Cram Packed

I’m trying to cram too much into my days and am starting to feel anxious about all there is to do!! Yikes!!! That coffee this morning didn’t help – it made me SICK! I felt like I had a bad hangover . My stomach was fine, but I was shaking all over and felt dehydrated. Basically just like a hangover! I think I need to stick to smaller mugs from now on. It was NOT a good feeling.

But it did help me out in my workout – I felt like I had to just move as fast as I could to get the shakes out and so I felt like a worked out harder today. I have read research that says caffeine before a workout can improve performance, so I wonder if what I experienced is what they were talking about? I biked to the gym, did the ET , some pull-ups (I easily did 12 in a row with 70 lbs resistance when I normally do 10!), then biked home before the rain hit.

Once home and showered, I whipped up a mystery pasta salad. You might be able to guess some of the ingredients. I loved this pasta shape!

I also had a great bowl of Chobani with ryeberries and a peach.

I made the ryeberries this morning in the dirty oatmeal pot (so I would have to clean it one less time) and I store them like this in a tupperware for the week:

Lunch was really satisfying today. Not sure why! I think it was the salty-sweet combo of the pasta salad with the yogurt and fruit. It hit all my tongue’s senses –

Brothers-All-Natural Contest Winners!!!!!!

Hi Guys!

The sandwiches looked really good – I can definitely see us making a few of these.  Too bad there weren’t more entries!  What’s up with that people?! The winners:

Chelsea’s Big Sandwich

It’s a tradition in Chelsea’s family to make and share one of these, and oh man I want all of it.  Besides what you can see here, there’s Italian dressing, pickles, avocado, tomatoes, and pepperocinis.  It reminds me of a gag from The Simpsons when Homer acquires a huge sandwich from a company picnic:

 Carl:


 We hardly made a dent in that ten-foot hoagie!
Homer:


 I'll give it a good home. (pats sandwich)

Marge:


 You've been eating that sandwich for over a week. I think
       the mayonnaise is starting to turn.

 Two more feet, and I can fit it in the fridge.

This is a great, classic meatless sandwich: grilled portabello, grilled tomatoes, cilantro, and cream cheese on whole wheat.  Grilled ingredients make every sandwich amazing.

Maggie’s Italian Farmer

In case you can’t tell, I love any italian-style sandwich.  Maggie’s ingredients all come from the local farmer’s market (except for some tofurkey).  Herby ciabatta, heirloom maters, jarlsberg cheese and cilantro chutney.  That bread looks so crunchy, I want it.

Once again, sticking some warm ingredients in between bread makes a good sandwich great.  Hummus, toasted pumpkin seeds, and you can see the rest.  This looks really comforting.

Debbie’s Nuttiest Sandwich Ever

This is really creative stuff here.  Deb takes part of a banana and mashes it up with almond butter to make a paste.  Then she combines egg whites, minced dried cranberries, and a dash of sweetener and cooks them into a round omelet.  As the omelet gets close to finishing, she plops the banana paste in the middle, sprinkles some chopped almonds over it,  folds into a square shape, and then finishes cooking.  Stick between two pieces of bread (and grill if desired) and eat!  I will definitely be making something like this soon.  Delicious!

A sandwich of prosciutto and fresh mozzarella on multigrain baguette, melted under the broiler and topped with fresh peach slices and blueberries, which I warmed on the stovetop with fresh basil.

    Kath- I tried to find the archive for your San Fran trip, but cannot remember when you went. I am traveling there next month for a conference and need some restaurant recomendations. I am staying at the Marriott Fisherman’s Wharf and would like to be able to walk to dinner. Any recomendations? Or can you tell me the dates that you were there so that I can look over the posts again?

    Just so everyone knows, I ate that whole thing!!!

    It’s not the most photogenic food, but it tastes awesome!!!

    The only problem with this sandwich right now is that sometimes I have dreams of Chelsea giving birth to it!! Just like on The Cosby Show.

    Hi Kath!

    I have a “food” dilemma……..

    I am a college student and my schedule on Tuesdays and Thursdays consists of seven straight hours of class.

    Besides making sure I eat a filling and good sized breakfast, do you have any other tips? Like what kind of snacks (that are easy, and portable) I should bring?

    I wanted to share my favorite sandwich. I can’t get pics from my camera to my computer so I couldn’t enter it in the contest, but it is the tastiest!
    I get some good nutty whole grain bread and spread it with basil pesto and then pile it with turkey, roasted red peppers, brie and red onion(which you could omit Kath). I then brush the bread with a little olive oil and put it in the foreman grill till the brie is all melty and gooey! Delicious!!!!
    I hope some of you try this! I definately have a couple of new sandwich ideas!

    I also really like grilled sandwiches with good sharp cheddar cheese and sliced apple. Another favorite. I actually really should have entered the contest- I am kind of a sandwich queen lol. I love them, especially grilled…

    alex I had the same schedule last year and I always packed my lunch (a pb and J, a turkey or hummus wrap, yogurt, fruit, string cheese and crackers, almonds and granola bars) to get me through the long day!! I didn’t have a micro or a refridgerator do I had to pack foods that would make it!

    kath, I know how you feel about being overwhelmed. I started law school last week and I am already so so busy and overworked! haha! its a never ending cycle!! sorry about the contest participant’s..I’m just not creative with sandwiches and didn’t think people wanted to see pb and banana or turkey and hummus! haha! but the winners and everyone looked great! Does anyone else NOT like the pb larabars? I think I may be alone in this one but I dont like them! I tried but my heart belongs to choc chip z bars…my love! haha

    Wow! Thanks for the info. That cover is much better than my Women’s World cover that said “Lose 30 pounds in 2 months!” I can’t wait to see it- hopefully my copy will come tomorrow.

    All the good portable ones: baggies of your normal snacks, LaraBars, Nectar Bars, fruit, trail mix, kashi crackers, veggies and hummus in a container. Hopefully you can see some of the stuff I pack in my lunches to get some ideas.
