Week Of Green

I woke up wanting to do another green breakfast. And when we bought those raspberries yesterday, I knew I wanted to do one of Polly’s beautiful bowls.

The blend:

Spinach oats with berries, wheatberries + MaraNatha AB

The mix: (in my portion – I made Matt one too)

  • 1/4 cup 9 grain cereal mix
  • 1/2 ripe banana
  • 1 heaping tbsp cooked wheatberries
  • 1/2 HUGE handful spinach
  • 1 tsp brown sugar
  • ~1/2 cup berries,  heated to remove the fridge chill
  • Spoonful almond butter

I went a little heavy on spinach and admit that you could taste it a bit this AM, so I added an extra tsp of brown sugar, which helped to neutralize the spinachy taste (which wasn’t that bad to begin with – just not what I was expecting).

Today’s agenda

Work side: some writing, blog summit planning to-dos, and a phone meeting.

Play side: Matt and I are debating going to work by the YMCA pool and doing some swimming (if the water is warm enough) and combining our workout with the visit. It’s fun that we’ll both have Mondays off this summer (esp. since he has to work Saturdays now)

    hey kath — i’m confused…how do you make the oats? are you blending the spinach and oats together in a blender? or just the spinach and somehow swirl that into the oats?

    Did you blend the oats with the spinach, or just let them cook down? They look very well incorporated.

    I meant to buy spinach at the grocery store yesterday to make a green monster, but I forgot!

    Kath,
    Does this fill you up well? I have half a cup of oats, half a banana, 1/2 cup skim milk and 2-3 tsp of PB. That keeps me full for around 4 hours.
    You serving is only 1/4 cup grains. Just wondering if the fiber from spinach and berries helped.
    Also calories wise, what is a better option?

    OMG we had almost the exact same breakfast! Mine was .5 cup oats with a whole banana and a lot of spinach, then into the blender. Then on top were blueberries, almond butter and flax seeds. And green tea on the side! Weird, we’re brekkie twins…

    Yeah…don’t think I could do the spinach in my oats…green smoothies are about as crazy as I’ll get 😉

    So, I was perusing TheKnot.com this afternoon, considering submitting some of my photos to be featured as a real wedding, when whose wedding did I come across? Yours! It was so funny…I was looking for weddings in NC and saw “Katherine and Matthew,” but it didn’t connect since I’m used to seeing “Kath and Matt!” As soon as I clicked on it and saw the first picture, I started laughing because I just saw your wedding pics in your recent post! 🙂

    Guys, I promise you don’t taste the spinach. I have a simple way to do it on my blog (with lots of pictures!) just click under the recipes page.

    I do stay full for a loooong time with just oats (3/4 cup!) and a banana. Sometimes I add spinach… sometimes I leave them plain jane. But they are truly greenolicious!

    I guess I am just a two ingredient girl. 😉 Oats with somethin. Although my sweet Kath is rockin’ her bowls of oats with 47 different ingredients. It’s alll goooood. 🙂

    Re. Spinach,
    I made the oats as usually and used my stick blender to puree the spinach in when it’s done. Check out Polly’s blog for the how-to (I linked to it in her name)

    I have to say, this isn’t my favorite way to EAT oats. But the green is just so darn cool 🙂

    I used 1/4 a cup because that was “one serving” of the 9 grain cereal (= 150 calories too). It held me over 4.5 hours, so I guess it’s the equiv. of 1/2 cup of oats for me. Remember I also added wheatberries. The bulk from the spinach + berries and the fat from the AB probably also helped.

    I add a dash of salt to my green oats and it usually gets rid of any hint of spinach. I don’t know why it works, but it does 🙂
