Businesswoman

Work was a blast today! I felt like a businesswoman with my own cute office:

Mary’s computer rocks!!!

Erin led a consultation this morning with a mother whose baby is allergic to dairy, eggs and peanuts. I really enjoyed it! Then she left and I worked on the computer for a few hours. I am working on a huge PDF document for my online consultations called “Nutrition Bootcamp.” It will be included in all of the packages. It looks really cool so far! I am only two weeks into this internship but I am sure this [owning my own business] is what I want to do. Oh, and blog

I dug into my lunch around 1:30 –

Leftover chicken pesto salad from Karen’s and leftover green beans. This was delish and took a while to eat.

It was also pretty calorically dense with nuts, olives, cheese and olive oil so I didn’t pack much else. Just this farmer’s market peach that was half too mushy for consumption –

It was a very satisfying lunch. Leftovers usually are.

I’m back home now (4:45) and getting hungry for a snack. It’s the old dinnertime spoilage problem again. I need to find something small!

    I’m jealous of your peach – I have not yet gotten to our farmer’s market for the season, even though the farmer’s market is one of my favorite things about the season! Thanks for reminding me to get my act together!

    Hate it when I’m hungry but dinner is around the corner! Usually a small handful of nuts will do the trick.

    I was just saying on my blog earlier that the time between lunch and dinner is the hardest for me! I get sooo hungry and then usually end up eating a bigger snack than I need and then I’m not as hungry as I should be for dinner. But, if I don’t eat more, then I’m ravenous by the time I eat. Such a fine line!

    Your internship sounds so amazing Kath. You definitey found the perfect job for you. I’d really love it if you could share that “Nutrition Bootcamp” page with us when you’re finished. I’m so interested in this aspect of nutrition for my own future career! 🙂

    Loving what you do makes it less like work! That’s awesome!

    As a mom of a child who had a life threatening milk protein allergy, I can tell you what a strong need there is for nutrition education in the area of food allergies. I dealt with many doctors, nurses, hospital staff and dieticians who had no idea what my daughter could/could not eat. During one hospital stay, she was sent her tray of breakfast that contained a bagel (many contained milk protein) with CREAM CHEESE! That’s just one example; unfortunately there were many more like that. I spent a billion hours researching on my own to get a full understanding of what should be avoided in the foods she was to eat. Thankfully, it all worked out and she was able to outgrow it by 5 years old. Sorry about the novel here, but I just wanted to stress that if you have any interest in that area, it would be a great help to many out there!

    Kath: Which style of Built NY bag is that? I would like to get one and have looked at the various styles online and cannot decide which one is the right size for me.
