As yet another trip draws near, we find ourselves with yet another fridge that needs emptying.
My first instinct to put on the meal plan was pizza, since we have peppers, sauce, a wee bit of cheese and Matt’s homemade crust at our fingertips.
But we also had a small bag of mixed potatoes, which became the centerpiece for tonight’s dinner. Paired with the incredible protein egg!
We roasted the taters (precious) in Garlic Gold oil, rosemary and salt for about 40 minutes.
And pan-seared up the eggs to go on top.
Underneath = spinach, pepper, cucumber, olive oil, honey salt, goat cheese!
Simple. And over easy! Dinner doesn’t have to ever be complicated if you have fresh ingredients on hand.
Something else easy? Google Chrome’s bookmarks bar. I recently discovered that if you leave the name blank in the “edit” field you can let the icons do all the talking. Nice and clean!
Hey folks near Columbia, Maryland – email me if you’d like more info about possible lunch dates!
Just packed for our trip. It’s like Montana all over again!!
Matt and I are sharing a bowl of chocolate chips, butterscotch chips and raspberries while we watch shows. And a mug of Pero!
Nite.

2nd commenter?!

Ya’ll are cute
YUM! I want your bowl of berries and chips, but I’m not sure I’d want to share!
I love eggs — and an over easy egg on salad is so delicious!
I like clean-out-the-fridge meals — they are usually my favorite!
Over easy is my favorite way to eat eggs
You can also do the same thing with the bookmarks if you use firefox- just right click to edit properties, and remove the text in the name field. Looks so nice and clean!
That’d be a nice brunch meal too!
I need to get some creative salts.
What is your favorite? Lavender? Honey? Other?
I love lavender salt!!! It lends such a depth to the salad
That dinner looks so good. Comfort food!
I love eggs on a salad! It’s a great source of protein.
Mmmm GOAT CHEESE! A great addition to almost anything in my opinion!
Eggs for dinner are the way to go!
chocolate chips + butterscotch chips + raspberries = best. combo. ever.
Hey- LOVE LOVE LOVE the recipage! so amazing– safe travels!!
Awesome!
If you ever decide not to do the Bakery thing after all – please come and prepare my meals for me?? I can pay…well, that is if you accept pennies
How about chips – chocolate-chips?! I can do that.
Question: I “saute” a lot of my veggies in the pan over med-high heat usually with olive oil…I love them but wonder am I over-cooking them? They do come out “soggier” and more like they can’t be heatlhy (because they’re so good!) – but I don’t think I’m using a lot of oil or anything…they usually are frozen, so does the excess water make them less beneficial?
I’ve never had great luck sauteeing frozen veggies. I wonder if you should thaw, drain, pat dry and THEN sautee? I think it is an oil-in-water problem.
Frozen veges are great! The excess water does not make them less beneficial, but it does make them not-so-great for sauteing.
Thanks! Hey – I got this instantly from email notification! How cool is that
I love goat cheese too!!! And I always find random stuff to throw together for dinner before we leave on trips too….
such smarty-pants we are!
Pero makes me think of perro, and that’s funny to me
LOVE eggs on salad!
Can’t wait to lunch with you in the Columbubble!!
I just changed all of my bookmarks on google chrome and love it. Thanks for the tip!!! Any other good ones??
Really really wanna try Pero. I wonder if I’d like the taste!
Great dinner!
Quick, thrown-together dinners always end up being the best!
Love the daffodils! I finally got myself some tulips. I’m in desperate need of Spring!
Looks like a fantastic dinner! I dont know why I dont eat potatoes more often. Safe travels!
Gorgeous flowers! Nothing says spring like fresh flowers!
Those eggs look perfect! And rosemary is always so perfect on roasted potatoes. What a great way to use up the fridge contents.
usually I covet your meals, but today I didn’t have to do that because that dinner is pretty similar to many of my college meals! I knew I was doing something right
I wish I was closer to where you were visiting! Blogger lunch. <3 I also wish I located some Pero! I tried to sweet-talk my local fun food store to get some in so I wouldn't have to venture to Whole Foods. I might have to give in soon.
Yummy eggs! Had scrambled eggs for dinner. =)
What a delicious look dinner! I love eggs any time of the day.
Those over-easy eggs look perfect!! I love putting eggs atop a bed of leafy greens; makes a delicious dressing. And roasted potatoes are amazing!
Have a safe and fun trip!
“What’s taters?” Probably one of the best LOTR scenes…
My favorite salad is from The Fig Cafe and has bacon, bacon vinaigrette and a poached egg. So yummy!
Honey salt?! Yum! I love eggy salads now thanks to you!
Yeeee can’t wait til Friday
oh thanks for the google chrome tip! i always shorten the title as much as possible to fit all of my bookmarks on the bar and get rid of all the writing. this will be so much better!!
That salad looks yummy! I love how creative your meals are
I wouldn’t think to put taters in a salad, but they seem like the perfect fit! Have a good, relaxing night!
Eggs + spinach have been a staple for me lately. Maybe it’s a springtime craving?
I’m traveling this week and I totally referenced your Travel page for b’fast/snack ideas. Gracias.
That looks great. I sometimes forget meals don’t have to be complicated to be delicious.
No way I’d be sharing those berries and chocolate! Well, okay, maybe if I had a husband as nice as yours…
Your dinner sounds simple and delicious! I love roasted potatoes and eggs over easy!
omg, that salad. kath how do you do it? that looks incredible
“Dinner doesn’t have to ever be complicated if you have fresh ingredients on hand.”–
Amen, Kath.
That is my life’s motto. High raw, as close to nature as possible, doenst have to cost a lot or take much time. Simple food is delish food is beautiful food.
Have fun on your trip!!!
Eggs make the perfect meal any time of the day!
Safe travels.
I love eggs anytime of the day- who says eggs are just for breakfast? Looks like a yummy meal!
Thanks for the Chrome Toolbar tip!!
Niiice~I like your philosophy of simple dinner Kath
And i love overeasy eggs hehe. Have a sweet night!
You are the salad queen
Wonderful combo, and so simple.
Pack for Maryland, not Montana… better not turn into below zero temperatures! However, the lows are expected to hover around freezing. On the bright side, the highs will be in the high 50s to low 60s. Bulbs are beginning to show their colors. Spring… bring it on.
Yum! The raspberries look so bright and juicy!
Those eggs look perfectly cooked!
I just recently had eggs and potatoes on my salad too. It was super delicious and so easy to pull together. Perfect for a busy weeknight.
That salad looks delicious! I love eggs on salads. Why don’t more people do this?
Have a great little trip Kath. If you are in Towson and want to meet for a Trader Joe’s visit, let me know! I actually need to make it there sometime this weekend and would love to meet up with you. Take care!
Wow! That salad looks delicious! I have only had hard boiled eggs on salads before but must try it this way soon! Those flowers in the background look beautiful!
Looks like a perfect dinner!
Nice! I just took out all the descriptions in my bookmark bar too.
That has been a staple for me lately with it comes to meals. I have been trying to get my B12s in and the eggs seem to be doing the trick. We actually did have pizza last night though. Such a fun and delicious meal at home. Looks like you had a great night!
The color of those raspberries is incredible! I cant wait for summer berries!
That salad looks delish. Maybe I will have something similar for breakfast
Eggs+cheese+potatoes= a winning combo!
Eggs and potatoes in a salad are oh so good. Simple and delicious!
I’m so confused by Pero – is it coffee?
I think I’d be breaking my “no instant coffee” rule
Nope – it’s malted barley! Not coffee at all, and no caffeine. It’s roasty like coffee, but a bit thicker (foamy).
That is a delicious looking dinner! I love eggs and potatoes. They are the perfect comfort food.
Those almost look like egg nachos!
Pizza is our go to dish when we are leaving on a trip as well. But what you finally decided on with the egg and goat cheese… that would be my choice.
Safe travels.
I never used to have eggs on salad, but I’ve been doing it a lot lately since seeing you do it. It’s such a fast, easy meal!
You’re going to be at my Great Harvest! We love that place! The owners are so sweet and always friendly when we come in on the weekends. Too bad I’ll be in SIlver Spring teaching second grade all day. I would love to stop by on a weekday but I never make it there in time.
I was really hoping for Columbia, SC. I’ll be there tomorrow. You should probably email me all of your favorite Etsy stores.. You know, in all of that spare time you have.
Wait, by “like Montana” do you mean you’re packing a ton of stuff to come to Columbia MD? Because I’m from Columbia MD (although now I live in downtown Baltimore) and there is a ton of healthy eating to be had in Columbia! And good beer! In fact, there’s a Trader Joes and an awesome beer store (Perfect Pour) in the same shopping center!
I mean packing up 5 days worth of stuff, including GH t-shirts and bakery jeans
Okay! Just wanted to make sure you knew about the hidden gems!
Enjoy your visit to our fair state…it’s supposed to be nearly 80 by the end of the week. I hope you get a chance to visit downtown Baltimore too.
I don’t think we’re going to make it downtown – gotta spend lots of time with Gram. But I do love Baltimore!
It sounds like you know your way around! Sorry I didn’t know all this, I’m a fairly new reader and I’m really enjoying the site!
No worries
Ooh, thanks for the Chrome tip!! I’ve changed all of mine over, it’s so much cleaner! I recognize most of yours, but can I be nosy and ask what icons 4-6 are?
Gmail, G-calender, KERF, KERF Admin, Google Analytics, Mint, Twitter, FB
i just did that to my google chrome! i love chrome, so simple and perfect!
Mystery solved! Have so much fun in MD!
(Does this mean you’ll come to Nashua, NH when that store opens? Because I’d totally come visit!) Have fun in Columbia, MD — times sure have changed since I moved away in 1996– a TJs now? Sweet!
Hi Kath! I am in Timonium, always wanted to check out the GH in Columbia. . .need bread for French Toast. When will you be there?
All day tomorrow and probably Thurs and some of Friday. But come tomorrow if you can!
Those egg yolks look deliciously poppable!
YES! LORD OF THE RINGS REFERENCE!
(sorry for caps, was a must to show my appreciation!).
Boil ‘em, mash ‘em, stick ‘em in a stew?
Oh wow, you’re a genius! My toolbar was always so full, now it looks all nice and clean. Thank you!!!
Hey, I live in Columbia, MD! I didn’t even know there was a GH there. I hope you enjoy your trip!
This meal was amazing! My 3 year old devoured it, and it was so light and refreshing! Thank you!
