We’re having a wonderful time so far. Last night we enjoyed a beachy cocktail hour followed by dinner at a Thai restaurant here. We had an amazing meal – a sample plate of Thai appetizers followed by Green Curry Shrimp and Oyster Chili Pan-Seared Snapper. We ended the night with a plate of dessert bites from the buffet downstairs by the pool! So far we’ve been really impressed with the food!
Then we crashed into a deep 10 hour sleep.
Sunrise with an ocean view woke us today. The breakfast buffet included oatmeal, yogurt and made-to-order smoothies complete with a full toppings bar! KERF paradise. I sampled the muesli with an array of toppings along with a smoothie and a coconut-chocolate donut.
Matt’s only wish on this vacation was to get a massage and that was one of my Christmas presents to him. A year of bakery stress, melted away.
Lunchtime! Hoping for fish, plantains and maybe some mango!

so cool – all around!
That breakfast buffet sounds wonderful, smoothies made to order should be on every buffet! The massage was a great Christmas gift, and perfect to use at the beginning of vacation!
It looks like a beautiful resort, glad you are having a relaxing time!
Wowww I BET everything IS good like you say~! Even the donut, and I’m not even a fan. You guys needed this relaxing time, have a great rest of the day
Wonderful pictures, looks like you are having a great time! That breakfast bar sounds amazing!
Smoothies made to order – paradise.
Holy awesome! This looks like paradise for sure! Have SO much fun.
I’ve never taken a legit tropical vacation before, but this looks like heaven! Glad you’re enjoying it.
looks BEAUTIFUL! and the food sounds divine! it’s making me think back to our tropical honeymoon – i miss the tropics!
Kath, I am SO JEALLY!!!!!
I usually go to Mexico every year and this year looks like I will not be, so…… I’m going to live vicariously though you! I love how you can wake up in the cold (I live in Minnesota) and go to bed in the tropics!
The resort looks gorgeous! Is it all inclusive?! Gotta love those breakfast buffets…there is always so much variety and fun foods to choose from!
Wow, this looks incredible Kath!! I love the photo of the fish behind the bar. What a beautiful winter escape!
Promise you’ll share the name of the resort when you return! I’ve been researching, but haven’t found one yet that is suitable.
Hi Kath, I have read your blog over the past year or so but I have never commented before. I wanted to stop by and leave a little message because I went to this same resort back in april and I must say it is truly amazing. If I could make a recommendation, order a Miami Vice next time you’re at the bar. I still dream about sipping one of those colorful drinks while relaxing on the beach! Hope you have a wonderful vacation!
Oh wow, the food looks excellent. Glad you guys are having a great time–it looks like it!
Can’t wait to hear which resort this is. It looks so similar to one that we went to in Mexico earlier this year. I’m trying to convince my husband for another all inclusive vacation this February when the weather gets so bitter and cold that I can’t take it anymore.
Sounds like the best food vacation of all time! So many yummy choices right at your fingertips!
Dinner last night…so elegant! Breakfast this morning…all those toppings! Pictures…truly paradise!
Paradise indeed!
We have a beach vacation planned for February. Just seeing your pictures helps curb that urge I’ve been having to snack on the sweets still residing in my kitchen. I want to be ready for that swimsuit in February, not regretting the pounds I put on at Christmas.
Amazing. the food- wow. The beach- gorgeous. And what a thoughtful gift to Matt, I’m sure he had such a great experience. Enjoy your day!
Meanwhile, it’s snowing in my neck-of-the-woods!
I hope you guys are having a fabulous time. It definitely looks beautiful there! Bet you must have liked that they had a make-your-own oatmeal bar. Most of the resorts I stay at have muffins and stale bagels.
Glad you guys are having a relaxing time and enjoying some wonderful food!
Dessert bar?!
Yesyesyesyesyesyesyes.
That breakfast buffet is UNreal! Glad you guys are enjoying yourself – I’m loving getting to live vicariously through you two!
i am relaxed just reading this post! what a wonderful vacation so far. i LOVE breakfast buffets.. but always end up going way overboard. so much yumminess in one spot! enjoy the day.
What an excellent stay so far- breakfast buffets are always so fun!
I never went somewhere where they had a breakfast buffet, only Chinese food buffets…. Sounds delicious!
The food alone sounds like paradise
Enjoy the vacay.
Food looks Yummy!!
I love buffets! You can try a little bit of a lot of things!
Everything looks so good! I hope y’all are enjoying lots of relaxation.*
Oh my goodness… are you at Couples Swept Away? I’m getting glimpses of familiar scenery! We’ve been there the last two years, but not this coming year, alas. Try the fish tacos at Seagrapes, and meat pies and guacamole at the Cabana Grill. The spa hot tub is a magical scene. Enjoy your stay!
Smoothie bar? Sweet! Even sweeter though is that amazing view…and the chocolate donut of course
I’ve been to that resort 5 times– this year was the first December we havn’t gone and seeing your pictures makes me miss it so much!! Thanks for letting me re-live the vacation through you!
Were there a lot of things to do at the resort Amber? Or was it more of a “lay by the pool, ocean” sort of thing? Not that there’s anything wrong with that of course
I would say that its more of a lay around vacation, but I think you could make it more than that if you wanted. We usually scuba dive in the morning and then lay on the beach the rest of the day. They have an amazing fitness facility across the street with tennis courts, pool tables, workout classes (including spinning, boot camps, etc) and a spa. Lots of water sports- all of which are free -(including water sking!), and all the usual snorking trips, booze cruises, ect. There are a list of activites every day that you can take part in (shopping trips, crafts, movies on the beach at night) if you’d like- you don’t have to pre-sign up for much, so its nice to just decide at the last minute if you feel like doing something.
Amazing!!
Looks and sounds wonderful! Nothing better than a warm ocean breeze to make you forget all your worries. Enjoy!
Looks like heaven! Breakfast buffets are the best.
So glad you had a donut with your breakfast! Everything looks delicious and beautiful.
Looks like you are having such a great time! The food looks fantastic!
Wow it looks like you two are really roughing it out there
Could the beach and sky be any more beautiful? Have a great vacation and please, have a yummy Pina Colada for me. Just doesn’t seem appropriate to be sipping on one right now when it’s 35 degrees and pouring down rain.
I love the photos! It looks like you guys are having a wonderful time. I wish I was there with you!
I loooove breakfast buffets! But I always end up attacking the oatmeal-nuts-fruits section!
It all looks wonderful – the food, the view, the hotel! Have a great time. Currently trying to convince my husband that we need to take a baby-moon to Jamaica prior to our daughter’s birth in May 2012!
omg….will you share which resort this is? is it all inclusive
So happy for you and Matt ~ Enjoy!
A breakfast bar of champions. Smoothies made to order. Delight!
That’s a pic of Matt post-massage right? Cuz he looks totally destressed. Then again, just a get away like that would have me sportin’ that mood.
You two already look brighter and more relaxed. Uber-jealous of the breakfast buffet. I’m amazed at your self-control. I would have likely had one of everything.
oh, man, it looks gorgeous! i went to st. john in november with my guy. i think i had talked him into a beachside massage, but the weather ended up being a little too wet for it. it was an incredible trip, anyway… but i think it’s enough reason to go back! haha.
Happy Holidays, you two!
Have loads of fun — we need a vacay soon
Oh wow.. so beautiful and relaxing
The food looks gorgeous, love your pics!
I’m glad to see you’re enjoying island time!
Awesome pics. We just got home from our month
Read this from my phone but couldn’t comment easily from that touchscreen action…so happy you guys are enjoying life and the beach!
I hope you have a wonderful, relaxing vacation! Enjoy the sun and sand!
Holy wow! It looks like heaven. Thanks for letting us live vicariously through you
It’s so snowy here, and a tropical vacation would be wonderful right now!
I want to beam myself there right now.
Just looking at those pictures is relaxing.
Wow it looks beautiful there! And it has oatmeal with a toppings bar? You must be in heaven!
Matt with his sunglasses, and hands on hips, he looks like a movie star or a movie director!!!
Great looking food and scenery!
Wow – that IS an array of toppings! Did you know this before you arrived?
Much needed and well deserved
That breakfast bar sounds so good. Looks like your both having a relaxing and well deserved vacation.
It wasn’t that long ago that I ate dinner but looking at these pictures and i’m hungry again…
Massages are a great way to de-stress, and make vacations all the more relaxing!
