Backpacking To EarthFare

Lunch at EarthFare brightens my day

I didn’t feel very well this morning – kind of on the verge of nauseousness. Either there was too much fiber in my cereal or I am feeling anxious from one of the announcements I mentioned this morning. I’m a little overwhelmed at the moment with the traveling one. It’s all good though. I can’t wait to tell you guys what it is and will as soon as I’m allowed!

After my two classes I walked 10 minutes over to EarthFare – with a 10 pound textbook, a computer, a binder, water bottle, strawberries + personal items all on my back!

I had a sushi roll sample for an appetizer!

It’s chilly outside, and this creamy Carrot Ginger Soup looked good, so I decided on a cup to go with my salad. (I always debate getting foods from the deli case or just a big bowl of soup and a roll but every week the salad bar is just too tempting!)

My salad was delicious as well. And I think this lunch took me like 45 minutes to work through! (Although I was playing online at the same time).

My salad was on a big bed of mixed greens and I added the usual topping variety as well – just a bit smaller portion of each due to the side of soup.

  • Mixed greens + spinach
  • Carrots
  • Tomatoes
  • Broccoli
  • Corn
  • Bell pepper pieces
  • Chickpeas
  • Kidney Beans
  • Falafel ball
  • ~2 tbsp salmon (it was in cubes today)
  • Snap pea salad
  • Pasta Salad (a few noodles)
  • 2 tbsp hummus (which was really good!)
  • 2 tbsp curried chicken salad (one of my favorites)
  • 3 pineapples
  • 3 croutons
  • Some granola pieces, which I ate around and saved for dessert. They were like a Nature Valley bar.

I can’t help but think of all the nutrients I just consumed as I study my notes for Clinical tonight on functional foods and antioxidants! So many superfoods! Beta-carotene, lutein, omega-3’s, isothiocyanates, phenols, phytic acid, sterols, prebiotics!

My mind/body felt better after this lunch. Now I could use a cup of tea for some flavonoids…with perhaps a splash of soy milk for isoflavones…

Guest Lunch Post: Chelsea!

Chelsea has been a friend of mine through CalorieKing for….gosh…2.5 years now!? We’ve met twice in person too (on my visits to San Francisco) and she had cute baby Lucy 5 months ago! Here’s her latest “Kath-like” lunch (as she calls it 🙂 ) all set up on a pretty white plate:

Today’s lunch:

  • Turkey, CranApple Butter and pickle sandwich on whole wheat bread
  • Sliced Oranges
  • Sliced Red Peppers
  • Sabre Roasted Garlic Hummus
  • Pretzel Thins
  • Peach Nectarine
  • Talking Rain-no calorie sparkling water.

I’ve got 1 hour more to study before Foodservice, then the Clinical exam at 5pm, then more Clinical lecture! It’s going to be a late night, but I’ve got strawberries + a LaraBar to get me through to 8:30, when I’ll be excitedly consuming leftover Nutty Vanilla Sweet Potato + Kale Soup!

    I TOTALLY know the inconvenience it is to have a million pounds (or what seems like it) on your back. It’s so not good for us! But for EarthFare, it seemed worth it!

    Now that I’ve officially entered the blogging world, I think I HAVE to get a KERF shirt. They look so cute and comfy! KERF pride…(-:

    I got a salad and soup from Earth Fare the other day and the grand total was…… $14.76!!!! wowzers. I wasn’t expecting a soup/salad lunch to cost that much. It sure was yum though.

    Hi Kath,

    An Aussie fan here hoping that’s where you’re headed! I read your blog every work day for meal inspiration. I am a triathlete so it helps to read healthy meal suggestions from someone who is also fit!!

    Brilliant blog, i wish there were more Australian equivalents as i’m always dreaming about the brilliant groceries you get!!

    Aus is definitely a very far away land so if you do happen to come to WA let me know, weird that you have no idea who i am, but i guess that’s the blogging world for you.
