Cuckoo For Croutons

I found a bag of these babies in our carb closet – the husband made them from some stale bread yesterday while I was in class! OMG they are so fabulous! I knew my lunch had to involve them. Plus I was absolutely freezing all morning so while I was craving a salad, soup seemed like a better choice.

I took a box of Pacific brand Creamy Tomato and mixed it with about a cup of raw fennel, half a chopped carrot and a handful of baby spinach and cooked them all together. I topped that with some shredded cheese and fresh/frozen basil and a few croutons (I ate most of them on the side so they’d be nice and crunchy!)

The only time all day that I wasn’t freezing cold was while I was eating this hot soup.

**Edited to add that I forgot about my handful of kashis before lunch and handful of jelly belly beans after lunch, for the record!**

I STILL have not made it to the gym!! Yes, I desperately need a shower! Right when I was getting ready to go at 12:30 (already running late) the Time Warner Cable guy showed up to fix our phone and stalled me by 20 minutes. I decided since it was 1pm already to just have lunch and postpone my workout. Now that I’ve been cooped up freezing inside all day, I’m totally craving some sweaty gym time :mgreen:

TOMORROW is the husband’s birthday!!!!!!!!!!! We’re going to Karen’s for dinner to celebrate. See you after!

    I am addicted to homemade croutons. Once I eat one I just can’t stop. They’re amazing.

    I tried that soup for lunch. It is awesome..creamy and not so high in calories. Had it with grilled cheese s/w.

    Tomato soup is so my favorite. Especially with a grilled cheese sandwich. And I LOVE birthdays! My bf’s was last week. Can’t wait to see what you do to celebrate. 🙂

    I refuse to take a shower until I’ve been to the gym (on gym days- if I’m not headed to the gym, of course I take a shower!). I used to head to the gym at 1 p.m. during college and I would go to morning classes all disheveled. Not even a cute guy could convince me to get all prettied up before my workout!

    Hi Kath,
    I’m sure you have addressed this question, but would doing beginner yoga and pilates 20 minutes a day count as a workout? I honestly hate going to the gym or any aerobic classes and find running too hard on my knees. I walk around 30 minutes two times a week and do a bit of beginner yoga and pilates atleast 20 minutes daily. Is that enough exercise or should I try incorporate more into my life. I’m pretty young and do feel healthy, but it’s just when I read your blog, I feel like I may not be exercising enough. Would your lifestyle be considered a very active one?

    I’m assuming the croutons were made with Great Harvest bread. I can’t imagine a tastier bread to make a crouton out of! Yum!

    Soup is always perfect on cold days! While it wasn’t actually cold in Miami today, it was very gloomy all day, so I made it a soup day too 🙂

    Yay for hubby’s upcoming birthday! The soup looked devine, I probably would have paired it with a grilled cheese sammich! I’m CRAVING cheese at the moment (but I can’t have any since I’m vegan), so don’t mind me…

    The American Heart Association recommends 60-90 minutes of exercise on most days for those wanting to lose weight or maintain a weight loss. But that exercise can be walking, cleaning or gardening. Just activity in general, and you can gauge your lifestyle appropriately. That said, a weight gain or loss will tell you if you’re getting enough exercise – you should gain if it’s not enough to support your eating habits. Here’s what I wrote about yoga yesterday:

    Amy is right that the kind of yoga I’m doing isn’t all that rigorous (I love it when you all answer questions for me ). Really, it’s more of a time thing. If I were doing 60-90 minutes of Bikram/Power yoga, I probably wouldn’t also do cardio/weight lifting, but since I’ve been sticking to 20-30 minutes of more gentle styles, they’re not long enough for me to want to consider it my only exercise for the day (unless it’s a rest day, of course).

    That soup looks delicious!

    Did you cook everything together until the carrots and fennel themselves were cooked, or were they still crunchy and raw in the soup?

    I put them raw in the soup and cooked in the microwave for 3-4 minutes. They were soft, but not totally cooked.
