I traded a nice lunch for a Gossip Girl episode this morning, so I was rushing around to leave the house on time come 1PM and didn’t have chance to eat lunch, much less blog! But you know I am always prepared and quickly packed up lunch, snacks and dinner for the day – and managed to photograph it all as well :mrgreen:

I went to the gym at 11:15 (hence the lateness) and only had time for 45 minutes on the ET and 15 pushups before I had to get home and quickly shower.

I made a DA-licious wrap with some of the Cowgirl Creamery brie cheese I brought home from Foodbuzz.

Along side went green pepper, carrot, PUMPKIN BUTTER, and romaine. Nothing goes better with crisp veggies than brie and the sweetness of pumpkin.

The only way I can eat a wrap is rolled up in foil. I just roll the tortilla into a log and then roll the log into a piece of foil. Not the most conservative on the waste side, but the best solution. I’m wondering if some kind of thin silicone thing would work as an alternative? Although I rip the foil as I eat it and it gets quite messy on the inside. At least I don’t do it often.

So I ate my wrap in the car on the way here – one-handed eating.

After doing a presentation in class, I ate my Frog Hollow Farm pear from Foodbuzz. One of the best pears I’ve ever had! It was super juicy and perfectly ripe!

Going down the snack spectrum, I had TJ’s Euro yogurt + more Frog Hollow granola for a 4PM snack along with 2 dried apricots that I found in my lunchbox. I was hunnnngggry! Hopefully that will all settle in my stomach soon.

Dinner is packed for our 6:15 break from MNT class. Leftover gnocchi and kale!

Lastly, I have a new bar to try for an evening snack // dessert – a Pure Power bar by Choclatique. I’ll let you know how it is tonight!

LOL – I had to have Matt email me these photos because I left my camera at home and forgot I had to blog from campus and I am having trouble with my internet connection after the computer hibernates so Matt had quite the time getting them to me with the following response:

“the bears say windows 7 is stupid and so is the new computer!  hmph!  gmph!  qrrp.  buh”

No it doesn’t!! From what I’ve heard it’s pretty good! It’s my INTERNET that’s having the annoying problem. Or perhaps the firewall. The bears were mistaken.

your speedy, on the go meals look better than any type of dinner ive spent all day cooking. who am i kidding, ive never spent all day cooking. but your to-go foods def look better than anything i eat!

Mmm…brie and pumpkin butter. I bought some brie and fig jam on a whim at Whole Foods last night (darn those tasting stations) and I’m going to have to try brie and pumpkin butter as wel.

I have to use foil for my wraps, too! I always stuff so many veggies in them that they completely fall apart without the foil. Your wrap looks delicious, and the bear pic is too cute :)

Can you save the foil to recycle? I always throw my used foil in with the aluminum cans at the recycling center.

Hmmm…for the wrap I would say maybe a silicone mat or something would work. What about a dish towel that you can fold down?

I love how you are able to make such great packed lunches Kath! You are giving me so many ideas for college next year. I never thought of using tin foil to wrap up my wraps, but I will definitely give it a try!

Your lunches always look divine. They motivate me to get more creative with mine. And that gnocchi must have been FANTASTIC! I plan on trying that recipe out soon… what a lovely gesture from your hubby! Must have been great to come home to.

I think that Frog Hollow pear was my favorite thing from this past weekend. I especially loved it in the rice pudding dessert at Saturday’s dinner. Soooo wish I had more!

I typically use foil to hold wraps together as well… I try to remember to save the foil for another use. Someone should invent a re-usable wrap holder!

The butternut gnocchi that Matt made looks incredible. I tried to make sweet potato gnocchi a few years ago with disappointing results, but maybe I’ll give Alton’s recipe a try.

I don’t! Usually I am just packing food to be consumed within 3-4 hours, so in my lunchbox it stays cool enough. If I’m on campus for the whole day and need for something to be cold for safety reasons, I put in a bunch of icepacks.
