12 Months of Real Food: Beets

If you haven’t noticed, I like to choose a food that is in season for the 12 Months of Real Food. That means the November edition had to be the one and only beets!

Beets have been growing in popularity–and for good reason! Beets have the phytonutrient betalain which has been proven to have anti-inflammatory, antioxidant, and detoxification powers. Studies have also proven that the pigment in beets, betanin, can reduce tumor growth! Check out some more impressive stats below!

BEETS NUTRITION

As you can see, it is recommended to include one to two servings of chenopods per week due to their health benefits. Lucky for you, I’ve rounded up the best beet recipes around! You’ll have more than enough inspiration to surpass the recommendation!

    I’ve never cooked with beets before, but have heard a lot of positive comments about them in the past, so I’m thinking I may try them soon!

    Just curious, what’s a chenopod? What other food can they be found in? I like beets but don’t cook with them that often, but I’m curious what other foods they are found in and maybe I’m already getting the recommended amount in my diet already!

      Spinach is another famous one in the Chenopodiaceae family : )

    Hi Kath – Would you consider condensing the “12 months of…” posts a bit in the future? I find them a little overwhelming with all of the images and fonts, and usually just scroll right through to the end. Just a suggestion!

    Love the recipes and pictures! I want to make something with beets just because it’s so pretty! I’m not really a fan of the flavor of beets but I am considering taking the Beet Elite supplement for performance benefits.

    I was super into making beet chips over the summer (I’m a teacher & had time then). They were so delicious! But they did take time and I found I’d make a batch, but burn half of them. I used Minimalist Baker’s recipe. Kath, if you (or anyone else) makes them, I’d be curious if they had the burning problem too.

    Question: My mother-in-law is retiring next month and recently expressed an interest in learning to master bread making in her new found free time. I was wondering, could you or Matt would have some suggestions for bread making related gifts idea (favorites cookbooks, tools, etc)? Thanks!

      Probably the best book for a homebaker is Peter Reinhart’s Bread Baker’s Apprentice. Thorough, detailed, true methods. I also like Jeffrey Hamelman’s Bread, but this one is geared towards a production bakery.

      Other than that, a kitchen scale is essential for weighing ingredients, and it’s nice to have a bench knife and a plastic bowl scraper.

      Sounds like a great retirement gift to me!

    We have so many poor, neglected garden beets in our fridge — I just haven’t had time to deal with them. Maybe I need a personal chef to make some of these for me, starting with that beet ravioli 🙂 Recently saw a local restaurant using smoked beets as the “meat” in a vegetarian reuben, and I want to try that, too!
