Christmas Morning

When I opened my eyes this morning I got that same feeling one gets on Christmas morning: a surge of excitement about Gossip Girl and pumpkin cottage cheese oats!!

This is probably my very favorite oatmeal recipe:

  • 1/4 cup Scottish oats
  • 1/2 cup water
  • 1/4 cup milk
  • 1 scant tbsp each of chia seeds and raisins
  • 1/3 cup pumpkin, stirred in at end
  • 1/4 cup cottage cheese, stirred in at end
  • Cinnamon + vanilla, stirred in at end
  • Toppings: Crunchy Coconut granola, coconut, a few butterscotch chips, Maranatha AB (my fav!)

I think the Fresh Market makes the absolute best coffee around. And their seasonals are just as good!

Peppermint Creme and Christmas Blend – both are available online. Both are amazing. The peppermint is minty and rich and the Christmas is full of warm cookie spices.

And I found this Gingerbread at Trader Joe’s yesterday. It’s really nice!! Very gingery. The coffee isn’t quite a rich as Fresh Market’s but I still liked it a lot. It actually reminded me a bit of the coffee I had in Kenya!

Excited for a run today. Some studying for finals, which I have on Wed. and Friday.

    I’m still working on my Spring Blend from this past summer!! I get chills every time I open the pouch and take a sniff. I’m on the lookout for a pumpkin flavored coffee!

    I haven’t watched Gossip Girl yet either this morning but that’s definitely on the agenda for later this week. I heard it was good!

    Your breakfast looks so cozy, I’m jealous. And my sister has that gingerbread coffee! We had it on Thanksgiving!!

    I LOVE Fresh Market coffee.. delicious!

    I have a random question. I’ve been really really wanting to get a Garmin and I was just wondering about your opinion on this since I know you have one. Is it worth the price or is there a similar product that is less expensive?

      Jessica,

      If you’re a runner, definitely get a Garmin. If you’re more into cross training, get the Polar F4 or F6. The Garmin only measures distance and pace, so it doesn’t work at all indoors, the Polar only measures heart rate and calories burned, so it can be used indoors or out, but can’t tell you pace or distance (although you can estimate both based on calories burned). The Polar is cheaper and more versatile but if you’re into running and races, I’d rec. the Garmin. I dont’ think there is anything that uses GPS that is less expensive 🙁

        Thank you for the advice! I am definitely a runner so the Garmin is sounding like the best option. It is an investment but I know I will get a lot of use out of it.

    Yum! We don’t have a Fresh Market here in Chicago, but I was able to find some great coffee picks at Whole Foods recently. They carry a brand called Allegro that is delish!

    We have those same reindeer mugs! We have the plates and bowls too. I love them…and have been know to use them year round 😉

    That breakfast sounds delicious! I’m not a fan of cottage cheese, though I’ve never tried it in oats. Maybe I’ll try this with ricotta, or get brave and try the cottage cheese. Thanks for the idea!

    incidently –
    if you get tix,
    you have a place in vancouver to stay!)
    and i have a recommendation:
    have you tried the sunland dark chocolate PB?
    absolutely FABS,
    smells like PB cups but tastes even better. 😛

    The Winter Blend from TJ’s is quite good, too. With a dash of cream, it tastes just as good as any fancy stuff. It’s all the spices they put in it! Yum!

    Yum, love pumpkin oats. Today I made melted banana trick oats and added hersheys dark cocoa and some peppermint extract….. and proceeded to lick the bowl to not miss a drop.

    I love TJ’s Gingerbread coffee, the spices are great. I think I’m going to try their Wintry blend next, which has peppercorns (?) in it haha. Those Fresh Market ones sound awesome, might have to look into ordering them online….

    have you ever tried any of those coffees black? I’m a huge latte and cappuccino fan, but for some reason always drink my coffee without cream and sugar!

      Yes, they are good black. I only add a splash of skim milk to my coffees – no sugar.

    Also–I’ve been meaning to ask this: A lot of your oats recipes call for coconut–which happens to be my version of your onion aversion haha. Any suggestions for subs?

    Yes! I love the gingerbread coffee from Trader Joes…there are chunks of deliciousness in the jar…I freshly grind it and my house smells awesome.
    And I’m obsessed with reindeers…so I love your mugs!

    Apart from a Starbucks peppermint mocha latte, I have never tried a peppermint flavoured coffee. I would love it if this brand were available in Canada 🙂

    After seeing them on your blog a while ago and trying them, I must say pumpkin/cottage cheese oats are one of my favs, too! I just do a simple topping of maple syrup and a little pb, though — still very yummy.

    My other favorite cottage cheese combo sometime — banana oats with cottage cheese and chopped apple added on top, it’s a great salty/sweet combination!

    That oatmeal looks so good that I think I actually got a little tear in my eye… I’m making a vow today – when I’m no longer restricting calories to my “losing weight” level, the first thing I’m making is a bowl of that oatmeal. Not chocolate…not pizza… Oatmeal.
