Remember the Orange Army of Pumpkin?

The Mix

  • 1/3 cup oats, milk, water
  • Half banana
  • Salt, vanilla, cinnamon, ground cloves, nutmeg
  • 2 chopped dates
  • 1/4 cup pumpkin, stirred in at end
  • Rosie’s Best granola
  • Justin’s Chocolate Hazelnut butter (still working on a jar he sent me ages ago!!)
  • Pumpkin Spice Almond Butter

The pressure’s off now that I finished my article yesterday. I just have to shoot some photos for it today and then move on to project #2: develop a mac n cheese recipe!

    i was shocked when i had to buy more pumpkin a month or so ago after stocking up! i can’t seem to get sick of it in breakfast or baking.

    I made basically the same thing this morning! Instead of dates, used prunes and instead of almond butter, used PB & J Co Smooth Operator….yums!

    Yesterday, my boyfriend had to talk me down from buying a case of Libby’s on clearance. It would definitely not fit in the suitcase and he didn’t want to pay to ship it!

    Got a great Mac n cheese receipe that uses pureed butternut squash and about 1/3 of the cheese. My daughter now asks for this version instead of the the full loaded version.

    Every time I hit the Harris Teeter, I end up buying a couple of cans of Libby’s. I think I have about 13 right now! I’m paranoid that the next time I look, it will be all gone for the season.
    I don’t eat it all myself though… I also bake pumpkin dog treats for my little Lilly!

    I love pumpkin and have a few cans in my cabinet still to use – I think I will use one this week!

    I love being productive and need to be somewhat today. I am not looking forward to going back to work tomorrow.

    looking forward to the recipe! i have a few cans left and i’ll be so sad once they are gone. there are two huge cinderella pumpkins in my garage that i still have to cook up and freeze, i’ll have to resort to that once the pumpkin is gone!

    I was in pumpkin heaven (cause I have never met a pumpkin or sweet potato that I did not like) and then you close with a hint of more goodness in a Mac & Cheese recipe. Please share when you have that one worked out. Love your blog! LOVE the oatmeal!

    the restaurant i work at just added a mac and cheese to their menu. baked penne and four cheese with broccoli, sun-dried tomatoes, portabella mushrooms, and thyme. UGH i die.

    I hoarded pumpkin this year too. After last year’s shortage, I was afraid not to do so. There’s nothing worse than unsatisfied pumpkin cravings during the merry month of May.

    Hey Kath, maybe you can help me with my “pumpkin dilemma” 🙂

    I also stocked up on pumpkin this year, but because my roommates don’t like pumpkin, whenever I use it, it’s normally for one-serving recipes — 1/4 c. here and there. But when I store the rest of the pumpkin (in the can covered with plastic wrap), it goes moldy with a week! How do you store your excess pumpkin? Do you freeze it, or just use it really often?

      I eat a can within a week 🙂 I usually alternate weeks – one will be pumpkin heavy (in oats and smoothies and dinners) and the next week pumpkin free. That helps me use it quickly without getting sick of it.

    When pumpkin first came back on the shelves, I ate a huge can every two days! The comsumption’s calmed down a bit..but it’s still used quite often. 😛

    I’m still buying several cans of pumpkin every time I go to the grocery store! I currently have 10 cans in my pantry! I’m making sure I can live through the summer in the event of another pumpkin drought. 😉

    Kath, I too am trying to live more in the moment and be more flexible & laid back. I’ve been trying the last few months so yours was a good reminder. I feel like my day revolves around work & working out (since I mostly do group fitness classes which are at specific times). If I’m invited to something spur of the moment, I need to just accept and do it…and not worry about missing a work out. Friends and family are more important 🙂

    I’ve been keeping a running stash all season! Every time I go to the grocery store, I pick up a large can whether I need it or not. But when I went the other day, they were all out…gasp! They better NOT be having another shortage! Pumpkin season is not over for me!
