Week Of Green

June 8, 2009

I woke up wanting to do another green breakfast. And when we bought those raspberries yesterday, I knew I wanted to do one of Polly’s beautiful bowls.

The blend:

Spinach oats with berries, wheatberries + MaraNatha AB

IMG_7357 (1024x768)

The mix: (in my portion – I made Matt one too)

  • 1/4 cup 9 grain cereal mix
  • 1/2 ripe banana
  • 1 heaping tbsp cooked wheatberries
  • 1/2 HUGE handful spinach
  • 1 tsp brown sugar
  • ~1/2 cup berries,  heated to remove the fridge chill
  • Spoonful almond butter

IMG_7354 (1024x768)

I went a little heavy on spinach and admit that you could taste it a bit this AM, so I added an extra tsp of brown sugar, which helped to neutralize the spinachy taste (which wasn’t that bad to begin with – just not what I was expecting).

With yerba mate green tea

Today’s agenda

Work side: some writing, blog summit planning to-dos, and a phone meeting.

Play side: Matt and I are debating going to work by the YMCA pool and doing some swimming (if the water is warm enough) and combining our workout with the visit. It’s fun that we’ll both have Mondays off this summer (esp. since he has to work Saturdays now)

11 Sara June 8, 2009 at 9:14 am

hey kath — i’m confused…how do you make the oats? are you blending the spinach and oats together in a blender? or just the spinach and somehow swirl that into the oats?

12 BethT June 8, 2009 at 9:14 am

I gotta say…I might be able to handle a spinach smoothie, but the idea of spinach and oatmeal kinda makes me want to hurl.

13 Kailey (SnackFace) June 8, 2009 at 9:21 am

16 Lori June 8, 2009 at 9:24 am

Did you blend the oats with the spinach, or just let them cook down? They look very well incorporated.

I meant to buy spinach at the grocery store yesterday to make a green monster, but I forgot!

17 Jennifer June 8, 2009 at 9:26 am

Beth- I’m with ya. But I gotta say Kath does an excellent presentation!

18 Rachel June 8, 2009 at 9:28 am

23 Sarah (Running to Slow Things Down) June 8, 2009 at 10:00 am

Yay for green oats! 😀 I always drool over Polly’s bowl of green, and I’m determined to make one for myself one of these days.

Love the addition of the berries on top too. 😀

24 K June 8, 2009 at 10:03 am

25 Megan (The Runner's Kitchen) June 8, 2009 at 10:09 am

I love raspberries! I treated myself to a pint of them last week :-)

I vote for working poolside!

26 Biz June 8, 2009 at 10:37 am

Jealous of your raspberries! They look awesome – probably one of my favorite fruits.

Have fun with Matt today!

27 Mara @ What's For Dinner? June 8, 2009 at 10:37 am

I’ve yet to try the green oats…they kinda freak me out. But then again, so did green smoothies!

28 Melissa @ For the Love of Health June 8, 2009 at 10:38 am

Amazing summery breakfast. I love colour like that.

Great workout plans! Hope the pool is warm enough!

29 Lauren June 8, 2009 at 10:42 am

Wow….that sure is green. Not sure if I’m ready for that yet! :)

30 Courtney (The Hungry Yogini) June 8, 2009 at 10:55 am

Oooh so green! And colorful! Love the breakfast.

Hope your day is great!

31 sonia June 8, 2009 at 11:09 am

Does this fill you up well? I have half a cup of oats, half a banana, 1/2 cup skim milk and 2-3 tsp of PB. That keeps me full for around 4 hours.
You serving is only 1/4 cup grains. Just wondering if the fiber from spinach and berries helped.
Also calories wise, what is a better option?

32 Caronae June 8, 2009 at 11:15 am

OMG we had almost the exact same breakfast! Mine was .5 cup oats with a whole banana and a lot of spinach, then into the blender. Then on top were blueberries, almond butter and flax seeds. And green tea on the side! Weird, we’re brekkie twins…

33 Run Sarah June 8, 2009 at 11:17 am

The green oats look great – love the contrast with the berries.

34 Lacey June 8, 2009 at 11:17 am

Green oats??!! Pretty scary but thats what I thought the first time I saw my first Green Monster so I guess never judge a book by its cover! :-)

35 HeatherBakes June 8, 2009 at 11:22 am

Pretty breakfast. I want to make a Sam’s run for some berries- they’re so cheap right now!

Hope the swim goes well!

36 Jennifer June 8, 2009 at 11:49 am

Sonia- I wonder the same with only a 1/4 of grains. I need a good 1/2 to feel sated!

37 Natalie June 8, 2009 at 12:00 pm

What a colorful breakfast!

38 Jenn Eats Nutritiously Now June 8, 2009 at 12:00 pm

That breakfast looks delicious!

39 Leah @ Simply Fabulous June 8, 2009 at 12:07 pm

Hey Kath!
Ode to Oats!!

Enjoy your Monday!! :)

40 Hallie June 8, 2009 at 12:16 pm

Yeah…don’t think I could do the spinach in my oats…green smoothies are about as crazy as I’ll get 😉

Those berries looks delicious, though! YAY for summer fruit.

41 Rachel in NC June 8, 2009 at 12:29 pm

So, I was perusing TheKnot.com this afternoon, considering submitting some of my photos to be featured as a real wedding, when whose wedding did I come across? Yours! It was so funny…I was looking for weddings in NC and saw “Katherine and Matthew,” but it didn’t connect since I’m used to seeing “Kath and Matt!” As soon as I clicked on it and saw the first picture, I started laughing because I just saw your wedding pics in your recent post! :)

42 polly June 8, 2009 at 12:42 pm

Hi Kath!! woopwoop for GREEN! 😉

Guys, I promise you don’t taste the spinach. I have a simple way to do it on my blog (with lots of pictures!) just click under the recipes page.

I do stay full for a loooong time with just oats (3/4 cup!) and a banana. Sometimes I add spinach… sometimes I leave them plain jane. But they are truly greenolicious!

I guess I am just a two ingredient girl. 😉 Oats with somethin. Although my sweet Kath is rockin’ her bowls of oats with 47 different ingredients. It’s alll goooood. :)

43 meghan@traveleatlove June 8, 2009 at 1:02 pm

I LOVE your table!
The berries look nice too :)

44 Ellen @ Peace in Motion June 8, 2009 at 1:04 pm

fresh berries in the morning are just the best.

Have a wonderful day!

45 Danielle June 8, 2009 at 1:20 pm

What a fun breakfast and good way to get some greens in early in the morning.

46 Kath June 8, 2009 at 1:35 pm

Re. Spinach,
I made the oats as usually and used my stick blender to puree the spinach in when it’s done. Check out Polly’s blog for the how-to (I linked to it in her name)

I have to say, this isn’t my favorite way to EAT oats. But the green is just so darn cool :)

I used 1/4 a cup because that was “one serving” of the 9 grain cereal (= 150 calories too). It held me over 4.5 hours, so I guess it’s the equiv. of 1/2 cup of oats for me. Remember I also added wheatberries. The bulk from the spinach + berries and the fat from the AB probably also helped.

Rachel in NC,

47 Maggie June 8, 2009 at 1:51 pm

I add a dash of salt to my green oats and it usually gets rid of any hint of spinach. I don’t know why it works, but it does :)

48 Kristen June 8, 2009 at 8:11 pm

spinach in oats!!! that’s a genius way to get in some leafy greens! hmm i’ve definitely gotta try that.
