Karen and I both got our hair done this week!!
YEP – she has a beautiful head of hair – see it peeking out? I think she looks great without the ole bonnet, but she isn’t quite ready to go without.
I walked from my haircut today to the bakery. I am just on cloud 9 with all this walkability! I had a slice of Cinnamon Raisin Walnut there while Matt and I worked on some things. Then I walked home!
Karen came over for dinner and we made a new Charlottesville famous burger –
The No Bull burger. I’ve been hearing about these and seeing them around places like the farmer’s market. They are locally made and come frozen. We popped some in the oven for dinner tonight and they turned out to be delicious! Onions and all – I can hardly believe it! They are lentil and barley based with spinach, carrot, onion, soy sauce, some egg and seasonings. All real food. They are popping up on restaurant menus too – so it’s exciting to know that I like ‘em even if I do continue to make my own veggie burgers most of the time.
I baked them for about 25 minutes at 400* (they were still a bit frozen – oops) but that allowed the outside to get supppper crispy – loved it.
To go with, we roasted sweet potato cubes at 400* for 30 minutes [coated in EVOO, salt and pepper]
And we sautéed a head of cabbage in apple cider vinegar, salt, pepper and a few dashes of Worcestershire sauce. Simple, but good.
Nite!!

I had those No Bull burgers when I was in Charlottesville-got them at the farmers market. I thought they were fantastic. Your haircut looks lovely and so does Karen’s! Hope she’s doing well!
I love the short/ fresh look
There is a local Wisconsin company that sells Walnut Burgers – they are amazing! So nice to find local, delicious foods served in restaurants and available at home.
That burger sounds and looks great! Yum
That dinner looks great! I’d Love to try a Burger like That!
Love the name and the looks of that veg burger.
Cute name for the burger. I like your hair!
That burger looks great! And yay for Karen growing her hair back
You two are both gorgeous!
Karen is so cute!
Those burgers sound remarkably similar to my favorite veggie burger from the Dogwood in Baltimore. So, so good.
The cabbage sauteed with ACV and Worsh sauce sounds awesome and the sweet potato cubes roasted up look perfect. I like to roast my sweet taters in coconut oil + cinnamon. They are almost candy-like then
Glad you both are sporting new hair do’s this week, too. Fun to get your hair done!
mm those veggie burgers sound deeelish. Also you just reminded me that I need a hair cut. I like yours
You and Karen both look fabulous!
Looking purdddy! have a great night!
oh wow those burgers look fantastic. just checked out the website… wondering if i can convince them to ship to chicago!!
Yay for Karen! That’s awesome. Lentils really do make the best burgers! They are my all time favorite. I use lentils, oats, salsa, garlic powder and onion powder. So easy and so good!
I could use a haircut myself. I haven’t gotten one in over a year… my split ends are horrendous!
that entire meal looks fabulous!
love sweet potatoes and cabbage – i could eat a whole head on my own! cute cut too!
How amazing do those burgers sound?! Mmmmmm!
YAY for Karen! That is SO exciting! I hope she loves her new look, even if she just sports it at home! That is amazing!!!!
All of the food sound spectacular! I am so jealous of all your walkability!!
Your dinner looks wonderful! Especially the sweet potato cubes!
i actually live in a pretty walkable neighborhood of LA, but as a former NY-er, i miss being able to walk places
I love crispy veggie burgers. YUMM. Walkability is the bomb <—can't beat that!
Those burgers look delicious — you can SEE all of the real food in there!
What an awesome dinner!! I love the sweet potato “fries”. Your hair cut is super cute too!
Did Karen work at USC Upstate?! I went to college there!
I think so!? I can’t quite remember – it was either that or a community college.
We tried those burgers at the farmer’s market when we were in Charlottesville – some of the best I’ve ever had!
This looks delicious, and those lentil burgers sound awesome!
Holy moly those burgers look delish!!!
Isn’t it GREAT be able to walk to and from work and everywhere in between!? I miss those days…. being able to walk everywhere is SO refreshing
Your dinner sounds great! That is a wonderful picture of you and Karen, love the haircut!
Karen looks great! It’s so good to see her doing so well!
The burgers look pretty delicious. I haven’t attempted home-made veggie burgers so I would love to find something like these in my neck of the woods!
So you REALLY eat healthy dont you? Do you ever overeat or grab a bag of chips and eat the entire thing? How do you eat like this everyday, i wish i could….
Well if 3 glasses of wine and 2 desserts last night counts as really healthy all the time, then I guess so?!
i think healthy eating includes dessert & wine, or at least healthy in my mind because otherwise i’d go crazy!
Those are my sister’s veggie burgers!! I was going to write to you about them so imagine my surprise when I opened up your blog tonight and you had them for dinner! So glad you liked them. My sister, Crissanne Raymond, been making them for our family and friends for the last 25 years or so and she always said she was going to do something with them someday… and now she has! I’m so proud of her!! She and her daughters opened NoBull Burgers the Gourmet Veggie Burger this past January, (the name of the company is Oh My Gosh..Yum! cause that’s what people say when they try them) and the response has been wonderful. Thank you so much for featuring them in your blog. Come see us at the Charlottesville City Market -we’ll be there this Saturday morning!
Love the story. Congrats to yur sister!
I can’t spell this late. It should be your.
Oh I’m so glad you saw this!!! Please tell your sis they were great!
Hi Kath – Needless to say, your post about our NoBull burgers has caused quite a stir in our family. My sister wants to personally thank you with a free package of burgers. Please stop by and see us at the City Market on Saturday morning. We’ll both be there. If you can’t make it then, we’ll be at the last of the season, Farmers In The Park market on Meade Ave. on Wednesday afternoon from 3 – 7. Thank you again so very much. Also, congrats about being featured in “O”!! that is so cool!
You are sweet
We are going to a wedding this weekend so we’ll be gone by Sat. AM, but I will come over to Meade Park on Wed!
haha like the burger name. OoO! Your hair looks so nice Kath! I love it.
That burger has most of the essentials you need for a full course meal

You two ladies are beautiful inside and out! I went in for a “cut” yesterday and chickened out ending up with more of a “trim”… I guess I just have more time to decide what I really want! Looks like a tasty, healthy, satisfying, fun to make and eat dinner that was enjoyed with the perfect company. “Simple, but good”, can’t beat that!
Aw yey! Karen looks great
I am always searching for a good veggie burger. I hope more places begin to serve fresh veggie burgers that are made with good ingredients.
This must be hair cut week. I recently got my hair cut.
Mmmm, I’m a sucker for all things veggie burgers. You can get as creative as you want with them and they’re so good for you!
Super cute hair cut!
Dinner looks delicious. Sure beats the kind of nasty Chinese takeout we had!
How long was Karen’s before? I’m trying to remember…
Both your hair looks great
It was like this!

Ah yes, now I remember! And that was a great post to link to b/c Karen pronouncing those words was hysterical!
I LOVE your pictures and your blog! So happy to connect with another RD with great taste in food!
Thanks for stopping by!
I would never have just sautéed a head of cabbage! Will def try that when we get another one in our CSA!
Who needs hair when you look as adorable in hats as Karen does. But yay for it coming back in. It always does!
No Bull burgers sounds fabulous! I like the simple ingredients. I’m always on the lookout for tasty veggie burgers that don’t contain soy protein isolate or other non-fermented soy products.
I’m always amazed at how quick hair grows back- I’m sure Karen looks great without the hat (although she sure can pull them off)!
Your dinner looks delicious. I’m gonna have to try roasting sweet potatoes and cooking cabbage like that. It all looked so yummy. Like the haircut too.
Wow!its so nice. I started one blog, posted one yummy south INDIAN food, please check it i promise u love it.And try to make this delicious food to your dear ones.

Looks delish! All your photographs look so professional and beautiful. Your meals look like they came straight from a magazine or a fancy, schmancy (is that a word?) restaurant. Have a great weekend!!
Thank you!
Congrats to you and Karen on your pretty new ‘dos! Those local veggie burgers look delish, and woo hoo on your open mindedness despite your onion aversion!
I’ve never been able to find a packaged veggie burger that I like – but these sound awesome! And I love that they’re made with all real ingredients too. Frozen veggie burgers are usually packed with weird additives.
You ladies look great! And, that veggie burger burger looks amazing! I haven’t had a veggie burger in a while, time for me to make another batch!
I love your haircut! It looks absolutely beautiful! I wish I could get my hair cut like that. Unfortunately, mine is way too curly and frizzy. It would look terrible.
Those burgers look delicious!
Now that is my kinda dinner!
LOVE the hair (both yours AND Karen’s!)
Ah-Ha! You have stumbled over to the dark side…once you try the No Bull Burgers your freezer will always be stocked with them! They are my favorite EZdinner! I am responding to this post while finishing off my first attempt at overnight oats in the remnants of my sunbuttah jar
Delicious!
BTW, fabulous new “-do”!
Love the hair cut! Glad to see that Karen is doing so well!
Looks awesome and delicious! And most importantly simple
We have a locally made, all-real-food veggie burger company in Columbus, too – Luna Burger. They are so good! I keep a couple on hand for fast dinners.
Your haircut looks cute!
Yippee — I’m so excited for Karen! My dad’s hair just started growing back, and it’s a totally different color than it was before his chemo.
Love your hair (and new to your blog and I’m enjoying it)! Are the “Bull Burgers” available in California too? They sound good and I’d like to try them. Thanks for the great inspiration with simple and “real” cooking!
Thanks!
They are made here in VA, so I don’t think they’d be in CA yet..
I had a No Bull Burger for the first time during 4th of July. My vegetarian friend brought them. While my friend was cooking burgers and brats, I saw the lone veggie burger left, and I asked if I could have it. I didn’t touch a single beef burger or brat. It was so delicious and fulfilling. It was the best veggie burger I ever had. In fact, Relay Foods stocks them and delivers in Charlottesville and Richmond so I purchased some for myself. A little pricey but they are big and good. I said to myself – why not. I could break them in half to stretch their use. Go pick them up tomorrow. Excited!
