Take The Cake

I am usually the first one out of bed. Often I ask Matt what he’s in the mood for and pad down the stairs.  Since it takes him longer to wake up, I get started on breakfast while he rolls around in bed and then makes it.

Last night, however, I proclaimed I was going to change all the sheets before our 5-day trip so we’d come home to fresh ones. Simultaneously he said he was in the mood for pancakes, and offered to make them while I did chores.

To make a long story short, I was upstairs up to my neck in sheets, while he was making these:

Pumpkin Kodiak cakes stuffed with chocolate and butterscotch chips. Topped with caramelized bananas, fresh berries (which Karen donated to our fridge), coconut and Maranatha Almond Butter.

These may take the [pan]cake for the best ever!?

    Those pancakes sound amazing! This morning I was in the mood for oatmeal, so searched through your recipes and made the Whipped Banana Oatmeal..with chocolate chips, coconut and half of a cookie dough Larabar on top, it was the perfect breakfast! 🙂

    I LOVE Etsy also!!!

    The pancakes look absolutely delicious! About how many calories are in one serving? I think I would want to eat the whole plate!! 🙂

      A 1/2 cup serving is 150 calories not including the toppings so add those in extra!

    I used to (note – USED to) really tidy up and clean my house/kitchen before a big trip so it would feel inviting and fresh when we returned home. Darn! I wish I still did that, but I don’t … now I come home to … ugh this, AND unpacking??

    Wow! I love your photos….I did berry pancakes this morning too, must be a pancake kinda day! (Yours look about 1000x more delicious, I confess 😉 I am wondering, is Matt going to have to be getting up at ungodly hours again when the bakery is up and running? Perhaps he will at first….yikes!     Those look absolutely wonderful. I’ve noticed lately that you eat pretty substantial breakfasts – do they usually tide you over until lunch? I find I don’t top my oatmeal or pancakes with as many toppings, and get hungry a few hours after eating breakfast.

      Yup. My breakfasts almost always last me 5 hours. I don’t like to snack, so I’d rather eat more for breakfast and be able to go live my life

        Not to knock Open Sky, but I can get Kodiak Cakes (pancake mix) in my local grocery store – and save on the shipping, which since I live in Alaska, is high.
