Boy, if I weren’t sleep deprived, I would be convinced I’m in the day before labor funk. I’ve felt off all morning. But I think it’s really just 5 days of poor sleep catching up with me mixed with a lovely cocktail of hormones. I’m tired and slightly nauseous and just had tears pouring down my face while I watched another Baby Story birth with my lunch. I can’t BELIEVE we are about to have one!
Crib skirt is on! My girlfriend Lynsie made it!! Such a special touch to the nursery!
We also had a fun package arrive – this awesome modern baby seat + rocker from my Aunt Ellen and Uncle Paul!!! My favorite color green : ) It plays MP3s too!
And we are now the proud owners of Sophie the Giraffe : ) Squeak!!
I’m back to some first trimester food funks, but come 1pm the thought of a salad went “DING!” in my brain and I made it before I changed my mind.
Piled high with nutrition –
Leftover roasted potatoes, cheese, tomatoes, an egg, cottage cheese, corn chips, tons of lettuce, olive oil and honey.
I am a blogging machine these days between KERF, BERF and this new endeavor I’m embarking upon.
KERF’s 5 year anniversary is actually on my DUE DATE! What are the chances of that!? I don’t even really believe myself that I have blogged nearly every meal for 5 years. Insanity!

can’t wait to hear more about the new project
5 year KERF anniversary + baby’s due date… I think that’s going to be your lucky day! Exciting times
Such an awesome looking salad! Yum! It seems like you are chomping at the bit to meet babe face to face! Which is a good thing of course
Think of it like this: you know how when you don’t see your boyfriend/husband for longer than usual? And then when you finally do it’s like OMG I’ve never loved you so much!! I can only imagine that your baby boy’s birth will be like that x100000
I still can’t believe it’s almost time for you to meet your little guy! Crazy how time seems to fly! Happy Wednesday!
How fun that KERFs anniversary is on your due date! Hopefully you’ll have some big news to share with all of us then
And what a cute skirt – I love the blue pop of color!
Five years…wow that is amazing…Congratulations!! Your moods will be all over the board for the next month…just roll with it! (no bread pun intended)
Love the color!
Oh my gosh, I love your nursery colors and patterns. It’s perfectly modern and soft at the same time. Hopefully you feel better the rest of the day! I am sure this period of discomfort is well worth the prize though
If it makes you feel any better, I feel the same way today! Must be something in the C’ville air…
Love that rocker!
Lunar cycle!?
You often talk about topping your salads with olive oil and honey— I always think this sounds so good but if u had to estimate how much of each do u think you drizzle? Teaspoon of each? Less? More? Congrats on the baby– been reading for a LOOOONG time and I feel like I’ve watched you practically grow up before my eyes! (I’m old!) Can’t wait for the birth story
Yep… Just about a tsp of each
awww this is all so exciting!! Salad looks great btw
Love Sophie the giraffe! So much personality in one toy!
I have a feeling the anniversary and baby arrival are going to occur on the same day
I just learned about sophie the giraffe at a baby shower!!! I loved the story on the back of the box! So cute and it’s funny that all babies seem to love that thing?!
My 2 year old was scared of Sophie when we first got it as a teether… but now she loves it and it’s her night time cuddle toy of choice! Congrats on 5 years!!! I know how much work it takes!
I love the colors of the crib skirt. I sorta wish I’d gone with solid colors because they’re easier to match; I have the Peep bedding from Land of Nod, but went with the dots and stripes in gray and yellow.
The rocker is super cool looking! We love modern stuff. I’m trying to keep baby gear like that to a minimum, so I’m wondering if it’s a good option instead of the swing? We also want to get the Zen swing because of all the options it has. We have the space for everything imaginable, but I don’t want to clutter our house up.
I love the Peep bedding : )
And I would still get a swing because the rocker doesn’t auto-rock which is sort of the beauty of a swing. Maybe instead of a vibration/bouncy seat though
That salad looks amazing, I love all the different components to it!
That shade of green is also my favorite! Getting closer!
Five years…you seem like you’ve been at it more like ten! Amazing blog, amazing photography and gorgeous food!
5 yrs on your due date — what are the odds??! Congrats on both
Funky mood, cramping, crying….interesting….could be very soon!
My son LOVED Sophie the giraffe.
That is such an amazing coincidence with your due date and blogiversary. Your salad looks lovely and colorful; I love throwing sweet potatoes onto anything and everything!
I think that’s an awesome date for your due date to be on
I love a salad piled high with good stuff–looks tasty.
With everyone of my pregnancies, I watched the Baby Story and cried right along, just like you. Those sweet potatoes are calling my name!
Your salads always look so much better than mine! Ha.
I can’t wait to hear about your new adventure. I just hope that it doesn’t ever stop you from doing KERF or BERF. I had a salad today for lunch too. Before discovering healthy eating and blogs, I thought salads were a dieting torture. Now I enjoy eating them and look forward to new inspiring ideas like yours. Happy 5 years of WONDERFUL!
I’m 22 weeks and found myself feeling off today too…a bit nauseous (or pukey as I call it) and then had tears streaming down my face after a very frustrating phone call with my insurance company! Oh the lovely hormones!
Love Sophie and the seat! I can’t believe the baby is due on your blog anniversary. How cool is that!
5 years seriously is a feat to be proud of! Excited to hear what the new endeavor will be!
Wow! Blogging every day for 5 years??!! I’ve only been blogging for 7 months and I feel like its a part-time job! Lol!
My food aversions/funk from the 1st tri returned when I was in my 3rd tri too! I was super hngry all the time but had no taste for anything! And my son loves his Sophie. The squeaking scared him at first but around 4 months is wh e he really started getting into it!
I attempted to figure out the math for how many meals you have posted about, but my tired, pregnant body won’t let me
It would be cool to know how many meals you have posted about, though.

Very rough answer: 5 x 365 x 3 = 5475!!
Haha whoa!!
Kath,
I just have to say that I love your blog and your approach to healthy eating! Your salads always look FABULOUS to me and have inspired me to eat more that look like the ones you make. So excited for you on the impending birth of your baby. Good luck!
Thanks Christina!
That baby seat is super cute and way more modern than anything 1980 had to offer, hehe.
Every modern baby needs a classic Sophie! We love ours too. And, my dear, your hormones are busy at work.
Happy almost five years. What an accomplishment! I think I’ve only been following you the past couple of years, but you always manage to brighten my day! I hope you get some good sleep tonight!!!
I can’t believe how close you’re getting to Baby Younger-Monson’s arrival! You look darling as usual and I’ll be thinking of you in these next few weeks. Congrats on the 5 yr KERF anniversary too – love that it’s on the due date!
Great blog! Oh and as the mom of two toddlers, that baby bouncy seat is going to be a lifesaver for you!
Best of luck!
Thanks!
That is one tricked-out baby seat! Lucky kiddo!
What’s the new blogging gig?!
Somehow got turned around in reading.. and read this before I read the new post. I had trouble sleeping a few days before I went into labor, and my body was just really out of sorts. Your little man will be here before you know it!
That has to be the most delicious looking salad! The thing I love about your meals is the multiple layers of colors and textures and flavors you always have going on. Absolutely delicious looking!
Congratulations on the 5 years!
Kath- where are the blue tortilla chips from? I notice you eating them all the time? Also, I have never had tofu but would like to try it. Whats the best way to cook it for a first time “eater”?
Getting close and so excited for you guys!! LOVE the crib skirt! Its complete now.
Thx,
Amy
Garden of Eatin’ brand.
And roasted is my favorite way to eat tofu – in the oven for 40 mins at 400* or so. There are several good baked tofu tutorials online too!
Oops P.S. Keep meaning to tell you…I felt awful the week leading up to labor and then the day or two right before I had MORE energy than I knew what to do with and nesting kicked into full gear again. Finally, on baby #4, I recognized what I was doing (I was also ridiculously crabby-worse then PMS) and knew that that was the start of all labor “things” to come…exciting to think about!
I think the extreme crabbiness was present for SURE with all 4 kids.
Good luck!!!!!
I’ve heard this similar cycle too – down and then UP UP UP and then it’s go time
The crib skirt looks amazing, she did such a great job!
