I love, love it grilled in the summer time, but it’s also one of the most versatile summer veggies – bake it, stuff it, roll it. Super good for you too!

    We plant 1 zucchini plant in our veggie garden most summers (you only need ONE plant!). By the end of summer I need new recipes for using up all the zucchini in a new way. Thanks for some new link ideas!

    Hi Kath! What I love about zucchini is that you can sneak it into so many things for additional veggies. I made a few batches of Zoats once, adding zucchini and they were yummy. Great recipes! 🙂

    Two of my favorite ways to eat zucchini are cheezy zucchini chips (I have a fantastic recipe for them by using the dehydrator – it makes for the perfect summertime snack!), and chocolate zucchini loaf. Because… chocolate. 😀

    Those recipes look fab. Back when zucchini wasn’t as popular, like when I was a kid, my family teased that my grandfather, Lou Kiehne (pronounced “key-knee,” was named for “zucchini”. Isn’t really that funny but we thought at the time that it was at least sort of clever.
