Cocoa Redemption

Yogurt and cereal gets a today. I was grumbling by 11AM! Perhaps it was because I missed my usual dose of peanut butter. It will be back tomorrow!

It’s a good thing I got hungry sooner because I needed to eat an earlier lunch today anyways.

Mole Bean Burgers, you have TOTALLY redeemed yourselves!!!!!!!!!!

Leftover mole bean burger (from last night) heated in the oven and topped with avocado and coconut, served on a homemade Flax Oat Bran bun.

I’m still pretending I’m chewing. It was so mushy on the inside – and slightly chocolaty but still savory. Need to make this again!!

    I couldn’t eat mole when I was in Mexico since it had some rando nut ingredient so I think I need to make these to experience it for real!

    A nut butter addition to my yogurt is the ONLY way they keep me full. All the more reason to add more mix-ins 🙂

    Just wanted to tell you that I just opened up my Shenandoah Joe this morning, direct from Cville. Yum! What a wonderful way to start the day. (Made me wish that I was able to come visit Charlottesville again this spring, but alas, that does not look likely. 🙁 ) Do drop me a line if you come to DC anytime in the next month, before we head back West.

    I’d like to see a post where you detail “how-to” for building a good salad. Your favorite kinds (and exact measurements, to make it just ‘right’). You always have 2 or 3 different ones that look very good.

    In honor of your cold cereal today I too, had a bowl of cereal (shredded wheat) with almond milk and banana for breakfast. About 10 seconds after I ate that I had a big spoonful of peanut butter. Thank goodness!! It held me til 1pm. You are so right Kath, nut butter is necessary! 😀

    So excited for you and Matt. D and I cannot wait to pop in to your store on a trip out to the beach. I can’t wait to just meet you in person! How fun will that be? Abbi will be excited too. I think she is now officially 2 inches taller than you, can you believe it? She is growing like a weed! I think she is almost 5 foot 4. holy moly long legs. 🙂

    I ALWAYS get hungry so fast if I don’t have a scoop or two (or three or four 😉 ) of PB or some kind of nut butter with breakfast! It’s magical, eh? 😉

    I COMPLETELY agree! If I miss my peanut butter in the morning I absolutely notice a difference in my hunger level come 10:30/11:00AM. Peanut Butter is a life saver.

    I just made your mole burgers (with the addition of other mole spices like cinnamon, chili powder, oregano and cumin) and wheatberries as well as oats….they were AMAZING!! Thanks so much for the awesome idea!
