Writing In Bed

I set my alarm for 8 hours past 10 when I went to sleep last night and woke up at 6. I didn’t feel like getting up, but I was awake so I retrieved my laptop and actually spent 2 hours in bed writing an article for Breathe Magazine on On-The-Go Healthy Eating. I have a few edits to make, but I’m thrilled to have it finished before 8am!

Our internet is in-and-out again 👿

So I brightened my day with this lovely bowl…

IMG_2832 (1024x768)

The mix:

  • 1/3 cup 9-grain + oat mix, 2/3 cup water, 1/3 cup 2% milk, pinch salt, small ripe banana
  • Splash vanilla
  • Splash cinnamon
  • 1/4 cup cottage cheese, stirred in at end
  • A few tbsp AgavePlus granola (it’s almost gone!)
  • A few peanuts
  • A few butterscotch chips (all gone too!)
  • Spoonful of bottom-of-the-jar Barney Butter (really almost gone!)

IMG_2834 (1024x768)

IMG_2833 (1024x768)

Georgia Pecan

And a vitamin!

IMG_2829 (1024x768)

Today’s Agenda:

  • Packing lists + begin packing
  • Lunch @ Kate + Nate’s w/ Matt and Kelsey
  • Trip to Target for African supplies
  • Handful phone calls
  • Research on palm oil for Food Science
  • Work on Clinical Case Study
  • Call AT&T and complain….again

Gmail Is SO COOL

Did you know you can customize your inbox colors now? Just go to Settings –> Themes –> Custom and play with the colors. I am loving my new teal + red theme! Note also how I have my follow up starred emails in a second inbox. So handy!

Gmail Red Teal

Hasta la vista!

What a treat to “work ” in bed!!!

Good luck with Africa prep/packing -ugh – I hate packing!!! But, I hate UNpacking even more!!

Oh and hey, random question here, but I was thinking of you this a.m. as I was eating my new love, Ezekiel bread! I thought “this may be a bread Kath would eat”!!! If you didn’t have Matt to bake all those awesome breads for you, what kind/brand of bread would you eat?

I love that you have to go to Target for Africa. It’s amazing how that store has everything you need no matter where you’re going! Props to starting your packing. I wait till the last minute (and then rush around like a crazy woman of course).

I also HATE when my Internet goes in and out… grrr.

I also have AT& T and they drive me crazy. But it’s the lowest-priced plan I can find (and I have researched A LOT).

palm oil – a nasty business
It’s killing orangutans, elephants, tigers, and rhinos – literally. not from habitat loss but plantation owners poisoning the already threatened species.

    Hey Kath,

I read your posts everyday and know that you are a big fan of nut butters. I just wanted to let you know that I found a really cool nut company called Saratoga Peanut Butter Co. There website is : http://www.saratogapeanutbutterco.com/index.asp I don’t know if you can get it up there in NC. I am here in Charleston, SC so I can only get it if I order it online. I think you would like the “monkey boy’ as you love your bananas. I would like to try the “Adirondack Jack” still. Anyway…just thought you might be interested!

We’re going for a wedding and have a friend’s house to stay in, so luckily we don’t have to pay for a hotel. We were looking at the Hampton Inn downtown (I think?) and it was $180. High, but not terrible.
