A Pre-Columbian Breakfast

Nick + Jen are very much into interesting ingredients, so I made them a Mesoamerican oatmeal feast for breakfast featuring Aztec chia seeds and Mayan Cacao nips + coconut butter 🙂

Everyone got to add their own toppings – mine included cacao nibs, coconut, cacao bliss and Barney Butter. Mmmmm!!!

Jen said it was the best oatmeal she’d ever had, and Newman says he might just get up 10 minutes earlier to make some before work 😉

I just sent them on their way to Asheville and am headed to the gym myself. Then STUDY time!! Same gameplan as Wednesday – meeting at EarthFare, exam at 3PM. I try not to go to EF more than once a week because it is expensive, but we decided to make this week an exception because of exams. Maybe I’ll get soup today!

    These oats look sooooo goo! I could never get sick of eating oats- there’s just so many ways to change ’em up if you get creative; plus they’re a very healthy breakfast pick.

    I try not to hit up the Whole Foods salad bar too often since I have a meal plan to use up but when finals hit….all bets are off! You’ll rock the exam, I know it!!! Do well (I feel weird saying good luck…..luck??)!

    I’d like to hang out with Nick and Jen. Tell Nick to throw all the oatmeal ingredients into a bowl the night before so it’s ready too cook in the morning….also, I know u’d probably die, but the microwave works just as well 😉

    And do you find EF to be more expensive than Fresh Market? I have both in my area and I’ve always found Fresh Market to be a little pricier.

      I actually think FM is a little more expensive. More gourmet, less everyday ingredients.

    Seeing your peppermint coffee everyday is really making me crave some. I’m still working on my pumpkin coffee, but I think I might have to go out and purchase the peppermint!

    WordPress.com is the best free one. You wont’ be able to change that much without hosting the blog yourself, which is more complicated but worth it in the long run.
