Real Simple, I came across this recipe and knew it would be perfect for the ole crockpot: Slow Cooker Cuban Braised Beef and Peppers.

We pretty much followed it to a T, except omitting the onion 😉 The beef shredded perfectly!

Couldn’t wait to dig in, as it smelled amazing!

Topped with avocado, Big Papi sauce, cilantro and snow peas that I steamed in the microwave to bulk it up a bit

Plus about 2/3 a cup of Bob’s Red Mill Grande Whole Grains, which I’ve had for ages – from the last time they sent some samples to review! – and always forget I have! We ran out of brown rice tonight, so I used ’em. They are great – lots of chewy wheatberries!

The flank steak was amazing. Y’all know I’m really not one to go gaga for meat, but this was absolutely delish. Tender, flavorful. Not sure if it was the organic meat or the cooking technique, but I’ll just assume both had a good impact 🙂

Had a bite of Scharffen Berger dark chocolate for dessert.

Big Open Sky fun thing in the AM!

    Holy Moly!!! That is so AMAZING Kath!! Can’t wait to read alllll about it.

    Love the crockpot meal. You should try overnight hot oats in it. Maybe with some apple and cinnamon and a little real butter. You will LOVEEE it. It’s a holiday staple at our house =)

    That flank steak crockpot concoction looks so hearty and satisfying. Flank steak is easily one of my favorite cuts of beef. I loved how you served it over greens rather than rice or potatoes. Beautiful!

    I didn’t comment on your last post, but I recently just fell in love with Scottish oats too. They’ve got the chewiness of steel cut, but a reduced cooking time. Perfection 🙂
