Happy Early Valentine’s Day!

When you have a muffin like this, you must seize the moment no matter what the holiday status.

Enter Chocoberry Coconut SIAB!

The ultimate Valentine’s smoothie in a bowl!

The Smoothie
  • 1/2 cup milk
  • 1/2 banana
  • 1/3 cup rolled oats
  • 2 tbsp Vega Choc-a-lot
  • 1/2 cup frozen mixed berries
The Frosting

The muffin pieces were super doughy – this was fabulous!

And FYI, Matt heated the coconut butter in a pot of hot water on the stovetop to soften it for drizzling like in this post.

Coffee completed the rich flavors

Guess what happened last night!?

But too bad for the kiddos…

[GO DUKE!!!]

that SIAB looks great!

I could do without any more snow. we’ve gotten way more than usual here in St. Louis. I definitely brought the snow from Detroit when I moved!

2 Angela @ Eat Spin Run Repeat February 10, 2011 at 9:45 am

That muffin sounds ridiculous! Breakfast looks delicious today. Thankfully we don’t have much snow in the forecast and it’s actually supposed to be -2C on Sunday which is almost tropical for us in Ontario! Have a great day Kath!

3 Evan Thomas February 10, 2011 at 9:47 am

Mmm, chocolate, cherry, and coconut reminds me of German Chocolate cakes. Definitely a good thing to wake up to.

4 Katelyn @ Chef Katelyn February 10, 2011 at 9:47 am

I am having serious breakfast envy. I am absolutely swooning for that chocolate! Beautiful Trekkie, Kath!

5 Angie @ Musings of a Violet Monkey February 10, 2011 at 9:47 am

Sounds delish!
Love the slippers, I have the same pair. Though mine look a lot more ‘worn in’, thanks to my pup!

6 Felicia (a taste of health with balance) February 10, 2011 at 9:48 am

Haha I love your snow pictures! I have over 2 feet at my house. I want to move where you are and get only a little snow.

16 Sarena (The Non-Dairy Queen) February 10, 2011 at 10:00 am

We had about the same kind of snow here too. I saw two wrecks on the way to and from school with the kids…black ice freaks me out! Have a great day Kath!

Your smoothie soup looks awesome and I just realized that is a way for me to eat oatmeal!!! I may or may not have just done a happy dance… LOL!

22 Daisy February 10, 2011 at 10:15 am

I saw this in the New York Times today about eating real food-
thought I would share, though of course you know all of this already!

23 Ashley @ the fit academic February 10, 2011 at 10:18 am

Love the pretty red & white colors! I can not believe winter is still here! More snow! Really?!
Hope it warms up soon!

Kath, this looks incredible!

25 ilana February 10, 2011 at 10:21 am

We had a light dusting last night, but it didn’t stick and it is supposedly warming up to the fifties this weekend. So maybe you guys will, too. :) That muffin looks super delicious! Happy Thursday, K. :)

26 Hope February 10, 2011 at 10:23 am

That muffin looks so good! I want snow! We were supposed to get a huge snowstorm today but it went off the coast and missed us. GR! I would have liked a snowday :)

Hooooooly chocolate muffin!!! Looks so good– a pre-Valentine’s Day treat is completely necessary. You have to prep yourself for the big day! :-)

30 Liz @ IHeartVegetables February 10, 2011 at 10:30 am

That breakfast looks amazingly tasty. Fruit + chocolate = always a win!!! haha. I bet it was filling too! :)

31 Ann @ Day by Day February 10, 2011 at 10:37 am

Poor kids! We got snow too, but down here in Mississippi even 2 inches is a big deal, so no class today!! I’m so thrilled to have a day off!

32 Sheri February 10, 2011 at 10:41 am

Looks delicious!!!!

33 Caitlyn (A Spoonful of Life) February 10, 2011 at 10:43 am

Your breakfast looks ridiculously good! I’m loving the rich purple and brown colors.

34 Melinda February 10, 2011 at 10:54 am

Perfect celebratory breakfast! I was really dragging this morning because of so much energy spent on cheering our boys on – def. a strong coffee morning. Rip ’em up! Tear ’em up! Give ’em hell! Duke!

40 stacey-healthylife February 10, 2011 at 11:20 am

Wow that’s a muffin, I want one.

41 Jen @ February 10, 2011 at 11:21 am

The muffin looks nice and moist. If I had them in my house, I’d have a serious muffin addiction problem.

We got snow in D.C. too. Just a sprinkle though. I’m over the snow.

Go Carolina! (sorry, my fiance is a UNC guy)

42 nicole February 10, 2011 at 11:40 am

That muffin looks great! Have fun in the snow.

43 lynn @ the actor's diet February 10, 2011 at 11:43 am

holy shit. sorry to curse, but that muffin.

44 Kate (What Kate is Cooking) February 10, 2011 at 11:45 am

I experienced the goodness of muffins in oatmeal a few days ago. What took me so long?!

45 Kiran February 10, 2011 at 11:58 am

I could get use to waking up for such decadence early in the wee hours of mornings ;D

46 Namaste Gurl February 10, 2011 at 12:18 pm

Your SIAB looks fabulous– I love berry-chocolate- coconut combo. NOt only in smoothie form, but oats, and cereal, too! Have a good day and enjoy the snow :)

47 Lindsey February 10, 2011 at 12:23 pm

I’m ready for spring! Hopefully that’s the last bit of snow.

48 Maryann (The Balanced Bean) February 10, 2011 at 12:50 pm

The SIAB looks so yummy! Perfect timing for Valentine’s day! I ran out of coconut butter and miss it, must get some soon!

49 chelsey @ clean eating chelsey February 10, 2011 at 12:51 pm

I thought you were going to say the snow was melting and I was going to rejoice. Instead, I’m a little sad.

50 Christin@purplebirdblog February 10, 2011 at 1:26 pm

Chocolate and cherry were meant to be together!

51 Justeen @ Blissful Baking February 10, 2011 at 3:06 pm

Ohh that smoothie in a bowl looks spectacular!! The muffin on top looks delicious!

52 Christina February 10, 2011 at 3:14 pm

Food blogs + a sweet tooth = disaster! I’m sooo craving a muffin now :)

53 Ashley February 10, 2011 at 3:47 pm

Nothing against you, but, for the record, Dook still sucks. Go Heels!

54 Stacey (The Home-Cooked Vegan) February 10, 2011 at 4:03 pm

That breakfast looks like a dessert! But from the ingredients, I can tell it’s a breakfast 😀 Yummy!! It snowed in NC last night too, but only a little flurry. There are still a few signs of it in the shade but everything else has cleared!

55 Hannah February 10, 2011 at 6:12 pm

What a beautiful, beautiful breakfast! Though I think I would’ve thought so even without the four billion photos 😉

56 Chelsea @ One Healthy Munchkin February 10, 2011 at 6:39 pm

I love having muffins to incorporate into breakfast! I actually prefer to crumble them into things than to just eat them plain. 😛

57 jenna February 10, 2011 at 9:09 pm

This is my first comment. I love your blog! I also have those same exact bowls!!!!! There’s something amazing about eating from a square bowl… just love it!
