Over Easy

As yet another trip draws near, we find ourselves with yet another fridge that needs emptying.

My first instinct to put on the meal plan was pizza, since we have peppers, sauce, a wee bit of cheese and Matt’s homemade crust at our fingertips.

But we also had a small bag of mixed potatoes, which became the centerpiece for tonight’s dinner. Paired with the incredible protein egg!

We roasted the taters (precious) in Garlic Gold oil, rosemary and salt for about 40 minutes.

And pan-seared up the eggs to go on top.

Underneath = spinach, pepper, cucumber, olive oil, honey salt, goat cheese!

Simple. And over easy! Dinner doesn’t have to ever be complicated if you have fresh ingredients on hand.

Something else easy? Google Chrome’s bookmarks bar. I recently discovered that if you leave the name blank in the “edit” field you can let the icons do all the talking. Nice and clean!

    You can also do the same thing with the bookmarks if you use firefox- just right click to edit properties, and remove the text in the name field. Looks so nice and clean!

    If you ever decide not to do the Bakery thing after all – please come and prepare my meals for me?? I can pay…well, that is if you accept pennies 😉 How about chips – chocolate-chips?! I can do that.

    Question: I “saute” a lot of my veggies in the pan over med-high heat usually with olive oil…I love them but wonder am I over-cooking them? They do come out “soggier” and more like they can’t be heatlhy (because they’re so good!) – but I don’t think I’m using a lot of oil or anything…they usually are frozen, so does the excess water make them less beneficial?

      I’ve never had great luck sauteeing frozen veggies. I wonder if you should thaw, drain, pat dry and THEN sautee? I think it is an oil-in-water problem.

      Frozen veges are great! The excess water does not make them less beneficial, but it does make them not-so-great for sauteing.

    That is my life’s motto. High raw, as close to nature as possible, doenst have to cost a lot or take much time. Simple food is delish food is beautiful food.

    Pack for Maryland, not Montana… better not turn into below zero temperatures! However, the lows are expected to hover around freezing. On the bright side, the highs will be in the high 50s to low 60s. Bulbs are beginning to show their colors. Spring… bring it on.

    That has been a staple for me lately with it comes to meals. I have been trying to get my B12s in and the eggs seem to be doing the trick. We actually did have pizza last night though. Such a fun and delicious meal at home. Looks like you had a great night!

      Nope – it’s malted barley! Not coffee at all, and no caffeine. It’s roasty like coffee, but a bit thicker (foamy).

    Pizza is our go to dish when we are leaving on a trip as well. But what you finally decided on with the egg and goat cheese… that would be my choice.

    You’re going to be at my Great Harvest! We love that place! The owners are so sweet and always friendly when we come in on the weekends. Too bad I’ll be in SIlver Spring teaching second grade all day. I would love to stop by on a weekday but I never make it there in time.

    Wait, by “like Montana” do you mean you’re packing a ton of stuff to come to Columbia MD? Because I’m from Columbia MD (although now I live in downtown Baltimore) and there is a ton of healthy eating to be had in Columbia! And good beer! In fact, there’s a Trader Joes and an awesome beer store (Perfect Pour) in the same shopping center!
