Today was go,go,go. Nonstop from one thing to the next. The good news is it did take my mind off the fact that my life is about to change, but the bad news is I’m completely exhausted!! I cleared my calendar for tomorrow until dinnertime. I had a lunch and a walk scheduled and decided I need to rest.
After my meeting, I ran down to the market to get peaches and nectarines and say hi to Matt. Back at home, I had to grab a quick snack before heading out – cheese stick and crackers. This is my new favorite snack. I love these Organic Valley cheese sticks. They have a lot of flavor and are so much better than generic string cheese.
The delivery of the day was a sandwich and bread delivery to some friends who just had a baby last week. Major Cville excitement today as President Obama was in town and just blocks away! I regret not going to the event now – there were so many people downtown.
As a result, when I left the house at 4:45, the presidential caravan was literally a few blocks away, and I found myself in a gridlock of closed streets. Luckily I turned around and was able to get my vehicle back home to wait it out there. I can’t complain about these kind of street closures because the president’s safety is so important, but I found it ironic that the one time I have to drive at 5:00 – in rush hour – to get food to friends in need – I hit this kind of traffic! Luckily about 45 minutes later I was able to take the long way to the bakery and got to my friends just an hour late. And luckily I wasn’t stuck in the gridlock in labor!
Their sweet baby boy was adorable – definitely got me excited!!
Back home again, mommy needed a beer.
But since baby doesn’t like beer, we shared an Izze-esque instead : ) I love these as a mocktail and just picked up a few at Whole Foods last week.
Our dinner plans tonight involved gazpacho – made late last night with about 5% of our tomato stock! We used this recipe give or taken an ingredient or two and mixed with a can of cannellini beans.
I also hard-boiled some eggs for more protein.
Karen joined us for dinner, and the plan tonight was to go to UVA for the a cappella show on the lawn that two of our employees were in, but all three of us were totally exhausted and just couldn’t muster the energy to go back out. I just wanted to put my feet up and eat pie!
Matt bought this little beauty from Family Ties + Pies at the market. I’ve been wanting a mini pie all summer! This cute pie was smaller than my hand in size – perfect to serve 2-3.
We had slices on small plates with a scoop of vanilla on the side.
And with that – I’m headed to bed!

Aww Kath, I’m SO excited for you – I can’t wait! The pie looks so good! I need to tell my grandma to make mini pies, she sends me regular sized ones all the time that I can NEVER eat and they go to waste

What a cute little pie! And last year I went to Obama’s 50th birthday party here in Chicago! Almost didn’t go because I’m not much into politics and I was tired after work, but I went and was so glad because it was just so cool to see him speak in person! Oh and Jennifer Hudson sang, so I probably would have gone just for her! (p.s. she’s even more gorgeous in person!)

There is nothing better than mini-pies. There was a bakery down the street from my college (on the main line of Philadelphia) that sold about 10 different types of pies. The best: baby pecan pies. To. Die. For. I’m sure they weren’t baby in calories/fats/sugars, but golly they were good.

I was going to say, “What a cutie pie!” But decided to save that for when the bundle of joy arrives!

Just be glad you don’t still live in Charlotte, as I do. With the DNC here next week and “someone important” staying in South Charlotte near us (at Ballantyne Resort), not only will roads be closed uptown, but also in the burbs where we are! Residents are either leaving town or working from home, because traffic will be at a standstill. I dread it!

The farmers market here in Madison also has mini pies! They are the perfect serving size for a few people!

What yummy pie – so jealous you can run to the store and buy decent peaches. Peach season is long gone for me until June.

It’s so nice that you’re close with Karen. I’m in a similar situation with my husband’s parents. We are newlyweds and get together with them a lot more often than my parents as they live in the same complex. Unfortunately my mom is jealous that I spend more time with them. Do you have any tips on how to deal with this?

I read your blog every day as I am trying to lose weight so I like to see what healthy people eat and how they keep fit. One thing I have really learnt from you, which I am so grateful for, is portion control. You enjoy sweet treats but only have a small portion. I could have eaten all that pie but sharing it means you get a sweet treat but not too much. Thanks for the lesson
I love IZZE. I am NOT a pop person AT ALL, let alone a sugary beverage. I find IZZE to be a nice little treat when I want something fizzy (or IZZE?) and fruity.

Hi Kath, We didn’t get tickets to see the president either since we saw him a few years ago. We walked over at the last minute and ended up watching it in The Paramount. We ran into some friends afterwards that did get tickets. They arrived before 11:00 am to get in. No bags were allowed for security reasons, which meant no food or water. And they were standing for five hours during the hottest part of the day. We were happy to be sitting in AC. Obama is a charismatic speaker, definitely gave me goosebumps a few times. =) Marya

Not sure if you know this already but felt is was worth sharing. You can freeze your garden tomatoes whole and then use them up in sauces and soups. We freeze tons at the end of summer and then have access to fresh tomatoes all winter.
We need to do this! Do you put them on a baking sheet and then a ziplock when they’re frozen?
Nope!
Even easier. Give the tomatoes a good wash and dry. There’s no need to cut the stems off or anything. Once they’re dry you can portion them out into large zip lock bags. Pile in as many as you’d like. I usually put between 15-20 in each bag. Then freeze.
When it’s time to use them. Simply give them a rinse under warmish water and the peel comes right off.
You can also freeze basil, parsley, swiss chard and kale the same way!

I love the idea of mixing the gazphacho with cannellini beans. Sometimes it needs a little somethin’ to bulk it up! Did you add them whole or puree them? Its hard to tell by the picture.
