Change Of Plans

I didn’t get to meet with Mary this morning (her poor toe needs a boot) but I did get a lot done, including an annoying oil change, a project deliverable and a Gather article on sardines!

Which prompted my lunch craving:

IMG_9881 (1024x768)

Sardine + Avocado Salad

IMG_9880 (1024x768)

The Mix:

  • 1 can dill + mustard sardines
  • 1 extra squirt mustard
  • 1/2 a giant carrot
  • 1/4 a giant bell pepper
  • 1 chopped huge pickle
  • 1 tbsp capers
  • 2 tbsp chopped cilantro
  • 1 tbsp chopped jar jalapenos
  • 1/3 of an avocado, mashed and mixed

IMG_9879 (1024x768)

The avocado definitely made the salad 🙂

I ate it with some Old London Whole Wheat Melba Toasts (a sample sent a while back)

IMG_9882 (1024x768)

And a delicious peach

IMG_9884 (1024x768)

Supppper filling!

IMG_9878 (1024x768)

But I still found myself reaching for a little dark chocolate to finish off the meal. I got this Bliss bar at BlogHer and my is the chocolate rich and delicious.

IMG_9885 (1024x768)

I found a postcard from my mom, who is in Vermont, to the Bears in the mailbox!

HA that vending machine is awesome. When I was in Spain, they had beer in vending machines. That cracked me up, for some reason!

I’m going to be a sad panda when avocados go out of season…they are so delicious and healthy!

My oatmeal vending machine would be the same as yours. It is my go to breakfast. Lately I’ve been eating it with bluberries, greek yogurt and a bit o’ honey. I love my purple mess.

I’m almost tempted to try your lunch except for the sardines. Something about that little fish…I just can’t.

Thanks for posting that NPR article (and your Breathe article). I keep reading about raw food diets and their health benefits, but I’ve never seen any science to support their claims. There are some veggies that I only like cooked, and its good to know that I’m still getting nutrition.

Nice machine, by the way. You should name it, Jetson’s style.

I’m a follower of KERF, just not a commenter. I feel as though you are a friend – I know you so well. I just have to give you a recommendation to help you with curdling soy milk in coffee. A simple tool called an “Aerolatte steam-free milk frother” from Bed Bath and Beyond works wonders. It costs $19.99 but of course you can use a coupon. I pour soy milk in the bottom of my mug, microwave it for 15 seconds (or not), then froth it. Add coffee and you have a delicious, non-curdled hot coffee with soy milk.

    Hannah,
I don’t even know!? Wherever Vermont College is!

    Becci ,
    Tuna! Salmon! Beans!

    Kristi ,
I just answered this in the post with the bears on the stairs if you can look on that one please.

    Michelle ,
I always mix them with carrots and peppers and mustard. A little curry powder would be good too! Red curry even better.

    Allison K,
That would have been another trip and I am lazy  But would have been smarter, I agree.

    Stephanie ,
Nope but I haven’t posted it yet!

    Tracy,
Interesting tip, but I will probably just use real milk in my coffee come wintertime again. I only have this problem when we’re out of cow’s milk.

    Courtney ,
    Check the FAQ page!
