Big Salads Make Me Happy

I’ll try to recap 😉

  • Romaine, mixed greens + spinach base
  • Just a few pieces of raw carrot, broccoli, bell pepper, celery, cuc, tomato, corn
  • 2 strawberries, 2 pineapples
  • Falafel ball
  • Grapeleaf
  • A few giant beans, a few chickpeas, a few edamame
  • A few marinated mushrooms
  • 4 pieces raw tofu
  • 4 squares italian tofu
  • 1 potato salad potato
  • 1 buttery baked baby carrot
  • 1 piece sausagy meat
  • 2 tbsp soy nuts
  • The. Best. Salmon. (about 1/4-1/3 cup)

That’s all I remember eating! And even after all that, I’m not really that full. Strange. More water is on the agenda because there’s no doubt that was enough lunch.

2 classes down today, 2 to go. I’ll be in them from 3:30-7:45 and have these two snacks to eat. I’m going to try to have them closer to 6pm than 4pm to tide me over until I get home at 8:30. Can’t wait to try the Banana Bread!

    I love the Banana Bread Larabar! Yum! I buy them all the time…and there was one time it was written “Banana COOKIE” on the wrapper instead of banana bread! Same yellow wrapper, same exact bar inside. Obviously just a misprint on the label…but how random is that?!?!? Huh.

    I’m always so jealous of your big salads! I wish we had an EarthFare in NY — when I tried to get a salad like that at WF, it cost $18!!

    That looks like an Amazing salad! Love the Banana Bread Larabar..but it isn’t my fav. I STILL haven’t tried Peanutbutter Cookie or Coconut….

    I don’t know that your salad is sooo appealing because it’s “big,” but because it’s so varied. I get really tired of eating the same type of foods and what I enjoy about a salad like this is ALL the little different bites…

    hi kath!
    if you were still counting calories, how would you calculate the big bowl of salad? I love salads too and am trying out calorieking.com to lose 20 lbs but when it comes to eating salads or any ready-made food at whole foods, i’m lost. How did you do it back then when you were counting?

    Kristin,
    I’d would estimate things in blocks. Like count 50-100 each for the “bigger” items like salmon, grapeleaf + falafel and maybe lump all the raw veggies together as another 50. The the lighter items like fruit, marinated mushrooms, etc. As you build the salad you get a sense of the portions. I could have easily added another 10 items like blue cheese, cottage cheese, more grilled veggies, more salads, etc., but I have a sense of when to stop. I’d put about a round 500 kcal on that salad looking at the list of ingredients.

    I had a serious craving for greens when I saw this post, luckily that was what I brought for lunch:)

    Hey Kath, I have a question. Have you always loved raw veggies or have you developed that over time? I love pretty much any vegetable cooked but raw is a different story. I was just wondering if it is something I can learn to love… Thanks!

    Wow your hair is getting long! I haven’t noticed how much it has grown since you got it cut in the summer 🙂 Must be all that healthy food. My hair grows like a bad weed, lol.

    Hey Kath and anyone in the NC area.. I have a friend who is living in Ashville and getting married this summer. What’s a city that would be good for a bachelorette party? Something not too wild and crazy and something pretty cheap. We all just graduated so we want the best bang for our buck!

    NO – I used to GAG over raw veggies!! I can’t tell you how I learned to like them, but I guess it was a very gradual process. But just keep trying and make yourself eat a little more each day. You’ll eventually acquire a taste.

    I’m a huge fan of a big salad. It’s probably a good thing I have to make my own, or I would spend way to much eating out. My latest favorite on salads is black beans, and boiled eggs. Yummy!
