Good Afternoon!

May 11, 2011

I say that ^^ because I’m ready to rock and roll. I’m already showered, the dishes are done, the house is put together and I’m ready to start working before 9am. A miracle! I didn’t sleep well, and I’ve been up since 6:30 -I’m having that racing mind syndrome where my brain just keeps going over all the things I have to do – but in a good way. I’m ready to tackle the day and excited to cross things off the list. We are getting so close to our deadline on Friday, and so long as the oven works by the end of today and we pass all of our inspections, I think we’re going to make it! [Knock on wood..]

Thanks for all of your compliments on the bakery – I’m loving how it has turned out!

This morning I dug into a Dough Boy Smoothie – simple banana-oat style.

Banana Oat Dough Boy Smoothie

  • 1/3 cup oats
  • 2/3 cup milk
  • 1/3 cup yogurt
  • Pinch salt
  • Half banana
  • 1 tbsp chia seeds
  • Sprinkle cinnamon
  • Splash vanilla

–> Put in Vita-mix and sit in fridge overnight. In AM, blend away!

Topped with the last of Lynda’s Granola, coconut, coconut butter and the last of my Honey Crunch PB.

I should have had peppermint tea today, but I had to give coffee #1 one more taste. Tomorrow I’m backing off for a day or so. Caffeine might only have a 12 hour half life, but I swear it lingers in my body. That’s probably why I had racing mind last night!

Big NUT BUTTER steal going out through my OpenSky newsletter today!! Follow me to get it – and get your chocolate hazelnut on!!

I’m off to make labels and get my laminator on!!

See you from the bakery!

This just in from Matt:

I think that’s the GOOD kind of fire!

Yum! That doughboy smoothie looks awesome!

3 Hope May 11, 2011 at 7:47 am

That doughboy smoothie looks like the best one yet! Such a delicious breakfast! Must get a blender! Good luck with everything! :)

4 Amanda- The Nutritionist Reviews May 11, 2011 at 7:48 am

Wow you are super productive today! Have a great one.

5 Khushboo May 11, 2011 at 7:50 am

You just helped make my mind for brekkie tom..although no blending involved…in other words, overnight oats :)! Have a great & productive day!

6 Lisa @ Healthful Sense May 11, 2011 at 7:51 am

I can’t give up coffee for tea. I’ve tried and I always go back. There’s just nothing like a cup of coffee in the morning.

7 Holly @ The Runny Egg May 11, 2011 at 7:54 am

If I was opening a bakery like you, I’d probably be drinking a pot of coffee each day!

8 Molly May 11, 2011 at 7:54 am

I love love love productive mornings! I love knowing you’ve done more by 8am than what some people will do in their entire day.

9 Grace @ Healthy Dreaming May 11, 2011 at 7:57 am

Yummy way to start off your day! Have a wonderful day.
I’m a morning person too so I normally have all my major things done by noon :)

10 Estela @ Weekly Bite May 11, 2011 at 7:59 am

Love the dough boy smoothie :)

Have a great day :)

11 Freya (Brit Chick Runs) May 11, 2011 at 7:59 am

That smoothie looks awesome, so thick!
I slept terribly last night too – mind racing with stress about exams and the future. It was awful! I’m so tirrred :'(

12 Sarena (The Non-Dairy Queen) May 11, 2011 at 8:04 am

Yay! Fire! I am so freakin’ excited for you guys!

13 Mrs A May 11, 2011 at 8:08 am

Apparently in addition to being excited on the surface to come into your bakery when y’all are open, I am also subconsciously excited because I had a dream about you guys and your bakery last night!! Haha! Best wishes for smooth sailing :)

14 Nikki (BareFootPrint) May 11, 2011 at 8:09 am

The bakery looks awesome, and congrats on getting the oven up and working!! I wish I was closer so I could visit!

15 megan @ whatmegansmaking May 11, 2011 at 8:09 am

Congratulations on the bakery so far! Seriously, I love hearing about it. You are doing an awesome job. :)

16 Cait's Plate May 11, 2011 at 8:14 am

Mmm – fire for fresh baked bread!??!?! YUM! I can smell it (and taste it!) from here! There’s really nothing better in the world!

17 Baking 'n' Books May 11, 2011 at 8:18 am

God – the fire thing scared me…Lynda’s Granola – where does that come from and how did you get hooked on it? I’ll have to check it. I’m in love with granola and usually buy Nature’s Path Hemp or something, but go through it too quickly!

18 Amanda (Eating Up) May 11, 2011 at 8:19 am

Sounds like things are a little less stressful now!

19 Kate @ NaturaStride May 11, 2011 at 8:20 am

Hi Kath! The bakery looks so fantastic! You guys have done so much work!!
Ugh I hate racing mind syndrome – but sometimes the best way to deal with it is just to get up and get going – good for you, girl. Have a great day!

20 Mari @ May 11, 2011 at 8:22 am

I have yet to try the DBS, but I’m thinking I will this weekend (I usually make my oats at work, blending might be crossing the line…)

Also, I randomly discovered an awesome way to store coconut butter so it’s always a melty consistency: On top of the fridge! The warmth radiated by the fridge keeps it always as a perfect temperature, but not too runny.

However, I don’t think my landlord has replaced the fridge since 1985, so this might not work with newer high efficiency appliances haha.

21 KathEats May 11, 2011 at 8:23 am

Oh that’s a wonderful idea!!! Except that I think the eye-sore would drive me nuts :)

22 Nancy May 11, 2011 at 2:59 pm

So, put it in a pretty basket on top of the fridge!

23 Heather May 11, 2011 at 8:23 am

Looks like one stresser is taken care of!

When I get nervous, I also have trouble sleeping and need to accomplish things before I can “relax.”

Good luck meeting your Friday deadline!

24 Greta May 11, 2011 at 8:44 am

Looks amazing! I guess it is getting to be that time of year to start ditching hot oats for somehting much cooler…. :) Happy Hump Day!

25 Chelsea May 11, 2011 at 8:55 am

The oven is up and running!! So exciting. I might need to try a dough boy smoothie it looks so good :)

26 Gina @runningtothekitchen May 11, 2011 at 9:05 am

I love your dough boy smoothies. Still need to try one.

27 Caley May 11, 2011 at 9:05 am

Totally snagged that nut butter deal! So excited!

28 Nikki T May 11, 2011 at 9:05 am

The bakery looks awesome so far!! I wish I lived close by so I could come check it out on opening day!

29 staceyhealthylife May 11, 2011 at 9:07 am

Lol, I was so confused there for a second. But then I saw a bowl with coconut and oats. Then I knew I was in the right place.

30 Ellie @ The Mommyist May 11, 2011 at 9:08 am

Hooray for a working oven! I’m sure you guys will pass all your inspections!

31 Jess May 11, 2011 at 9:19 am

I like the title…it makes me feel like my day is farther along than it actually is :)

And yay for a working oven!

32 Jenny @ Fitness Health and Food May 11, 2011 at 9:23 am

I have the same problem with coffee even though I love it so much!

Your oven is looking awesome and kudos to you for getting your exercise in bright and early before a busy day! :) Good luck with all of your prep! :)

33 Jil @ Big City, Lil Kitchen May 11, 2011 at 9:24 am

Hooray for working ovens!!! I still have yet to get to making one of these doughboy smoothies – it’s been on my to-do list forever!

34 nicole May 11, 2011 at 9:29 am

I’m glad that’s the good kind of fire, my heart skipped a beat for a second!

35 Erin May 11, 2011 at 9:38 am

36 Katie @ Nourishing Flourishing May 11, 2011 at 9:39 am

Woo! So close to opening — the dream comes to fruition 😀

37 ambergale May 11, 2011 at 9:43 am

Kath – the Open Sky promotion is awesome! I just found Justin’s at Target this week and was super excited to get to try it (super delicious!), but I paid nearly $11 for a single jar – so, thanks for the combo pack deal! Good luck with the bakery — it’s looking fantastic!

38 Tessa @ Amazing Asset May 11, 2011 at 9:43 am

I cannot wait to get home from school and finally have access to a blender to make this sort of breakfast! It looks so tasty and filling too :)
The opening is so so close, I’m excited for you!

39 Ashley @ Feeding Ashley May 11, 2011 at 9:50 am

The fire worried me for a second..It’s so awesome that the bakery is going to be opening soon! I can’t wait to see the pictures of everything finished.

Good luck today!

42 SquatLikeALady May 11, 2011 at 10:24 am

That dough boy smoothie looks delicious. And good luck today!

45 Jessica May 11, 2011 at 10:45 am

Just wanted to say I a fascinated by how much I am thinking of you and Matt and pulling for you guys as you meet your deadlines to open. I don’t know you, I live in San Francisco, but I feel like my friend is opening a bakery in Charlottesville! The process has been so interesting to watch and I am really on the edge of my seat to see how it turns out. Sending good luck thoughts your way!

Sometimes those productive mornings are just the way to go! :) Good luck!

48 AShley May 11, 2011 at 11:02 am

Can you believe I don’t like hazelnut either? About the only nut I don’t like! Your breakfast looks extra doughy!! I hate the racing mind thing at night…you’re almost there though!!

49 KathEats May 11, 2011 at 1:39 pm

You are so unpredictable!!

50 Casey May 11, 2011 at 11:03 am

I hope things go according to plan! Good luck!

I have an Open Sky question. Is there any way to buy some of the older Open Sky products/ For example, the ones you could buy at any time beofre there were promotions? I am wanting things for my kitchen! :-)

51 KathEats May 11, 2011 at 1:39 pm

Some of them should be back!! If you have a product in mind please let me know so I can special request it for you!

52 Lindsay May 11, 2011 at 11:14 am

I just got your opensky email and it is already sold out! i am so sad!

53 Anne May 11, 2011 at 11:19 am

Me too! I love Justin’s Nut Butter…

54 laurie May 11, 2011 at 11:21 am

Me too! That’s what happens when I don’t get up as early as Kath!:)

55 Jenn May 11, 2011 at 1:02 pm

I was just commenting to say that! bummer!

56 KathEats May 11, 2011 at 1:40 pm

Sorry guys!!! I’m trying to get more in for you all. Sign up for the wishlist to get notified as soon as they are!

57 Natalia - a side of simple May 11, 2011 at 11:23 am

Some chocolate hazelnut would certainly be the perfect topping for a dough boy smoothie today… :)

58 Lauren May 11, 2011 at 11:34 am

I hate those restless nights. At least you were able to get so much accomplished this morning. Always a plus.

59 Ash @ Good Taste Healthy Me May 11, 2011 at 11:37 am

Yum, that looks delish!!

I can’t wait to see the pictures when it’s all opened! So exciting!

60 Lindsey May 11, 2011 at 11:43 am

Hi Kath-

I am a regular reader, but don’t usually comment on blogs. I was originally really excited about the Nut Butter sale, but one thing that Justins nut butters and Danielle’s veggies have in common is Palm Oil. I would recommend looking into the environmental impacts of Palm Oil plantations and Palm Oil harvesting and making your own decision regarding your use of Palm Oil…especially when nut butters really don’t need any additional oil to be delicious!!

61 Karen May 11, 2011 at 12:35 pm

I’m not thrilled about the use of palm oil in my nut butter either. I don’t mind some seperation; nothing that a quick stir won’t resolve.

62 Mary @ Bites and Bliss May 11, 2011 at 11:46 am

I love mornings that are so productive before 9AM!!I haven’t had many of those as the most productive thing I’ve been doing that early is sleeping in as of late..but I do love those mornings nonetheless.

63 Haleigh May 11, 2011 at 11:57 am

I still need to try one of those smoothies. Sorry that you didn’t sleep well last night, but way to go for turning into a productive morning!

64 Stephanie @ StephSnacks May 11, 2011 at 12:02 pm

We all have those days when the mind races until everything is finally complete! It feels great to have everything on our ‘to do’ list checked off! That Dough Boy Smoothie looks amazing.. maybe I will give it a whirl for tomorrow AM :)

65 Alexa @ Simple Eats May 11, 2011 at 12:03 pm

Ah I still can’t believe you guys are opening your bakery. It’s awesome!

66 Michelle (The Runner's Plate) May 11, 2011 at 12:08 pm

I think caffeine lingers in my body a lot longer than it does for most people, too.

67 Johanna B May 11, 2011 at 12:38 pm

Fire in your baking oven is a good thing indeed. Now to get past those pesky inspections.

68 Karen May 11, 2011 at 12:41 pm

Glad your nervous adrenaline is working in your favor esp. after a sleep disturbed night. I rarely function well without a full eight!

Have fun playing in the bakery today!

69 Lorin May 11, 2011 at 12:44 pm

Hi, I was just wondering what you thought between intuitive eating versus eating to keep metabolism up. For example, I’m never really that hungry for breakfast but I always hear that one should not skip breakfast. However, if I was eating intuitively I would just wait till I actually got hungry and listen to my body, but then slow down my metabolism I guess. I just was wondering what you thought about eating breakfast even if you’re not hungry because I could wait till I get hungry but then it would be close to lunch by then.

70 KathEats May 11, 2011 at 1:42 pm

Hmm. That’s a tough one. I think saying you could skip breakfast if you’re not hungry would seem like I’m saying it’s ok not to eat – which is not ok! But if you’re not hungry till say, 9am and get up at 7am, then I don’t think you’re going to kill your metabolism by waiting an hour or so. Some people’s hunger hormones act differently. I also don’t think forcing yourself to eat has much benefit, but neither does fasting. If you’re not hungry in the AM, you might want to try eating dinner earlier. Or if you have to eat at 10pm every night and thus aren’t hungry at 7, I think that’s not going to have much of an effect. Does that make sense? I’m rambling!

71 Michelle | GOLD-HEARTED JEWELRY May 11, 2011 at 12:57 pm

That looks like a cloud!

72 Laura @ Sprint 2 the Table May 11, 2011 at 1:01 pm

You make the best looking oat bowls. I can’t wait to get back in town so I can resume makeing these in the 90 degree ATL weather. :)

73 Cait @ Beyond Bananas May 11, 2011 at 2:25 pm

Thats breakfast.. is to die for. I looks so delicious!

74 Melissa @ Journey to Marvelous May 11, 2011 at 2:44 pm

The oven works! One step closer…woohoo!

75 Kay May 11, 2011 at 2:46 pm

Hi Kath! I have never posted before but read your blog daily. I thought you should know… I was sitting at work this morning, typing out an address on an envelope that was supposed to say “Lake Country” and I typed KALE COUNTRY. If such a place existed… you would be the mayor!

76 KathEats May 11, 2011 at 4:15 pm

Haha – awesome!

77 Elena @ GagaForGrapefruit May 11, 2011 at 3:09 pm

eek that fire scared me! glad things are shaping up :)

78 Ginger&Rice May 11, 2011 at 6:50 pm

When making the Dough Boy smoothie, do you think that a Magic Bullet would work? Or would I have to use a food processor?

79 KathEats May 11, 2011 at 7:44 pm

Any kind of blender will work!

80 Laura Jane @ Recovering Chocoholic May 11, 2011 at 8:49 pm

I love your dough boy smoothie idea. I’m pretty new to your blog, so I haven’t seen it before. I love that you do all the work the night before and just blend in the morning. Great for rushed mornings.
