Tropical Tropics

We’re having a wonderful time so far. Last night we enjoyed a beachy cocktail hour followed by dinner at a Thai restaurant here. We had an amazing meal – a sample plate of Thai appetizers followed by Green Curry Shrimp and Oyster Chili Pan-Seared Snapper. We ended the night with a plate of dessert bites from the buffet downstairs by the pool! So far we’ve been really impressed with the food!

Then we crashed into a deep 10 hour sleep.

Sunrise with an ocean view woke us today. The breakfast buffet included oatmeal, yogurt and made-to-order smoothies complete with a full toppings bar! KERF paradise. I sampled the muesli with an array of toppings along with a smoothie and a coconut-chocolate donut.

Matt’s only wish on this vacation was to get a massage and that was one of my Christmas presents to him. A year of bakery stress, melted away.

    That breakfast buffet sounds wonderful, smoothies made to order should be on every buffet! The massage was a great Christmas gift, and perfect to use at the beginning of vacation!

    I usually go to Mexico every year and this year looks like I will not be, so…… I’m going to live vicariously though you! I love how you can wake up in the cold (I live in Minnesota) and go to bed in the tropics!

    Hi Kath, I have read your blog over the past year or so but I have never commented before. I wanted to stop by and leave a little message because I went to this same resort back in april and I must say it is truly amazing. If I could make a recommendation, order a Miami Vice next time you’re at the bar. I still dream about sipping one of those colorful drinks while relaxing on the beach! Hope you have a wonderful vacation!

    Can’t wait to hear which resort this is. It looks so similar to one that we went to in Mexico earlier this year. I’m trying to convince my husband for another all inclusive vacation this February when the weather gets so bitter and cold that I can’t take it anymore. 🙂

    We have a beach vacation planned for February. Just seeing your pictures helps curb that urge I’ve been having to snack on the sweets still residing in my kitchen. I want to be ready for that swimsuit in February, not regretting the pounds I put on at Christmas.

    I hope you guys are having a fabulous time. It definitely looks beautiful there! Bet you must have liked that they had a make-your-own oatmeal bar. Most of the resorts I stay at have muffins and stale bagels. 😉

    i am relaxed just reading this post! what a wonderful vacation so far. i LOVE breakfast buffets.. but always end up going way overboard. so much yumminess in one spot! enjoy the day.

    Oh my goodness… are you at Couples Swept Away? I’m getting glimpses of familiar scenery! We’ve been there the last two years, but not this coming year, alas. Try the fish tacos at Seagrapes, and meat pies and guacamole at the Cabana Grill. The spa hot tub is a magical scene. Enjoy your stay!

    I’ve been to that resort 5 times– this year was the first December we havn’t gone and seeing your pictures makes me miss it so much!! Thanks for letting me re-live the vacation through you! 🙂

      Were there a lot of things to do at the resort Amber? Or was it more of a “lay by the pool, ocean” sort of thing? Not that there’s anything wrong with that of course 😉

        I would say that its more of a lay around vacation, but I think you could make it more than that if you wanted. We usually scuba dive in the morning and then lay on the beach the rest of the day. They have an amazing fitness facility across the street with tennis courts, pool tables, workout classes (including spinning, boot camps, etc) and a spa. Lots of water sports- all of which are free -(including water sking!), and all the usual snorking trips, booze cruises, ect. There are a list of activites every day that you can take part in (shopping trips, crafts, movies on the beach at night) if you’d like- you don’t have to pre-sign up for much, so its nice to just decide at the last minute if you feel like doing something.

    Wow it looks like you two are really roughing it out there 🙂 Could the beach and sky be any more beautiful? Have a great vacation and please, have a yummy Pina Colada for me. Just doesn’t seem appropriate to be sipping on one right now when it’s 35 degrees and pouring down rain.

    oh, man, it looks gorgeous! i went to st. john in november with my guy. i think i had talked him into a beachside massage, but the weather ended up being a little too wet for it. it was an incredible trip, anyway… but i think it’s enough reason to go back! haha.
