Crispy Greens

An iPhone hello today 🙂

I spent the morning at the school and attended a very small presentation to some parents on loving thyself and being a great role model for your kids.

I had a little time between my morning and my afternoon assignments so since I was in the neighborhood, I went staight to one of my favorite Charlotte restaurants for salads: Crisp!

However it was too early for lunch so I conveniently went to the Sbux next door for tea and some work on my projects. The Tazo Banilla Roobios was awesome!

I went to Crisp at noon and got a great shrimp salad –

Spinach, mixed greens, carrots, cuc, mushrooms, corn, chickpeas, almonds, olives and a killer horseradish Dijon dressing.

Shrimp on top!

Lunchtime entertainment at the bar: Paula Deen!

We’re having leftovers for dinner and I’m alreay excited about a wide open evening with no dishes to do!

Off to WIC!

    loooove the vanilla roobios! it is one of my favorite afternoon treats 😉 I normally add a big splash of skim milk, too! I’ve also gotten it with half steamed milk, too — delish!

    I would have loved to been in the audience for your presentation. My husband and I are planning on having children and I’m so concerned about showing them how to eat. I don’t want them to have the same love/hate food relationship I’ve had to deal with through the years.
    I’m positive all the parents that attended were very thankful for the help you provided.

    I love it when parents try and teach their children about healthy eating – it’s one of those things that makes me smile a lil bit inside 😛

    Starbux is my ultimate FAV! cinnamon dolce latte!

    I did WIC on Monday and Tuesday this week…I enjoyed my time; everyone is so nice and really grateful for the help:) Let me know what you think!!

    Just curious–do you have a job lined up after complete the internship and graduate? Or will you be working at the new Great Harvest? You may have mentioned this already, but I may have missed it.

      Yes – a full-time blogger and bakery owner!! I’m not sure if I’ll ever get back into full-time nutrition work. I like my jobs to be a patchwork and am really lucky to be able to do that.

    I wish I had time in my day to have a nice relaxing lunch, but I have back to back classes from 11-5 and then I eat lunch @ 5 and dinner @ 9pm!!

    That lunch looks amazing, I love places that focus on making awesome salads. It’s like healthy “fast food”. That presentation sounds amazing, it’s good to see parents taking action and getting their kids active and healthy!

    Why is your internship only 6 months? Mine was 9 months. Just curious. By the way, I LOVED WIC – it was my favorite rotation. Very rewarding.

      It is just a ridiculously short internship. Also seems pretty lightweight to me. I had 12 weeks of food service in hospitals, rehab facilities and nursing homes. She had 4 weeks in a school cafeteria??

    So, i’m wondering as an RD (or RD to be) do you think it’s possible for kids to eat healthy, and be at an “unhealthy weight?” And if they are eating healthy and getting in lots of physical activity (as all kids should–but probably don’t do to our technology drive society– naturally through play, recreation and sports) but continue to be at an “unhealthy weight” that it’s ok? I always wonder about things like this and the childhood obesity push. Do BMI standards apply to growing children? Should they?

        I think that parents, teachers, doctors have to be very careful when applying BMI to children. BMI was designed and standardized according to adult norms. I think a better measure of a child’s weight is their historic trends on their growth charts. I believe that adults should focus on providing healthy foods and encouraging moderate activity. I don’t think we should put so much emphasize on a specific weight/size/shape. Eating disorders and body dissatisfaction are so prevalent among children and teens now. I am so happy to hear that some schools are addressing these issues and are educating parents about setting a healthy and positive example.

          I totally agree with Rachel!!!

          I think the key is to emphasize health and not weight. And look more at percentiles and growth charts since BMI isn’t really made for kids. And sometimes kids are just chubby before a growth spurt. And I think a dietary recall is probably a better indicator if the child is eating well or not.

    That grilled shrimp looks killer! 🙂 That is on the list for this Friday as we will no longer be eating meat on Friday’s with lent season. But we are hoping to continue this tradition one day a week (no meat that is) just to feel more in control of the kinds of meat we are eating and not contributing to an industry we don’t agree with. Yum!!

    I was just in Charlotte this weekend and made SURE to eat at Crisp! I miss it sooo much since we moved away from the Queen City, but it makes for a fun treat when I’m back in town 🙂

    That salad looks delicious. Your presentation sounds really interesting- I think parents’ examples and how they treat/talk about their own bodies needs to be discussed more. Good topic!
    On your previous post- I can’t run in the dark ever, unless it’s just before the sunrise. I got caught on a run once where the sun went down and I hated it!

    That salad looks really good! I’ve never added shrimp to salad, though I’ve seen it done many times. Maybe I’ll have to do it one of these days!

    Starbucks is my favourite …. I usually get a Skinny Vanilla Latte or a tea. I can never get enough!
