Buttered Up

November 23, 2010

Want to know more about coconut butter!? I spent the morning making this information page, including a video!

All About Coconut Butter

Makes me hungry for some!!! image

[OH, and there’s an OpenSky deal going on right now where you get three sample squeeze packs if you buy a jar of coconut butter! Samples only while they last!]

Then I cleaned my house – behind the furniture! (Well…some of it!) WHERE does all this dust come from!?

Then we went for a noontime run.

5 miles

This is a reminder NOT to paint your nails in the dark while watching a movie. Sloppy joe!

Lunch was leftovers! Matt says we have to eat everything in the fridge before Thursday.

[I got the green dishtowel from Chef’s Catalog with a coupon from the Foodbuzz Festival!]

With a side of toasted bread cubes – so much more fun to eat than a bite off a slice of toast.

We have a few more errands to run and things to do. Matt’s working on researching equipment for the bakery and contractor contacts. Do you know how scary it is to buy a $20,000 oven!? We will have to do that sometime soon.

This afternoon/evening, we have a date!

A $20,00 oven?! Yikes! I get nervous just thinking about the cost of buying a Vitamix! 😉

2 Astrid November 23, 2010 at 2:25 pm

Good luck with the oven purchase. Your bakery is going to be great -such a great combination of expertise between the 2 of you.

3 Gabriela @ Une Vie Saine November 23, 2010 at 2:26 pm

Yikes- $20,000? Good luck with your research!!

4 Liza November 23, 2010 at 2:27 pm

Hi Kath,

As a woman who will soon be running a bakery, and as a woman married to a baker, I thought you and the mister would appreciate this website:

5 Kath November 23, 2010 at 2:33 pm

OMG! Ha!

6 Hope November 23, 2010 at 2:34 pm

$20,000?! That is a scary oven! lol

7 claire November 23, 2010 at 2:38 pm

$20,000, oh my! research well, matt.

8 Holly @ couchpotatoathlete November 23, 2010 at 2:38 pm

A $20K oven??? Hahaha that is awesome!

We are on Operation Clean Out The Fridge as well this week! Time to make room for leftovers on Thursday!

9 Stacy November 23, 2010 at 2:42 pm

Thanks for the coconut butter ideas! It looks delicious and I might have to get some for my oatmeal :)

10 lynn (The Actors Diet) November 23, 2010 at 2:43 pm

Daaaaaaaaang oven!! Good luck!

12 Anna @ Newlywed, Newly Veg November 23, 2010 at 2:49 pm

I love your bread cubes :-)

13 Evan Thomas November 23, 2010 at 2:50 pm

An oven that costs $20000?! It better bake bread into gold.

14 Michele @ Healthy Cultivations November 23, 2010 at 2:53 pm

The minestrone looks almost better as leftovers than the first time. I love leftovers — am I alone in that?

15 Katie (The Boston Marathoner) November 23, 2010 at 2:53 pm

Love the coconut butter video! I picked up a jar at the store a few days ago but realized I didn’t know what I would do with it, and decided against it. I’m going back for it tonight!

16 Julie @ Honey B. Nutrition November 23, 2010 at 2:54 pm

Oh my God I thought you were going to put the bread in to the minestrone instead of pasta! Would that be good or would that get soggy?? It’s kind of sounding good! A hearty sprouted grain bread maybe? Well yum your soup looks great. I’m making your pom chickpea etc salad for company tonight! And raw lasagna, what was I thinking?!

17 ambergale November 23, 2010 at 2:55 pm

wah! the coconut butter is sold out already?? The post has only been up for 36 minutes, according to google reader!

18 Kath November 23, 2010 at 3:02 pm
19 Lori November 23, 2010 at 2:56 pm

Had some of that great coconut butter on my oatmeal this morning. Amazing stuff – love it!

20 Mary @ Bites and Bliss November 23, 2010 at 2:57 pm

That’s a really good deal on that coconut butter! I’ll have to look into it.

Have fun on your date :)

21 Allie (Live Laugh Eat) November 23, 2010 at 3:01 pm

I just turned down B. Flay to watch your coconut butter video. Consider yourself loved :).

I wish minestrone from restaurants looked half as good as yours with all those veggies.

22 Kath November 23, 2010 at 3:01 pm

23 Haleigh November 23, 2010 at 3:01 pm

I actually haven’t tried coconut butter yet, but I’ve never really been a fan of coconut. Good luck on the bakery equipment research :)

24 Caitlyn (A Spoonful of Life) November 23, 2010 at 3:07 pm

The toasted bread cubes are a good idea!

25 Laurel November 23, 2010 at 3:08 pm

When will you be divulging the location of the new store? And, the anticipated opening date?

26 Kath November 23, 2010 at 3:36 pm

Well be hopefully opening in April!

27 Lauren at KeepItSweet November 23, 2010 at 3:21 pm

that must be some oven:-)

28 Angela @ Eat Spin Run Repeat November 23, 2010 at 3:23 pm

Good call on the bread cubes! I love dipping bread in my soups but hate how it gets all over the sides of your face when you try to bite into it. Maybe I’m just a messier eater than most….

29 Grocery Goddess Jen November 23, 2010 at 3:24 pm

Holy expensive oven! Mmmmm, love coconut butter!

30 Kailey (SnackFace) November 23, 2010 at 3:29 pm

I thought buying books for school was tough, but $20,000 on an oven? I’d probably have an accident in my pants.

That oven will be beyond worth it though!

31 jen November 23, 2010 at 3:29 pm

I’m trying to use up everything fresh in the fridge this week too, it’s been leftovers and fend for yourself…been kind of fun :)

Love the idea of toasted bread cubes instead of a piece of toast! Soup looks tasty too :)

32 Ash November 23, 2010 at 3:37 pm

Wood floors are the worst too! Dust just collects soooo fast on them! I practically need to get down on hands and knees and dust them!

33 Rachael November 23, 2010 at 3:52 pm

Hi Kath! I too am a RD who loves to run, cook and drink wine! I am looking at purchasing a Forerunner 305 and noticed your picture today, do you like yours? They are on sale at Amazon.com for $129. Just wondered what you thought. Hope you have a great Thanksgiving!

34 Kath November 23, 2010 at 8:49 pm

Absolutely!! Love it.

35 Heather (Heather's Dish) November 23, 2010 at 3:56 pm

i just got the biggest craving for minestrone! yours is so gorgeous :)

36 Nicole November 23, 2010 at 4:06 pm

Those look like best leftovers ever, my left overs never look so good :)

37 Hillary [Nutrition Nut on the Run] November 23, 2010 at 4:12 pm

Great video. I love coconut butter. In fact, I’m actually hosting an Artisana giveaway now :)

38 Lisa (bakebikeblog) November 23, 2010 at 4:35 pm

oooh must remember to watch the video when I get home!!!

39 Kelly November 23, 2010 at 4:43 pm

Ug. My fingernails look like that anytime I do them myself. I’m a busy body and can’t sit still long enough for them to dry properly.

40 Maddie (Healthy Maddie) November 23, 2010 at 5:37 pm

$20,000 oven? Ahh! That would make me nervous too. Thanks for putting the page together about coconut butter. I’ve always wanted to know more about it.

41 Shayla November 23, 2010 at 5:42 pm

Love the coconut butter video! Now I’m really wanting to invest in some – sounds delish!

You know, watching this video got me in the spirit to watch some of your other videos (which I love – thank you!) and I watched your spaghetti squash video and you’re so young in it!! Too cute! And you seem to have more of a southern accent back then? Have you noticed a change?

42 Kath November 23, 2010 at 8:50 pm

I do think I look so much younger in the earlier videos!!

I haven’t noticed a change in accent, but it wouldn’t surprise me

43 j November 23, 2010 at 6:01 pm

Those bread people are kind of disturbing. Hope you have a great Thanksgiving!

44 [email protected] November 23, 2010 at 6:05 pm

That is one pricey oven! So scary. Good luck :-)

45 S November 23, 2010 at 6:08 pm

Any way to order from Opensky if you have an american shipping address, but a canadian billing address? I would love to place an order, but the powers that be won’t let me!

46 Kath November 23, 2010 at 8:50 pm

Oh boy, I don’t know? Perhaps contact customer service to see if there are alternate ways to pay?

47 Ashley @ the fit academic November 23, 2010 at 6:17 pm

Cute nails! I need to get mine done! And $20,000 for an oven!? Yikes!

48 Hannah November 23, 2010 at 7:11 pm

I’ve still never had coconut butter, so I’m going off to read all about it now. Thank you!

49 Amy at TheSceneFromMe November 23, 2010 at 7:29 pm

Looking forward to knowing what fab food you had on your date tonight!

I have to locate some coconut butter around here! Looks totally delicious!

50 Angela (the diet book junkie) November 23, 2010 at 8:28 pm

51 chelsey @ clean eating chelsey November 23, 2010 at 9:00 pm

52 stacey-healthylife November 23, 2010 at 9:06 pm

I love toasting hunks of bread, like croutons. :)

53 Melissa @ I Never Imagined November 23, 2010 at 10:05 pm

Hehe! I’m cleaning out my fridge before Thursday, too! Although I couldn’t resist buying some fresh bread, even though I’m flying out of town for the weekend 😀 guess I’ll just have to eat the whole loaf tomorrow… Eep!

54 Laura (Starloz) November 23, 2010 at 10:28 pm

my nails need painting, badly, oh boy!

55 Alaina November 24, 2010 at 1:00 am

That soup warms me up just looking at it! Recipe?? Or just everything put in a pot and cooked? 😛

56 Floey November 24, 2010 at 1:51 am

Yikes! what’s the 20,000 oven for?

57 J3nn (Jenn's Menu and Lifestyle Blog) November 24, 2010 at 3:45 am

Never be afraid to spend money to make money! :) Good luck! Love your minestrone… I want some!
